ORZO WITH MINI SAUSAGE MEATBALLS AND KALE
Steps:
- Remove the casings from each sausage link, then pinch about 1 teaspoon sausage with your fingers and roll it into a mini meatball. Repeat with remaining sausage. (Each link should yield 10 to 13 meatballs.) Brown the meatballs in a large cast-iron, enameled cast-iron or nonstick skillet over medium heat, until nicely browned all over, about 6 minutes total.
- Add the chicken stock to the pan along with the orzo. Cover and simmer on medium heat for 5 minutes. Lift the lid and give it a stir, making sure no pasta is sticking to the pan. Add the kale, nestle it in, then cover and simmer another 2 minutes. Lift the lid and add the juice from half the lemon (cut the remaining half into wedges). Stir and simmer until the orzo is just al dente, an additional minute or so. Season to taste with a pinch of salt if needed.
- Divide among shallow bowls and garnish with plenty of grated Parmesan, along with extra lemon wedges and parsley. And crusty bread. Always.
MINI MEATBALL MINESTRONE
This soup is absolutely delicious! A family favorite, my 4 year old son calls it "Meaty Meatball Yummy Soup". It's packed with healthy veggies, which you can vary according to your family's taste. Don't let the long ingredient list fool you - it is simple and quick to prepare with ingredients you usually have on hand. You can substitute fresh vegetables for the canned; I created this in winter when I had more canned and frozen items on hand than fresh. Leave the meatballs out if you are short on time or want to skip the meat. You can also make the meatballs in advance and freeze them to add later. We like to serve this with a fresh green salad and good multi grain bread.

- To prepare the meatballs:
- Preheat oven to 350.
- In a medium bowl, combine all ingredients and roll into 1/2 inch meatballs.
- Place on a cookie sheet and bake 15 minutes or until brown.
- To prepare soup (while meatballs are cooking):.
- Heat oil in a large stockpot. Saute the onions until softened and lightly brown, about 4 minutes.
- Add garlic and saute 2 minutes longer.
- Add stock, juice, green beans, carrots, kidney beans, mushrooms, tomatoes, basil, oregano, salt, and pepper.
- Bring to a boil over medium high heat. Reduce heat and simmer on medium low for 20 to 25 minutes, stirring occasionally.
- Add meatballs.
- Add pasta, cover pot, and cook about 10 minutes longer.

- In a heavy bottomed soup pot heat olive oil over medium to medium-high heat. Add pancetta and cook until crisp, 2 to 3 minutes. Add onions and 2 cloves of garlic and saute 4 to 5 minutes then add the escarole and wilt. Season with salt, pepper and nutmeg. Stir in beans, add stock and water and bring to boil.
- While stock comes to a boil, combine meat, egg, bread crumbs, milk, a handful of cheese, fennel, allspice, parsley, salt and pepper. Combine and roll into 1-inch balls, and add to the soup. Cook 2 minutes then add in pasta and cook 6 minutes more.
- Turn off the heat, garnish with lemon zest and serve with cheese passed at the table.
MINI MEATBALL SOUP

- In a deep pot over medium heat add oil, chopped carrots, celery and onions and bay leaves. Season with salt and pepper. Cover pot and cook veggies 5 or 6 minutes, stirring occasionally.
- While the veggies cook, combine meat, egg, garlic, grated cheese, bread crumbs, salt, pepper, nutmeg.
- Uncover your soup pot and add broth and water to the pot. Increase heat to high and bring soup to a boil. When soup boils, reduce heat a bit and start to roll meat mixture into small balls, dropping them straight into the pot. You are making meat dumplings that will cook in the broth. When you are done rolling the meat, add pasta to the soup and stir. Cover and simmer soup 10 minutes. When pasta is tender, stir in chopped spinach in batches. When spinach has wilted into the soup, the soup is done and ready to serve. Adjust your seasonings. Serve soup with crusty bread or grilled 4 cheese sandwiches.
- In a small skillet over medium low heat, combine oil, butter and garlic. Cook garlic in butter and oil gently for 2 or 3 minutes. Remove garlic butter mixture from heat.
- Place a large nonstick skillet on the stove over medium high heat. Using a pastry brush, brush 1 side of 4 slices of bread with garlic oil and place buttered side down in skillet. Top each slice with equal amounts of the 4 cheeses, distributing them equally over the 4 slices. Top each sandwich with another slice of bread brushed with garlic butter, buttered side up. Flip the grill cheese sandwiches a few times until cheeses are melted and gooey and bread is toasty and golden. Cut grilled 4 cheese sandwiches from corner to corner and serve.
MINI SAUSAGE MEATBALL MINESTRA
Steps:
- Heat 1 tablespoon of the EVOO in a large skillet. Roll the sausage into walnut-sized meatballs. Drop them into the skillet and brown on all sides, then remove. Heat the remaining 2 tablespoons EVOO in a large pot over medium heat. Sauté the onions and garlic for 5 minutes, then wilt in the escarole and season with salt, pepper, and nutmeg. Add the beans and heat through. Stir in the stock and bring to a boil, then add the pasta and cook to al dente. Add the meatballs back to the pot for the last 4 minutes of cooking. Adjust the seasonings and serve with cheese sprinkled heavily on top. Pass the crusty bread for mopping.

Use lean ground turkey with lots of garlic & seasonings to make the mini meatballs lower in fat or try it with low fat, hot italian sausage that's already seasoned! As the soup simmers the flavors are released throughout the soup. Try using a melon baller to measure the size of the meatballs. Use the smaller end to make mini meatballs or the larger end to make medium sized ones. The meatballs are also great in tomato sauce for spaghetti!

- In a medium sized bowl combine the ground meat, garlic, chili peppers, italian seasoning & salt.
- Using a melon baller or your hands form small meatballs.
- Heat the olive oil in a large frying pan and cook the meatballs on medium heat until they are nicely browned on all sides. About 5 minutes.
- Add the onion and fry for an additional 3-5 minutes. Set aside.
- In a large soup pot or crockpot combine the remaining ingredients except pasta. Add the meatballs and stir gently to mix well.
- Bring to a gentle boil and simmer until all the veggies are tender and tasty about 45 minutes or if using a crockpot 4-5 hours on high, 8 hours on low.
- Cook the pasta according to package directions.
- When the veggies are tender place 1/4 cup cooked pasta in a bowl, fill with soup and sprinkle with parmesian or romano cheese.
- Excellent if served with crusty bread and a salad!
