If you come across a great buy on lemons or limes and want to save some for later use, they can be frozen.

Steps:

  • Quarter lemons and place in single layer on cookie sheet. Place in freezer until frozen. Place in ziplock bag and remove as needed. Lemons can be frozen whole but they will be mushy when defrosted although the juice will be fine.
  • You can also freeze lemon slices the same way.
  • The juice can be frozen in ice cube trays for use layer as well as the zest.

1 (12 ounce) can limeade, thawed
1 (12 ounce) package silken firm tofu, drained
1 1/2 cups water
mint sprig (optional)
grated lime rind (optional)

Steps:

  • Combine the limeade and the tofu in a blender, and blend till smooth. Add water and pulse to combine. Pour the mix into the freezer can of an ice cream freezer, freeze according to instructions. Spoon the mixture into a freezer container, cover and freeze 2 hours or until firm. Or you may put the mixture into a plastic container, freeze for about 2 hours, then process in a food processor until slushy, then freeze again until ready to eat. Take the mix out of the freezer and let it soften just a little before serving.
  • Garnish with the mint and rind, if you like.
  • Yield: 5 servings.

1 tablespoon finely grated lime zest, plus more for garnish
1/4 cup fresh lime juice (from 2 or 3 limes)
1 cup vanilla ice cream, softened

Steps:

  • Put 5 1/2 cups of raspberries, the sorbet, lime zest, and lime juice into a blender. Use a spatula to push down the ingredients. Pulse a few times, then puree until very smooth. Add ice cream and puree, stopping and stirring with spatula as needed. Stir in 1 cup raspberries.
  • Pour mixture into glasses. Garnish with remaining 1/2 cup raspberries and lime zest. Serve immediately.

  • Line 9-inch round pan with plastic wrap, with ends extending over side of pan. Beat Neufchatel cheese and 1/4 cup sugar with mixer until blended. Add dry gelatin mix, zest and juice; mix well.
  • Whisk in COOL WHIP and mint; pour into prepared pan. Mix pretzel crumbs, remaining sugar and butter; sprinkle over pudding mixture. Cover dessert with ends of plastic wrap; use to gently press crumb mixture into filling.
  • Freeze 3 hours or until firm. Invert dessert onto serving plate; remove pan and plastic wrap. Let dessert stand at room temperature 15 min. to soften slightly before cutting to serve.
