1 tablespoon peanut oil
1 dried red chili pepper
2 teaspoons cumin seeds
1 lb snow peas, trimmed
1 small red bell pepper, cut into thin strips
kosher salt
fresh ground black pepper

Steps:

  • Put oil in a wok or large skillet over medium-high heat.
  • Add chile pepper and a few minutes until color starts to darken.
  • Remove chile pepper and add cumin seeds.
  • Stir a minute, raise heat to high and add snow peas and bell pepper.
  • Turn frequently, season with salt and black pepper.
  • Cook until bell pepper and peas begin to soften, about 3 or 4 minutes.

1 tablespoon finely chopped shallot

  • Lightly cook snow peas in boiling water (1-2 minutes) and drain.
  • Melt butter in skillet, add mushrooms with salt and pepper.
  • Cook stirring constantly about 2 minutes.

1 large garlic clove, minced

6 oz sugar snap peas, trimmed and cut diagonally into 1-inch pieces
6 oz snow peas, trimmed and cut diagonally into 1-inch pieces
1 cup frozen green peas
1 teaspoon soy sauce
1 teaspoon Asian sesame oil
1 tablespoon sesame seeds, toasted

Steps:

  • Heat vegetable oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then stir-fry garlic, ginger, and red pepper flakes until fragrant, about 1 minute. Add sugar snaps and snow peas and stir-fry until crisp-tender, about 3 minutes. Add frozen peas and stir-fry until hot, about 2 minutes. Remove from heat, then stir in soy sauce and sesame oil. Sprinkle with sesame seeds and season with salt.

7 ounces snow peas
1/2 medium red bell pepper
1 1/2 teaspoons butter
2 tablespoons freshly squeezed orange juice
salt and pepper

Steps:

  • String snowpeas, wash in cold water, drain.
  • Cut red bell pepper into slivers, 3/4" long.
  • Place snowpeas and butter in microwaveable container with lid; adjust lid to let steam vent and microwave for one minute or until pods are crisp-tender.
  • Remove from microwave, add red bell peppers and replace cover tightly; set aside and allow red peppers to warm and snowpeas to finish cooking, about 1 minute.
  • Sprinkle with orange juice and salt and pepper to taste; serve.

2 tablespoons olive oil
1 sweet red pepper, cored, seeded and cut into 1/2-inch pieces
1/4 pound snow peas, trimmed and rinsed
1/4 teaspoon hot red pepper flakes
Salt and freshly ground pepper to taste
1 1/4 pounds sea scallops, cut into 1/2-inch cubes
4 tablespoons shallots or scallions, chopped fine
3 tablespoons Ricard or any other anise-flavored liqueur
2 tablespoons fresh lemon juice
4 tablespoons fresh coriander or fresh basil, chopped coarse

Steps:

  • In a large nonstick skillet or wok, heat 1 tablespoon of the butter and 1 tablespoon of the oil over medium-high heat. Add the red pepper pieces and the snow peas. Cook, stirring and tossing, about 4 minutes. Season with pepper flakes, salt and pepper.
  • When the red peppers and snow peas are nearly cooked, add the remaining 1 tablespoon butter and 1 tablespoon olive oil. Over high heat add the scallops, shallots, liqueur, lemon juice, coriander, salt and pepper. Cook, stirring, about 2 minutes. Cook until the scallops are heated through. Do not overcook.
