Everytime a get together is planned, guess what I get asked to bring (AGAIN!)? This is a great dish for potlucks - feeds a crowd. Adapted from one of the first Taste of Home magazines.

1 lb bacon (diced)
1 medium onion (chopped)
2 (28 ounce) cans baked beans (undrained)
2 (16 ounce) cans kidney beans (drain & rinse)
2 (16 ounce) cans butter beans (drain & rinse)
1 (1 lb) package Little Smokies sausage (cut into thirds)
1 cup brown sugar
1/2 cup catsup
1/2 cup white vinegar
1 teaspoon garlic powder
1 teaspoon dry mustard

Steps:

  • In frying pan, cook bacon until crisp, drain, reserving one tablespoon of drippings.
  • Set bacon aside.
  • In drippings, saute onion until tender.
  • In a large bowl, combine all beans, sausage, bacon& onion.
  • Combine remaining ingredients and add to bean mixture, mixing well.
  • Pour into large baking dish.
  • Bake uncovered at 350 degrees for 50 minutes.

1 tablespoon bacon bits

Steps:

  • Heat oil in a pan over medium heat until shimmering. Add sesame seeds and cook for 1 minute; watch carefully as seeds burn quickly. Add green beans, bacon bits, smoked salt, and garlic powder. Cook and stir until beans are hot, about 3 minutes.

This reassuringly simple dish is packed full of wholesome, smoky flavours

200g brown rice
3 tbsp extra virgin rapeseed or olive oil
200g spring greens or chard (trimmed weight), washed and roughly chopped
3 garlic cloves , finely sliced
400g can butter beans , rinsed and drained
½ tsp cumin seed
1 tsp smoked paprika
natural yogurt , to serve (optional)

Steps:

  • Rinse the rice in cold running water until it runs clear. Bring a large pan of water to the boil, cook the rice for 20-25 mins, then drain.
  • Place a wide, lidded pan over a medium heat with 2 tbsp oil. Add the greens, salt and pepper and cook, with the lid on, stirring frequently, until the greens are lightly steamed and wilted, about 4-5 mins. Add the garlic and cook until fragrant, then add the butter beans and cook, stirring, until heated through. Add the remaining oil, then the cumin seeds and smoked paprika. Stir until evenly combined and serve over the cooked rice with a dollop of yogurt, if you like.

Steps:

  • Heat oil in heavy large pot over mediumhigh heat. Add onion and sauté until soft and beginning to brown, about 6 minutes. Add garlic; stir 1 minute. Add tomatoes with juice and paprika; stir 1 minute. Add broth and greens; bring to boil, stirring often. Reduce heat to medium-low, cover, and simmer until greens are wilted and tender, stirring occasionally, about 15 minutes. Stir in beans and simmer 1 minute to heat through. Divide among bowls; sprinkle with cheese, if desired.

Ready in under 30 minutes, this vegan butter bean soup combines creamy beans with veg and smoky flavours for a dish that's low-fat, high-protein, and gluten-free.

1 tablespoon olive oil
1 large onion, chopped
2 medium carrots, scrubbed and diced
3 cloves garlic, finely chopped
2 tablespoons tomato puree
1½ teaspoons smoked paprika ((plus more to taste))
1 teaspoon thyme
1 teaspoon dried sage
1x 14 oz (400 g) tin tomatoes
2x 14 oz (400 g) tins butter beans, drained and rinsed
4 cups (1 litre) vegan stock
2 bay leaves
3 tablespoons nutritional yeast ((optional))
3 oz (100 g) fresh spinach ((approx. 3 cups))
Salt and pepper to taste
Small handful fresh parsley ((optional))

Steps:

  • Heat the oil in a large saucepan on medium heat and add the onion and carrot. Season with salt and pepper and cook for 6-8 minutes, stirring now and then until the veg has started to soften.
  • Once the veg starts to soften, add the chopped garlic and cook for another 2 minutes.
  • After a couple of minutes, add the tomato puree, smoked paprika, thyme, and sage. Stir well and cook for another minute.
  • Next, add the tinned tomatoes, drained butter beans, vegan stock, bay leaves, and nutritional yeast. If using tinned whole tomatoes, break these apart with a spoon. Add a little water to the empty tomato can and swirl around before adding to the pan. Mix well, bring to a gentle simmer, then reduce the heat and cook on a low heat for 6-8 minutes.
  • After 6-8 minutes, add the spinach. If using fresh parsley, you can chop some of the stems and add them to the pan. Cook for a couple of minutes until the spinach has wilted down.
  • Taste the soup and adjust the flavours if necessary. You may want to add a little more smoked paprika, nutritional yeast, salt, or pepper.
  • Turn off the heat, remove the bay leaves, and blitz using a hand blender. Do this until you have the desired consistency. You could also transfer to a larger, more powerful blender, or simply mash using a potato masher for a chunkier texture.
  • Adjust the seasoning again and serve with chopped fresh parsley (see post above for more suggestions).

  • Heat a large, deep skillet over medium-high heat. Add the oil to the skillet and swirl it around. Add the onion, salt, and pepper and cook for 5 minutes, or until onion is slightly golden. Cover the skillet, reduce the heat to low, and cook the onion for another 5 minutes, or until soft and beginning to brown. Stir in the garlic and cook, uncovered, until fragrant, about 3-4 minutes. Add the thyme and cook for 2 minutes.
  • Add the beans to the skillet, along with the vegetable stock/water. Raise the heat, bringing the mixture to a boil. Reduce the heat to low, cover the pan, and simmer for 5 minutes. Remove the lid and cook for another 5 minutes, or until the mixture is creamy and the beans are very soft. You can crush some of the beans with the back of your spoon or a potato masher if you’re looking for an even creamier texture. Add the liquid smoke, if using.
  • Stir in the apple cider vinegar and more salt and pepper, to taste. Serve immediately with crusty bread. Fully cooled and covered leftovers will keep in the fridge for up to 4 days.

Stir in red pepper flakes and black pepper, then add stock, vinegar, brown sugar, and hot sauce, then mix in collard greens and reduce heat to low. Bring to a simmer; cover and cook, stirring occasionally, until greens are very tender but still have some chew, 60–70 minutes.
  • Uncover pot, add beans, and simmer until beans and greens are very tender and liquid is slightly reduced, 15–20 minutes. Season with salt. Serve topped with breadcrumbs.
  • Do Ahead: Collard greens can be cooked 1 day ahead. Let cool in liquid, then cover and chill. Reheat gently over low before adding beans.
