TOMATO-BASIL PASTA SALAD



Tomato-Basil Pasta Salad image

I got the basis for this recipe from my cousin's wife, who absolutely adores the taste of fresh basil! This is a great, simple summer pasta salad, with a nice light blend of flavors. FRESH basil is a must on this one!! This salad is great alongside BBQ chicken. Easy, and yummy!! Prep. time includes marinating time.

1 lb rotini pasta
2 lbs plum tomatoes or 2 lbs roma tomatoes, diced
3 -4 cloves garlic, minced
1 teaspoon salt
black pepper, to taste
1/2 cup olive oil
fresh basil leaf, chopped,to taste (I use about 1/3 cup)
1/4 cup grated parmesan cheese (fresh is best)

Steps:

  • Mix together the tomatoes, garlic, salt, pepper, olive oil, and basil.
  • Refrigerate 2 hours.
  • Meanwhile, cook pasta according to package directions, and rinse under cold water; drain.
  • Mix pasta with tomato mixture until well-combined.
  • Sprinkle with Parmesan cheese.
  • Serve with additional Parmesan, if desired.

1 pound farfalle pasta
4 plum tomatoes, cut into 1 inch dice
8 basil leaves, cut into chiffonade
1 lemon, juiced
1/4 cup extra-virgin olive oil
3 teaspoons salt
Fresh basil leaves, for garnish

Steps:

  • Fill a large pot 3/4 of the way with water and place over high heat. Add plenty of salt and bring to a boil. Add the pasta and cook 8 to 10 minutes, until al dente. Drain the pasta and rinse under cold water to cool down.
  • Put the pasta in a large serving bowl and add the tomatoes, basil, lemon juice, olive oil and salt. Toss well and garnish with fresh basil leaves.

16 oz. orzo pasta
1/4 cup chopped walnuts
1 Tbsp nutritional yeast
1/8 tsp garlic powder
1/4 tsp sea salt
1 pint cherry tomatoes
3/4 cup basil leaves
Zest and juice of 1 medium lemon
1/4 cup olive oil, divided
salt, to taste

Steps:

  • Cook orzo according to package directions. Drain in a colander, then return to cooking pot and add 2 tsp olive oil and stir to keep the noodles from sticking together. If you want to serve this salad cold, let pasta cool for 2-3 hours in the refrigerator.
  • To make vegan parmesan, combine the walnuts, nutritional yeast, garlic powder, and sea salt in a food processor. Pulse for about 15 seconds to create a coarse meal. Try not to over-process.
  • Slice cherry tomatoes in half and julienne the basil leaves. Zest one medium lemon.
  • Combine the cooked pasta with the vegan Parmesan, tomatoes, basil, and lemon zest. Stir together. Add about 3 Tbsp olive oil and juice of 1/2 lemon. Taste and add more lemon juice if desired (I used a whole lemon). Add salt to taste, and serve.

  • Season chicken with salt and pepper. Roast at 375 degrees F (190 degrees C) for 35 minutes, or until juices run clear. Let cool, and chop into chunks.

250-300 grams penne
3 Tbsp. extra virgin olive oil
salt and freshly ground black pepper to taste
4 paper-thin slices proscuitto, each cut or pulled into 3 to 4 smaller pieces
24 to 28 small to medium fresh basil leaves
12 to 16 cherry tomatoes, halved
1/3 cup thinly shaved Parmesan cheese (see Note)
2 Tbsp. balsamic vinegar, or to taste
Crushed chili flakes, to taste (optional)

Steps:

  • Boil the pasta until just tender, about 8 to 10 minutes. Drain well, cool in ice-cold water, and drain well again. Place the pasta in a bowl and toss with the olive oil, salt and pepper. Divide the pasta among 4 chilled plates. Artfully disperse the proscuitto, basil, tomatoes and cheese on and around the pasta. Drizzle each salad with vinegar, sprinkle with a few chili flakes, if using, and serve.Note: A vegetable peeler can be used to create "shaved" pieces of Parmesan.

1 cup raw walnuts
3 oz. country-style bread, crust removed, cut into 1" pieces (about 1 1/2 cups)
4 whole roasted red peppers from a jar
Zest and juice of 1 lemon
2 garlic cloves
1 tsp. crushed red pepper flakes, divided
1/2 cup plus 2 Tbsp. extra-virgin olive oil
Kosher salt
1 lb. fusilli giganti (large spiral-shaped pasta) or medium shell pasta
1 lb. mixed ripe tomatoes, cut into bite-size pieces (about 3 cups)
4 oz. Parmesan, finely chopped
1 cup basil leaves, torn if large

Steps:

  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing halfway through, until golden brown, 10-12 minutes. Let cool.
  • Meanwhile, process bread in long pulses in a food processor until coarse crumbs form (you should have about 1 cup). Transfer to a small bowl.
  • Purée roasted red peppers, lemon juice, garlic, 1/2 tsp. red pepper flakes, and about one-quarter of the cooled walnuts in food processor (no need to clean) until smooth. With the motor running, very gradually stream in 1/2 cup oil. Process until thick; season romesco dressing generously with salt.
  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain and rinse under cold water (this stops cooking and removes surface starch so the pasta will be less gummy). Shake off excess water and transfer to a large bowl. Toss pasta with half of the romesco to coat; set aside. Finely chop remaining walnuts; set aside.
  • Heat remaining 2 Tbsp. oil in a medium saucepan over medium and cook breadcrumbs, lemon zest, and remaining ½ tsp. red pepper flakes, stirring often, until breadcrumbs are golden, 5-7 minutes. Remove from heat.
  • Toss reserved pasta with remaining dressing, then fold in tomatoes, Parmesan, and reserved walnuts just to distribute. Sprinkle breadcrumb mixture over pasta and top with basil.

