SOLE ALMONDINE

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 14

2 cups blanched slivered almonds
Kosher salt
Extra-virgin olive oil
4 tablespoons unsalted butter
2 cups all-purpose flour
Freshly ground black pepper
4 eggs
1 cup milk
4 cleaned sole fillets (6 ounces each)
1 large or 3 small shallots, finely chopped
1 cup white wine
1 lemon, juiced
1/4 chopped flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • Set a large nonstick saute pan over medium heat. Add the almonds and toast until golden brown, about 5 to 7 minutes. Season with salt and set aside.
  • Return the pan to medium heat (if you have 2 pans you can work simultaneously at this point, i.e. 2 fillets per pan) and add a 2-count of olive oil and 1 tablespoon of butter to each pan.
  • Put the flour in a shallow dish and season with salt and pepper, to taste. In another shallow dish, whisk together the eggs and milk and season with salt and pepper, to taste. Dredge the fillets in the seasoned flour, then dip them into the egg mixture. Allow some of the excess egg to drain off, then add them to the hot pan. Cook 2 pieces at a time. Fry for 1 1/2 to 2 minutes, then carefully turn the fish over to cook the other side. With a spoon, baste the fillets with the butter sauce. Repeat basting to ensure the fish remains moist. Once the other side is cooked (about 30 seconds) carefully remove the fillets from the pan to a serving platter. Repeat with remaining 2 fillets and a 2-count of oil and 1 tablespoon of butter. Once the fillets have been removed the pan, add the chopped shallots and gently saute over low heat until translucent, about 1 minute. Deglaze the pan with the white wine and finish with the lemon juice. Swirl in the remaining 2 tablespoons of butter. Add the parsley and season, to taste, with salt and pepper. To serve, spoon the sauce over the top of the fillets and sprinkle generously with the toasted almonds.

Uncle Bill's Sole Florentine With Spinach image

I found this recipe in the newspaper and made some modifications that enhanced the flavor. Very easy to make and excellent fish dish.

Time 19m

Yield 4 serving(s)

Number Of Ingredients 12

6 tablespoons butter, divided
1 tablespoon chopped shallot
2 tablespoons all-purpose flour
1 cup half-and-half cream
1 teaspoon granulated sugar
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1/8 teaspoon freshly ground nutmeg
1 teaspoon salt
1 teaspoon black pepper
2 lbs sole fillets
1 large lemon, 1/2 squeezed for juice and 1/2 for wedges
1/4 cup fine breadcrumbs

Steps:

  • Preheat broiler on HIGH.
  • Melt 4 tablespoons of butter in a large frying pan over medium-high heat.
  • Add shallot and cook for 2 minutes or until just starting to brown.
  • Sprinkle flour over the shallot and butter and whisk until smooth, DO NOT BURN.
  • Reduce heat to medium.
  • Add half and half cream slowly, whisking into a smooth sauce.
  • Cook for 2 or 3 minutes until thickened, whisking as needed.
  • Add sugar and stir.
  • Squeeze out as much moisture from the spinach and discard.
  • To the frying pan, add spinach, nutmeg, salt and pepper and cook stirring until hot, about 3 to 4 minutes.
  • Reduce heat to low so the spinach stays warm.
  • Place the sole fillets on a broiler pan that has been coated with oil.
  • Pour the lemon juice over the sole fillets, and sprinkle bread crumbs over.
  • Dot the sole fillets with remaining 2 tablespoons of butter.
  • Place the sole fillets under the broiler and broil for 5 to 6 minutes or until the fillets are opaque and the bread crumbs are golden.
  • Spoon some creamed spinach onto each of 4 plates.
  • Place a fillet of sole on top of the spinach.
  • Serve with lemon wedges.
  • You may also use other white fish of your liking.

  • Heat the wine in a large frying pan over medium heat and add 2 tablespoons of the butter. When the butter melts, stir to mix. Add the fish fillets in a single layer, adjust the heat to maintain a gentle simmer, and cook just until the fillets start to flake when prodded with a fork, 4-5 minutes, depending on their thickness. They will finish cooking in the oven. Carefully transfer the fillets to a plate. If you purchased fillets with the skin attached, let cool until they can be handled, then carefully remove the skin.
  • To make the sauce, melt the butter in a saucepan, over medium-low heat. Stir in the flour and continue to stir, allowing the mixture to brown slightly without burning, for about 5 minutes. Whisk in the hot milk, little by little. When all the milk is added, whisk in the poaching liquid and continue to whisk until the sauce is smooth and creamy, 3-5 minutes. Add both cheeses and stir until melted. Season to taste with nutmeg and pepper and set aside off the heat.
  • Rinse the spinach and put in a large saucepan with just the rinsing water clinging to the leaves. Cover, set over medium heat, and cook until wilted and tender, about 5 minutes. Drain well, squeeze gently in a kitchen towel to remove the excess moisture, and chop roughly. Mix the spinach with the remaining 2 tablespoons butter and season with lots of pepper.
  • Preheat your broiler. Butter a broiler proof oven dish just large enough to accommodate the spinach and fish. Spoon the spinach into the dish, spreading evenly. Arrange the fillets in a single layer on top of the spinach. Pour the sauce over the top, then sprinkle evenly with the Parmesan. Broil until the cheese is browned and bubbling, 3- 5 minutes. Serve hot.
