THE BEST MASHED POTATOES
This is our go-to recipe for classic mashed potatoes, made with plenty of butter and cream. To make them fluffy and flavorful, be sure to simmer them slowly and add plenty of salt to the cooking water. And don't skip the step of steaming the excess water off; leaving too much moisture in the potatoes causes them to be loose and gluey.

- Put the potatoes in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Then lower the heat to medium and gently simmer until the potatoes are completely tender when pierced with the tip of a knife, about 30 minutes.
- Drain the potatoes well and return them to the pot. Place the pot over low heat and let any residual water steam off, about 2 minutes. Mash the potatoes well with a potato masher. Fold in the butter with a spatula until melted, and then fold in the cream. Season with salt and pepper.

- Put the potatoes in a pan and cover with cold water. Place over medium heat and bring to the boil. Simmer until fork-tender, 20 to 25 minutes, then drain.
- Smash the potatoes with a potato smasher for a minute or so to break them down a little. Add the butter, sour cream and heavy cream, then mix thoroughly. Stir in the bacon, green onions and grated cheese. Season to taste. Serve hot, topped with some extra green onions for garnish.

- Season potatoes with salt and pepper to taste. Place flour in a shallow dish or bowl; coat potatoes with flour. Add onion to potato/flour mixture and set aside.

- Boil potatoes with skin until wel cooked.
- Preheat oven to 425 deg.
- While potatoes are cooking prepare a large cookie sheet by spreading a generous amount of olive oil, followed by sprinkling salt and pepper over the oil and garlic powder.
- Remove potato from the water and cut in half.
- Place each piece of potato flat face down o the oiled cookie sheet. Leave some space between each piece.
- Smoosh down each piece of potato (i use a clean cloth over the potato to avoid burning myself on the hot potato).
- Throw in the oven for about 15-20 minutes, i just cook it until the bottom of potato gets really nicely browned and crispy.
- Once nicely browned, gently flip the potato over.
- Add some grated cheddar cheese over eac piece.
- Put in oven until cheese is melted an potato is completely crispy.
- Serve wih sour cream.

- Tip the potatoes into a large pan, cover with cold water and sprinkle with a generous pinch of salt. Set the pan over a high heat and bring to the boil. Once boiling, reduce the heat to a simmer and cook for 15-20 mins until the potatoes are very tender - they should be able to be easily pierced with the tip of a knife. - Add as many whole potatoes as you need to a pot of salted water. Bring to a boil, cover, and simmer/steam the potatoes until they are fork-tender. At this stage, you can remove the potatoes and keep them hanging around until you need them – OR – you can proceed on…I would proceed on. Then you can eat them quicker.
- Generously (generously, I say!) oil a baking sheet with your olive oil. Just dump a quarter-cup or so on there and smear it around with your fingers. This will keep the potatoes from sticking, so don't slack.
- Arrange the whole potatoes on the baking sheet. Then, using a potato masher or the bottom of a glass, gently ‘smoosh' the potatoes. Not so much that it breaks the bottom skin and crumbles the potato, but just enough that is smooshes all that potato-y goodness out.
- After that potatoes are properly smooshed, drizzle a bit of olive oil over each potato (butter works, too). Then, salt and pepper them generously.