3 garlic cloves, minced

2 cups mayo
1/4 cup basil pesto
1 tsp salt

2 cups grape tomatoes, sliced in half
1 cup red onion, diced
1 cup salami, chopped
1/2 cup real bacon bits
1 cup Parmesan cheese, shredded
1 cup mozzarella cheese, shredded

Steps:

  • Cook cavatappi according to the directions on the package. Drain and rinse with cold water to cool down.
  • Dump the cooled down pasta into a large mixing bowl.
  • Add the mayo, basil pesto, salt and pepper to the mixing bowl.
  • Stir until all of the pasta is coated with mayo.
  • Add the halved grape tomatoes, diced red onions, chopped salami and real bacon bits to the bowl. Stir well.

This recipe allows every ingredient's taste and flavor to come out and compliment each other. Number Of Ingredients 8

1 cup Penne Pasta
1/4 cup Parmesan Cheese, grated
2 cloves Garlic, crushed
1/4 cup Fresh Basil Leaves, shredded
2 cups Cherry Tomatoes, halved
1/2 tablespoon Balsamic Vinegar
2 tablespoons Olive Oil
Salt and Pepper

Steps:

  • Directions:Combine tomatoes, basil, balsamic vinegar, crushed garlic, parmesan cheese and olive oil in a bowl and toss well. Let it sit at room temperature until pasta is ready.Boil 4-5 cups water in a large pot. Add a pinch of salt and penne pasta in it. Cook them for around 10-12 minutes or until al dente (firm but not hard). Drain and run them through cold water and mix with prepared tomato mixtureSeason with salt and pepper to taste and mix well.Serve it at room temperature.

This recipe gets better as it sits and can be made a day ahead of serving. Start by adding about half of the dressing and add more to your liking. I usually use all of it, though. Use Parmesan cheese, or feta, or both!

1 7 oz. jar sun-dried tomatoes in oil, drained
6 cloves garlic
3 tablespoons red wine vinegar
1 cup light olive oil or avocado oil
Salt And Pepper (to taste)
16 ounces spiral pasta of choice (rotini is a good one)
¾ cup black or kalamata olives (or favorite olives of your choice, rough chopped)
2 cups cherry or grape tomatoes (halved)
1 cup fresh basil leaves (chopped or julienne sliced)
1 ½ cup Parmesan cheese (shredded)
1 cup Feta cheese (optional, in place of the Parmesan or in addition.)

Steps:

  • In a blender or food processor (my preference), combine sundried tomatoes, garlic, salt, pepper, and vinegar until tomatoes are chopped. Continue blending while drizzling in olive oil until mixed well.
  • Cook pasta according to package directions. Drain and rinse with cold water until no longer hot.
  • Pour ⅔ of the dressing over the pasta. Add olives and toss together. Add remaining ingredients, tossing together and adding more dressing until the salad is coated to your liking (I use it all).
  • Serve on a big platter with an extra sprinkling of Parmesan cheese.
  • This is an excellend side pasta but is substantial enough to be a meatless main dish.

1 pound gemelli or other short pasta
10 Slow-Roasted Tomatoes halves, roughly chopped
1/2 cup extra-virgin olive oil
1 teaspoon finely grated lemon zest, plus 2 teaspoons lemon juice
2 ounces Parmesan, grated (1/2 cup), plus more for serving
1/2 cup fresh basil leaves, roughly chopped

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions. Meanwhile, in a large bowl, combine tomatoes, oil, lemon zest and juice, and Parmesan. Season with salt and pepper. Drain pasta and transfer to bowl. Add basil and toss to combine. Let cool to room temperature (or refrigerate, up to 2 days). To serve, sprinkle with more Parmesan, if desired.

8 ounces mozzarella pearls (BelGioioso)
1 clove garlic (diced)
2 tablespoons balsamic vinegar
4 tablespoons basil (chopped)
1 tablespoon Italian seasoning
1 teaspoon salt (sea salt or Himalayan salt)

Steps:

  • Wash and slice each cherry tomato into halves.
  • Add cherry tomatoes and mozzarella balls to small mixing bowl.
  • Dice the garlic clove and add it to mixing bowl with salt and Italian seasoning.
  • Add fresh chopped basil leaves.
  • Mix in the bowl with the balsamic vinegar until well combined.
  • Spoon and serve.
