- Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
- Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.
- Remove the lid and stir in the kale. Cook until the kale has wilted, 5 to 6 minutes. Taste and adjust the seasonings as needed. Garnish with the herbs and serve straight from the skillet.

Steps:
- Brown sausage in a 10-inch cast-iron skillet; add wine.
- Bring to a boil; cover, reduce heat, and simmer 10 minutes or until sausage is done.
- Uncover, bring to a boil, and reduce wine by two-thirds. Remove sausage, reserving drippings in skillet; keep sausage warm.
- Add onion, garlic, bell pepper, and mushrooms to skillet; saute until tender. Return sausage to skillet; add tomato sauce. Simmer 8 minutes or to desired consistency.

I especially like to make this during the summer when the vegetables are so fresh and really add a lot of flavor to the dish. I got this from a locally produced cookbook. - My personal preference is to remove the casing. Brown sausage on all sides in deep 12-inch skillet for about 10 minutes. Drain off all but 2 T drippings.
- Stir in onion, peppers, potatoes, water and black pepper.
- Reduce heat to low, cover and cook 15-20 minutes or until potatoes are tender.

- Prep your ingredients. I like to serve this recipe with egg noodles, but you can serve it with whatever you decide. If doing egg noodles/pasta, I suggest starting to boil the water as you begin cooking the sausages.
- Add the olive oil to a skillet over medium-high heat. Sear the sausage pieces until they're browned/crispy on all sides (about 8-10 minutes), then remove them from the pan and set aside.
- Add the onion to the skillet and sauté it for 2-3 minutes (add more oil to the pan if it seems too dry), and then add in the peppers and continue cooking until they're tender-crisp. I like to get a little char on mine, so I cook them for a bit longer and ensure the pan stays HOT.
- When everything is looking to be about done, stir in the garlic and cook for about a minute or so.

- Add 1 1/2 tablespoons of oil to a skillet over medium high heat. Brown sausage on both cut sides. Set aside.
- Turn down to medium heat. Add a tablespoon of butter to the skillet and add frozen diced potatoes. Cover and cook for 10 - 12 minutes stirring occasionally and adding butter if the skillet gets dry. When potatoes are done cooking set aside.
- Add remaining 1 1/2 tablespoons of oil to skillet over medium heat. Add sliced peppers and onions and stir occasionally until lightly browned, about 7 - 9 minutes.
