¼ cup dark corn syrup
¼ cup brown sugar
1 (16 ounce) can pear halves, well drained
½ cup pecan halves
1 (14.5 ounce) package gingerbread cake mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Mix the melted butter, corn syrup, and brown sugar in a 9-inch round cake pan.
  • Slice pear halves in half lengthwise. Place a pecan in the center of each pear quarter. Place pears cut side down in the cake pan, arranging them like spokes radiating from the center of the pan. Sprinkle any remaining pecans around the pears.
  • Prepare the cake mix according to package directions, and pour over the pears and pecans in the cake pan.
  • Bake 40 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Cool slightly before turning out onto a serving dish.

1/2 cup molasses (not robust or blackstrap)
3 large eggs
1/4 cup grated peeled ginger
1 Bosc pear
Accompaniment: whipped cream

Steps:

  • Preheat oven to 350°F with rack in middle. Butter and flour a 9-inch cake pan, knocking out excess.
  • Whisk together flour, baking soda, cinnamon, allspice, and salt.
  • Melt butter with water.
  • Beat together brown sugar and molasses with an electric mixer until combined. Add eggs 1 at a time, beating well. Beat in flour mixture at low speed until just combined. Add butter mixture and ginger, beating just until smooth. Pour into cake pan.
  • Peel pear and cut into 3/4-inch pieces. Scatter over batter. Bake until a wooden pick inserted into center comes out clean, about 35 minutes. Cool slightly.

This is a cross between a sticky toffee pudding and a ginger cake. Serve warm with ice cream or cream as a dessert

250g stoned dates , finely chopped
300ml milk
100g butter , plus extra for the tin
140g ginger preserve (you'll find this with the jams)
140g dark muscovado sugar
3 large ripe pears (we used Conference)
175g self-raising flour
50g pecan nuts, reserve 10 and chop the rest
1 tsp bicarbonate of soda
2 tsp ground ginger
½ tsp mixed spice
2 eggs , beaten
85g light muscovado sugar
150ml brandy

Steps:

  • Put the chopped dates in a pan with the milk, butter, ginger preserve and dark muscovado. Heat gently until the butter has melted and the mixture starts to bubble round the edges of the pan. Stir well and set aside for 1 hr to cool.
  • Heat oven to 180C/160C fan/gas 4. Line the base of a buttered 23cm springform tin with baking parchment. Peel and chop the pears into large chunks. Mix the flour, chopped pecans and bicarb with the spices, then stir into the cooled date mixture with the eggs. Pour into the tin and scatter over the pears. Roughly break the reserved pecans and drop on top. Bake for 40 mins, then cover the top loosely with foil and return to the oven for 25-30 mins more until a skewer inserted into the centre comes out with just sticky crumbs - the cake may still look a little wet around the pears.
  • While the cake is baking, make the brandy syrup. Tip the light muscovado sugar into a pan with 50ml water and dissolve over a low heat until syrupy. Stir in the brandy and set aside. When the cake is ready, spoon over half the syrup, then leave the cake to cool before serving with extra syrup on the side.
  • To freeze, cool the cake in its tin, then wrap well and freeze for up to 3 months. Defrost and warm through in a low oven. The syrup can be frozen separately, warmed, then drizzled over as before.

Steps:

  • Make topping:
  • Peel and core pears and cut each into 8 wedges.
  • Melt butter in skillet over moderate heat until foam subsides. Reduce heat to low, then sprinkle brown sugar over bottom of skillet and cook, undisturbed, 3 minutes (not all sugar will be melted). Arrange pears decoratively over sugar and cook, undisturbed, 2 minutes. Remove from heat.
  • Make cake:
  • Preheat oven to 350°F.
  • Whisk together flour, baking soda, cinnamon, ginger, cloves, and salt in a bowl. Whisk together molasses and boiling water in a small bowl. Beat together butter, brown sugar, and egg in a large bowl with an electric mixer at medium speed until creamy, about 2 minutes, then alternately mix in flour mixture and molasses in 3 batches at low speed until smooth.
  • Pour batter over topping in skillet, spreading evenly and being careful not to disturb pears, and bake in middle of oven until a tester comes out clean, 40 to 50 minutes.
  • Cool cake in skillet on a rack 5 minutes. Run a thin knife around edge of skillet, then invert a large plate with a lip over skillet and, using pot holders to hold skillet and plate tightly together, invert cake onto plate. Replace any pears that stick to skillet. Serve warm or at room temperature.

