BEEF WITH SNOW PEAS

Beef with Snow Peas image

This is not a Thanksgiving recipe. I repeat: This is not a Thanksgiving recipe.

Categories     main dish     meat

Time 20m

Yield 8 servings

Number Of Ingredients 12

1 1/2 lb. Flank Steak, Trimmed Of Fat And Sliced Very Thin Against The Grain
1/2 c. Low Sodium Soy Sauce
3 tbsp. Sherry Or Cooking Sherry
2 tbsp. Brown Sugar
2 tbsp. Cornstarch
1 tbsp. Minced Fresh Ginger
8 oz. weight Fresh Snow Peas, Ends Trimmed
5 whole Scallions, Cut Into Haf-inch Pieces On The Diagonal
Salt As Needed (use Sparingly)
3 tbsp. Peanut Or Olive Oil
Crushed Red Pepper, For Sprinkling
Jasmine Or Long Grain Rice, Cooked According To Package

Steps:

  • In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour half the liquid over the sliced meat in a bowl and toss with hands. Reserve the other half of the liquid. Set aside. Heat oil in a heavy skillet (iron is best) or wok over high heat. Add snow peas and stir for 45 seconds. Remove to a separate plate. Set aside. Allow pan to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the scallions. Spread out meat as you add it to pan, but do not stir for a good minute. (You want the meat to get as brown as possible in as short amount a time as possible.) Turn meat to the other side and cook for another 30 seconds. Remove to a clean plate. Repeat with other half of meat, allowing pan to get very hot again first. After turning it, add the first plateful of meat, the rest of the marinade, and the snow peas. Stir over high heat for 30 seconds, then turn off heat. Check seasonings and add salt only if it needs it. Mixture will thicken as it sits.Serve immediately over rice. Sprinkle crushed red pepper over the top to give it some spice.

SNOW PEAS AND BEEF

Snow Peas and Beef image

A quick and easy recipe with few and inexpensive ingredients. We made this when we were kids and I was exited to make it again! I served it with beef rice (the cheap packet kind) but you can make a fussier style if you like. We all loved it!

Categories     One Dish Meal

Time 25m

Yield 4-5 serving(s)

Number Of Ingredients 8

1 lb beef tenderloin (or round steak)
2 tablespoons soy sauce
2 tablespoons cornstarch
5 tablespoons olive oil
1 teaspoon salt
6 ounces snow peas
1 garlic clove, minced
1/2 onion, sliced

  • Slice the beef across the grain into 3/4 inch slices. Remove all gristle and fat.
  • Toss with soy sauce, salt, cornstarch, onion, garlic and 1 T of the oil.
  • Set it in the fridge 20 minutes or so (optional). This is a good time to cook your rice and prep the snow peas if needed.
  • Time for moving fast! Add 2 T of the oil to your skillet for 1 minute or until pretty hot. Stir fry the snow peas 2 minutes then transfer to your serving dish.
  • Add another 2 T of oil to the skillet and warm it to hot. Then toss in the beef mix. Spread it out, let it brown about 1 minute, turn it all, brown another minute, then stir until done.
  • Toss with the snow peas and serve over rice with soy sauce on the table.
