A quick treat that will help to use up Easter's leftover hot cross buns

Number Of Ingredients 6

4 tbsp soft butter
2 tsp cinnamon
2 eggs , beaten
100ml milk
4 hot cross buns , split in half
vanilla ice cream and maple syrup, to serve

Steps:

  • Mix 3 tbsp of the butter with half the cinnamon and mash together. Beat together the egg, milk and remaining cinnamon. Sandwich 2 slices of hot cross bun together with half the cinnamon butter and repeat with the remaining two slices.
  • Dip in the egg mix and leave to soak for a few secs. Heat the butter in a frying pan until foaming. Cook the hot cross buns for 1-2 mins each side until light golden (you may need to do this in two batches). Press down on them as you cook. Serve each portion topped with a scoop of ice cream and a drizzle of maple syrup, if you like.

2 eggs
2 egg whites
3/4 cup fat-free milk
1 tablespoon sugar
1 tablespoon molasses
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon salt
6 slices French bread (3/4 inch thick)
2 teaspoons butter

Steps:

  • In a large bowl, combine the first eight ingredients. Place bread slices in an ungreased 13-in. x 9-in. baking dish; pour egg mixture over top. Cover and refrigerate overnight., Heat butter on a griddle; cook bread for 2-3 minutes on each side or until golden brown.

10 slices of good quality white bread
1 cup half-and-half cream or 1 cup light cream
2 eggs
2 tablespoons Grand Marnier or 2 tablespoons orange liqueur, equivalent
2 tablespoons orange juice
1 teaspoon orange zest
1/8 teaspoon cinnamon
1/8 teaspoon allspice
1/8 teaspoon nutmeg

Steps:

  • Combine all ingredients, except bread, and whisk thoroughly. Soak each piece of bread in the egg mixture. Grill on medium to medium-hot griddle until cooked through and golden brown.

1/2 cup milk
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
butter
8 slices challah
blueberry jam sweetened with fruit juice or other jam, as desired
organic apple juice

Steps:

  • Preheat oven to 200°F Place a large dinner plate in the warmed oven.
  • Whisk together the eggs, milk, vanilla, cinnamon and nutmeg in a wide shallow dish and set aside.
  • Heat a non-stick skillet or a cast iron skillet that has been lightly buttered over medium high heat.
  • Dip each piece of bread, one by one, into the egg and milk mixture. Drain excess mixture and place in the hot skillet.
  • Cook until just browned on the bottom, watching the toast carefully (just a couple of minutes). Turn, and brown the other side.
  • Adjust heat to medium, if necessary, to prevent burning. Place in the oven on warmed plate while preparing the remaining pieces.
  • Just before serving, heat the jam in a small saucepan with a small amount of apple juice to desired consistency.
  • Drizzle over the top of the French toast and serve immediately.