100g soft brown sugar
2 large eggs , beaten
1 tsp vanilla extract
200g self-raising flour

2 balls stem ginger in syrup, drained and chopped
2 pears , peeled, cored and roughly chopped
3 tbsp syrup from the ginger jar
3 tbsp granulated sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line the base and sides of a 900g/2lb loaf tin with baking parchment, ensuring the parchment comes 2cm above the top of the tin. Beat the butter and sugars together until pale, then gradually stir in the eggs and vanilla extract. Fold the flour, baking powder and a pinch of salt into the mix, then quickly stir through the stem ginger and pears. Pour the mixture into the loaf tin, smooth the surface, then bake for 1 hr - 1 hr 10 mins or until a skewer inserted in the centre comes out clean. Allow to cool in the tin.
  • To make the glaze, mix the syrup with 1 tsp water and the sugar. Poke the surface of the loaf all over with a skewer, then pour on the syrup. Serve warm with cream, or allow to cool completely.

For the "Upside Down" Pears:
1 pear, peeled, cored and sliced thin
¼ tsp. cinnamon
¼ tsp. ginger
1 tsp. coconut oil, melted
1 tsp. honey
For the Gingerbread Cake:
½ c. coconut flour
¼ c. arrowroot flour
1 tsp. baking soda
¼ tsp. salt
1 tsp. cinnamon
1 ½ tsp. ginger
⅓ c. palm shortening, melted (liquid measure)
1 tbsp. black strap molasses
⅓ c. honey
4 tbsp. applesauce
1 tsp. apple cider vinegar
2 tbsp. gelatin, plus ½ c. water (to make two gelatin eggs)

Steps:

  • Preheat the oven to 350 degrees. Lightly grease and line the bottom of a small 7½ inch round spring form cake pan with parchment paper cut to fit.
  • Toss sliced pears with ¼ tsp. cinnamon, ¼ tsp. ginger. 1 tsp. coconut oil and honey.
  • Arrange pear slices in a circular pattern at the bottom of the cake pan.
  • In a small bowl mix together the coconut flour, arrowroot flour, baking soda, salt, cinnamon and ginger.
  • In a larger mixing bowl with electric mixer combine the ⅓ cup melted oil, molasses, honey, and applesauce and cider vinegar.
  • Put the ½ cup water in a small sauce pan. Sprinkle the gelatin over the water; stir and allow to "bloom" (soften and start to gel) for 5 minutes.
  • While gelatin is blooming, add dry ingredients to wet ingredients and mix thoroughly.
  • After the 5 minutes for blooming the gelatin has expired, turn heat to low so that the contents of the saucepan gently melt; this should take no more than 1 minute. Once melted, whisk vigorously until frothy (this is your egg replacer!) and add to cake mix. Combine well. Pour into prepared cake pan. Smooth top gently (see picture above).
  • Bake for 45 minutes, until firm in the center.
  • Remove from the oven and allow to cool for 30 minutes. After 30 minutes, gently invert and remove cake to allow to cool completely. Cooling overnight is recommended before cutting.
  • Serve with whipped coconut cream and extra sprinkles of cinnamon.

