1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese
4 flour tortillas (6 inch)
1/4 cup TACO BELL® Thick & Chunky Salsa
1/4 cup chopped fresh cilantro

Steps:

  • Heat grill to medium heat.
  • Sprinkle 2 Tbsp. cheese onto half of each tortilla. Top with salsa and cilantro. Fold in half to enclose filling; press lightly to secure.
  • Grill 1 to 2 min. on each side or until cheese is melted and quesadillas are lightly browned on both sides.
  • Cut in half to serve.

adobo seasoning to taste
12 (10 inch) flour tortillas
1 ½ cups shredded Mexican cheese blend
1 onion, chopped
1 (6 ounce) can sliced black olives, drained
1 (7 ounce) can diced green chilies, drained

Steps:

  • Place the chicken on a plate, and sprinkle with adobo seasoning on both sides. Let it marinate for 15 minutes.
  • Heat grill for medium-high heat.
  • Lightly oil the grill grate. Place chicken on grill, and cook for 10 minutes per side, or until juices run clear. Remove chicken from grill, and cut into bite-size pieces.
  • Place one or two tortillas on the grill, and sprinkle with a thin layer of cheese, chicken, onion, olives, and chiles. Top with another tortilla, and grill until brown and crispy on both sides, about 3 minutes per side. Repeat with remaining ingredients. Cut into wedges to serve.

Cooking spray
1 cup Old El Paso™ fat-free refried beans (from 16-oz can)
1/2 cup diced bell pepper, any color
1 small tomato, seeded, diced
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 1/2 cups shredded taco-seasoned cheese blend (6 oz)
4 tablespoons sour cream, if desired

Steps:

  • Heat gas or charcoal grill. Lightly spray one side of each tortilla with cooking spray. On unsprayed side of each of 4 tortillas, spread 1/4 cup beans. 1 (19 ounce) can kidney beans, rinsed and drained
1 cup salsa
4 green onions, chopped
1/4 cup green olives, chopped
2 tablespoons fresh coriander or 2 tablespoons parsley, chopped
1 1/3 cups reduced-fat extra sharp cheddar cheese or 1 1/3 cups extra-sharp cheddar cheese, shredded

Steps:

  • In a bowl, mash beans along with 1/2 cup of the salsa with a potato masher.
  • Spread mixture evenly over the 4 tortillas leaving a 1/2 inch border.
  • In this order sprinkle mixture with onions, olives, coriander and, finally, cheese.
  • Fold tortillas over and press to seal.

2 cups (500 mL) shredded mozzarella cheese
2 oz (60 g) sliced pepperoni (about 30 slices)
1 cup (250 mL) pizza sauce, heated

Steps:

  • Heat coals or gas grill for direct heat. Place 2 of the tortillas on cookie sheet. Sprinkle each with 1/2 cup of the cheese. Top each with half of the pepperoni. Sprinkle 1/2 cup of remaining cheese over each. Top each with tortilla.
  • Transfer quesadillas to grill 4 to 6 inches from low heat. Cover and grill 2 to 3 minutes, rotating occasionally, until bottom tortilla is golden brown. Turn over with broad pancake turner. Cover and grill 2 to 3 minutes longer or until bottom tortilla is golden brown.
