Steps:
- In a medium skillet over medium heat, cook the sesame seeds about 5 minutes, stirring frequently, until lightly browned. Remove from heat, and set aside.
- Heat oil in the skillet over medium high heat. Stir in snow peas and mushrooms, and cook 3 to 4 minutes, until tender.
- Transfer snow peas and mushrooms to a medium bowl. Toss with sesame seeds and teriyaki sauce, and serve warm.

- Rinse peas and dab dry. Break off the tips of the peas and pull the strings.
- Heat butter in a non-stick skillet over medium high heat. Add peas, mushrooms and broth. Cook 3-4 minutes or until broth evaporates and vegetables are tender crisp.
- Stir in garlic and cook until fragrant, 1 minute more.

- String the snow peas.
- Heat a skillet over high heat and add the peanut oil.
- When hot, add the mushrooms and stir briefly over high heat.
- Add the garlic, ginger, and snow peas, and stir until well coated with the oil.
- Add the salt and sugar.
- Continue to stir over high heat until most of the liquid has disappeared and the peas are crisp yet tender.
- Serve sprinkled with the sesame oil.

STIR-FRIED WILD MUSHROOMS WITH SNAP PEAS IN OYSTER SAUCE

- With a sharp knife, cut the mushrooms on the diagonal into quarters, depending on the size. Prepare the seasonings and set by the stove.
- Heat a wok or a heavy skillet until very hot, add 1 teaspoon of oil and heat until hot. Add the snap peas, minced garlic, rice wine or sake, and salt, and toss lightly over high heat for about 1 1/2 minutes until the peas are just tender (snow peas will take slightly less time.) Remove from the pan and arrange around the outside of the serving plate.
- Reheat the pan and the remaining oil until very hot. Add the Seasonings and stir-fry about 10 seconds until fragrant. Add the mushrooms and toss lightly with a spatula or shovel over high heat for about 1 minute. Add the sauce and toss lightly to thicken, stirring constantly to prevent lumps. Arrange the mushrooms inside the snow peas on the serving platter. Serve immediately.

- Preheat the oven to 200 degrees F. Heat a large skillet over medium-high heat. Season the chicken with salt and pepper. Add 1 tablespoon oil to the skillet. Dredge 2 chicken cutlets in flour, shake off any excess and place in the skillet. Cook until golden, about 1 1/2 minutes per side; transfer to a baking dish. - Mix the ginger, soya sauce and sherry in a medium bowl.
- Add the pork to the bowl and stir to completely coat the pork.
- Cover the bowl with plastic wrap and refrigerate for at least one hour to marinade the pork.
- Heat 2 teaspoons oil in a wok over high heat until hot, add half the pork and stir fry for several minutes until the pork is tender.
- Remove pork from wok and set aside.
- Repeat using another 2 teaspoons oil and remaining pork.
- Remove pork from wok and set aside.
- Heat the remaining oil in the wok and add the mushrooms, snow peas and red cabbage and stir fry for several minutes.
- Add the water, cover and cook until the vegetables are just tender.

- Toss pork with cornstarch and 1 teaspoon salt.
- Heat 2 tablespoons oil in a wok or 12-inch heavy skillet over medium-high heat until it shimmers. - Pinch off the ends of the snow peas, pulling out any strings that may be attached. Wash and drain them.
- Clean mushrooms. Remove stems. Slice.
- Mix several shakes of ginger with the soy sauce and sesame oil.
- Heat oil in 10- to 12-inch skillet over high heat. One minute later, add peas and mushrooms. Stir and toss occasionally until peas are lightly browned and their green color is vivid, about 2 minutes. Remove from heat. Pour in the soy sauce mixture. Put into serving bowl, and serve immediately. Can season with salt and pepper if desired.