1/2 cup (115g; 1 stick) unsalted butter
1/2 cup (100g) packed light or dark brown sugar
1/8 teaspoon ground cinnamon
2 cups (250g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1 and 1/2 teaspoons ground ginger
1 and 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup (180ml) unsulphured or dark molasses
3/4 cup (180ml) hot water (about 100°F (38°C))
1/2 cup (115g; 1 stick) unsalted butter, softened to room temperature
1/3 cup (67g) packed light or dark brown sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
for serving: whipped cream or vanilla ice cream

Steps:

  • Lightly grease a 9-inch square baking pan. Peel, core, and slice pears into 1/8-inch thick slices. Tightly layer the pears in the prepared pan, as pictured above. Set aside.
  • Whisking constantly, heat the butter, brown sugar, and cinnamon together in a small saucepan over medium heat. Once butter has melted, vigorously whisk to ensure the butter is not separating from the brown sugar. Once it comes together (it will, keep whisking!), pour evenly over pears.
  • Preheat oven to 350°F (177°C).
  • Whisk the flour, baking soda, ginger, cinnamon, cloves, and salt together. Set aside. Whisk the molasses and hot water together. Set aside.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and brown sugar together on high speed until smooth and creamy, about 1 minute. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Beat in the egg and vanilla extract on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl as needed. Turn the mixer off and add the dry ingredients and molasses/water. Turn the mixer on low and mix just until combined. The batter will be a little thick.
  • Carefully pour/spread batter on top of pears. Bake for around 35-45 minutes or until the cake is baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it's done. If you notice the edges or top browning too quickly, tent the cake with aluminum foil.
  • Remove from the oven and allow to cool in the pan for 10-15 minutes, then invert cake onto a serving plate. Cake will be moist! Serve warm or at room temperature with whipped cream or ice cream.
  • Cover leftover cake tightly and store in the refrigerator for 5 days or in the freezer for up to 3 months.

1 cup all-purpose flour
1 tablespoon ground ginger

  • Heat oven to 350 degrees. Butter a 9-inch-square cake pan; set aside. In a large bowl, toss pears with lemon juice. Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Lightly spray a 9 by 13 by 2-inch baking dish with vegetable cooking spray. Line the pan with parchment or waxed paper.
  • Melt 2 tablespoons of the butter in a medium skillet over medium-high heat. Add the pears and cook, stirring occasionally, until golden brown, about 7 minutes. Stir in 1 tablespoon of the brown sugar and 1 teaspoon of the pumpkin pie spice and remove pan from the heat.
  • Whisk the flour, ginger, the remaining 1 teaspoon of pumpkin pie spice, baking soda, baking powder, and salt in a large bowl.
  • In another bowl, whisk the milk, molasses, and remaining brown sugar. Add the eggs and whisk until smooth. Use a spatula to stir the molasses mixture into the dry ingredients to make a thick liquid batter.
  • Heat the water and remaining 2 tablespoons butter in a small saucepan until just boiling. Whisk the hot water into to the batter until just combined. Stir in the pears. Pour the batter into the prepared pan. Bake in the center of the oven, until a toothpick inserted into the center comes out clean, about 40 minutes.
  • Cool cake in the pan on a rack. Cut into 12 squares. Dust with confectioners' sugar before serving, if desired.

¼ cup packed light brown sugar
½ cup pecans
3 cups all-purpose flour
1 ½ teaspoons baking soda
½ teaspoon kosher salt
1 ½ teaspoons ground ginger
1 ½ teaspoons ground cinnamon
½ teaspoon ground cloves
¾ cup granulated sugar
2 large eggs
1 cup vegetable oil
½ cup Steen's Cane Syrup or Molasses
¾ cup boiling water
2 teaspoons pure vanilla extract
5 tablespoons crystallized ginger, finely chopped

Steps:

  • Preheat oven to 350 degrees F. Very generously butter an 8 or 9 inch round cake pan, leaving extra butter on the bottom to help the pears cook. Arrange the pears in a pretty pattern in the bottom of the pan. Sprinkle with brown sugar and pecans.
  • In a medium bowl, stir together flour, baking soda, salt, ginger, cinnamon, and cloves. In a large bowl, whisk together sugar, eggs, oil, vanilla, syrup, and water. Pour flour mixture into sugar mixture and mix until just combined. Stir in crystallized ginger. Pour batter over pears and pecans.
  • Bake for 55-65 minutes, rotating halfway through and covering with foil toward the end of the baking process if necessary, until a toothpick inserted in the center of the cake comes out with only a few moist crumbs. Allow cake to cool in pan for about 7 minutes before inverting onto a cake plate. I like the cake best warm, but it may be stored at room temperature for up to 2 days or frozen in quarters wrapped in parchment and foil and placed in a zipper bag for up to 3 months. Thaw at room temperature for several hours or in a 350 degree F oven wrapped in parchment placed on foil for about 30 minutes.

Steps:

  • In a small bowl, stir together the flour, baking soda, cinnamon, allspice and salt.
  • Add half of the dry ingredients to the molasses mixture and stir by hand or on the lowest speed of an electric mixer just until the batter is combined. Add the buttermilk, and then the remaining dry ingredients in the same manner. Pour the batter over the sliced pears.
  • Bake the cake for about 40 minutes, until the top is springy to the touch. Let it stand for 5 minutes, then run a knife around the edge of the cake and invert it onto a plate while it's still warm. (If it cools too much and sticks to the pan, warm it in the oven again before you try to invert it.) Don't worry if any pear slices stick to the bottom of the pan - simply peel them out and place them back on top of the cake where they belong.
  • Serve with whipped cream.

1-2 ripe but firm pears (or tart apples), thinly sliced

2 tsp grated fresh ginger, or 1 tsp powdered ginger
1 tsp vanilla
1 cup all-purpose flour
1 tsp baking soda

3/4 cup buttermilk or plain yogurt, thinned with milk

Steps:

  • Preheat the oven to 350°F and spray an 9 or 10-inch round cake pan or deep pie plate with nonstick spray.
  • To make the topping, melt the butter, syrup and brown sugar in a small saucepan over medium heat or microwave it until it's smooth. (Or combine them in the bottom of the pan, put it in the oven until it melts, then take it out and stir it with a fork until it's smooth.) Pour the mixture over the bottom of the pan and arrange the pear slices on top, placing them tightly together - they shrink a bit as they cook, so you can even get away with overlapping them.
  • To make the gingerbread batter, stir or beat the butter and brown sugar in a medium bowl until well blended. Add the egg, molasses, ginger (if you're using dry, save it to add with the cinnamon) and vanilla and beat until thoroughly combined. It may look kind of curdled - that's OK.
  • In a small bowl, stir together the flour, baking soda, cinnamon, dry ginger (if you're using it) and salt. Add half of the dry ingredients to the molasses mixture and stir by hand (or on low with an electric mixer) just until the batter is combined. Add the buttermilk, and then the remaining dry ingredients in the same manner. Pour the batter over the sliced pears.
  • Bake the cake for about 40 minutes, until the top is springy to the touch. Let it stand for 5 minutes, then run a knife around the edge of the cake and invert it onto a plate while it's still warm.   • Preheat oven to 350°F. Heavily grease a large loaf pan with butter. Set aside.

1/4 cup firmly packed brown sugar
1 tablespoon butter, softened
1 (18 1/4 ounce) yellow cake mix or 1 (18 1/4 ounce) French vanilla cake mix
1 cup sour cream
1/3 cup reserved pear juice
1/3 cup butter, softened
3 eggs
1/3 cup chopped candied ginger
1 tablespoon butter, softened
1 cup confectioners' sugar
remaining pear juice

Steps:

  • Heat oven to 325°F Grease and sugar a 10 cup bundt pan.
  • Cut pear halves in half. Decoratively place each pear piece, rounded side down, in pan flutes.
  • In small bowl, stir together the brown sugar and 1 tablespoon of softened butter until crumbly. Sprinkle brown sugar and butter mixture over the pears.
  • In a large mixing bowl, combine all cake ingredients; mix on low speed for 30 seconds. Beat on medium speed for 2 minutes, scraping bowl occasionally.
  • Spoon cake mixture into prepared pan until 3/4 full.
  • Bake for 60-65 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Cool for 10 minutes exactly, then remove from pan and cool completely on a rack.
  • While the cake is cooling mix the glaze.
  • Once the cake is completely cool move it to a platter and add the glaze.
