3 pounds pork loin roast
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon dried thyme
1 teaspoon coriander
1/2 teaspoon kosher salt (or more if desired)
1 tablespoon oil
2 cloves garlic (minced)
2 cups chicken bone broth

Steps:

  • Mix onion powder, oregano, garlic powder, cumin, thyme, coriander, and salt in a small bowl. Rub seasoning mix into pork loin roast.
  • Heat oil in pressure cooker on sauté then stir fry minced garlic until fragrant. Add pork loin roast and brown all sides.
  • Remove roast and deglaze pot with half the bone broth.
  • Add remaining broth then place rack in bottom of pot. Put the pork loin roast on top of the rack.
  • Pressure cook on high for 25 minutes. When done, do a quick pressure release. Remove roast from pot and allow to sit for 10-15 before slicing.

1 (2 to 3 pound) pork loin roast
Salt and pepper
1 cup chicken stock or broth
1 tablespoon garlic, minced
2 teaspoons lemon zest
1 1/2 cups cherries, frozen
1/2 cup water
1/4 cup Dijon mustard
2 tablespoons light brown sugar
2 teaspoons cornstarch, mixed into 1 tablespoon water
1 tablespoon butter

Steps:

  • With lid off, heat oil on High. Generously salt and pepper roast, place in cooker and brown on both sides. Add stock, garlic, zest to cooker and secure lid, Cook on HIGH for 45 minutes. Meanwhile, place cherries, water, mustard and sugar in sauce pan over medium heat. Cover, bring to simmer and let cook 10 minutes. Use a potato masher, hand blender or heavy spoon to mash most of the cherries into the sauce before adding the cornstarch mixture and letting simmer for 3 more minutes. Remove from heat and stir in butter. Let cooker release naturally for 10 minute then quick release. Remove roast and let rest under foil for 10 minutes before carving and serving smothered in Cherry sauce.

1 tablespoon butter
1 (14 ounce) can whole cranberry sauce
½ yellow onion, sliced
2 tablespoons Dijon mustard
2 tablespoons chopped fresh tarragon
1 packet dry onion soup mix
1 tablespoon cornstarch

Steps:

  • Pat pork loin dry and season on all sides with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter and let melt. Add pork loin and cook on all sides until just a little bit of color shows, about 1 minute per side. Turn off Saute function and add cranberry sauce, sliced onion, Dijon mustard, tarragon, and dry onion mix. Gently combine and spoon some of the sauce over the pork loin.
  • Close and lock the lid. Select high pressure according to manufacturers' instructions; set timer for 9 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Check internal temperature of the pork loin; an instant-read thermometer inserted into the center should read at least 180 degrees F (82 degrees C). Temperature will continue to rise slightly after the pork loin is removed from pot.
  • Place on a cutting board to allow to rest for 8 to 10 minutes before cutting into thin slices.
  • While pork loin is resting, select Saute function again and stir cornstarch into sauce. Whisk until sauce thickens, 2 to 5 minutes. Serve pork loin with cranberry-Dijon sauce.

1/4 cup Dijon mustard
1/2 cup Irvine Spices Roasted Garlic Pepper Seasoning
1/4 cup white wine
16 ounces prepared brown sauce or gravy
Salt and freshly ground black pepper
1 teaspoon very finely chopped rosemary leaves

Steps:

  • Early in the day, rinse pork loin to remove any unwanted smells and pat dry with paper toweling. In a large saute pan, heat the oil and sear the pork loin on all sides. Remove pork to a utility platter and coat liberally with mustard, then roll in Roasted Garlic Pepper Seasoning. Leave refrigerated for 2 hours.
  • Preheat oven to 350 degrees F.
  • Transfer pork to a covered roasting pan or a large saute pan with an oven safe handle, and roast covered in oven until fork tender, at least 45 minutes. (Remember to use oven mitts when removing the pan from oven.) Transfer pork to a utility platter and let rest in a warm place before slicing. Add white wine to the roasting pan and swirl to combine flavors with the juices in the pan. 1 package pork gravy mix

Steps:

  • Trim excess fat from pork loin. Rub the loin with olive oil. Season the entire loin with Paula Deen House Seasoning. Spray the basket of pressure cooker with non-stick cooking oil. Place the loin in the pressure cooker, and add water around the sides of your roast. Top off with 2 bay leaves.

¼ cup olive oil
¼ cup lime juice
2 cloves garlic, sliced
½ teaspoon red pepper flakes, or to taste

Steps:

  • Blend the cilantro, olive oil, lime juice, garlic, red pepper flakes, and salt in a blender until smooth; pour into a large resealable plastic bag. Add the pork tenderloin to the bag and manipulate to assure it's covered with the marinade. Remove as much air from the bag as possible before sealing. Marinate in refrigerator 8 hours to overnight.

This is adapted from Miss Vickie's Big Book of Pressure Cooker Recipes. The original Recipe calls for more sour cream and flour, I reduced them to change the final sauce consistency to my personal preference. The Dijon gives the sauce a slight bite, and the roast is juicy, tender and perfectly done. Miss Vickie's directions specify not to remove the netting, but I find that removing it after cooking pulls off the brown crust, so I remove it and tie with kitchen string before browning.

1 medium onion, chopped
3/4 cup white wine

  • In your pressure cooker, heat the oil and butter over medium heat.

1 center-cut pork loin, with 8 rib chops (bones cracked by the butcher for easy carving later)
1 clove garlic, very thinly sliced (we use more)
2 sprigs fresh rosemary
3 sprigs fresh sage
2 tablespoons Dijon mustard
1/4 cup olive oil
salt
fresh ground black pepper, to taste
2 tablespoons flour
extra chopped rosemary, for garnish
extra chopped sage, for garnish

Steps:

  • Set the oven at 450 degrees.
  • Use a small, sharp knife to make tiny slits all over the meat.
  • Insert pieces of garlic in the slits.
  • Pull the rosemary and sage from their stems.
  • Finely chop the herbs and transfer them to a bowl.
  • With a fork, mash the mustard in to the leaves.
  • Add olive oil, a few drops at a time.
  • Blend in salt, pepper, and flour.
  • Place the pork, fat side up, in a roasting pan fitted with a rack.
  • With the back of a spoon, spread the herb mixture all over the meat.
  • Transfer the pork to the hot oven and roast it for 30 minutes.
  • Turn the oven temperature down to 350 degrees.
  • Continue cooking the pork for 50 to 60 minutes or until a meat thermometer inserted into the thickest part of the pork registers 155 degrees.
  • Pork is done at 160 degrees; the temperature will rise 5 degrees as the meat rests in a warm place.

I adapted this recipe to be used in a crock pot by adding some additional liquid, and using creme fraiche instead of sour cream. I used creme fraiche because it is more heat stable and doesn't curdle when added to hot liquids.

1 tablespoon margarine
2 1/2 lbs boneless pork loin roast
1 medium onion, chopped
3/4 cup white wine

1/2 cup creme fraiche

  • Heat olive oil and margarine in a skillet over medium high heat.

0.667 (32 ounce) box chicken broth
1/4 cup oil
2 garlic cloves, peeled and crushed
1 onion, peeled and quartered
3 -4 tablespoons italian seasoning
3 tablespoons cold water
3 tablespoons cornstarch
0.333 (32 1/16 ounce) box chicken broth

Steps:

  • Prepare the pork loin by rubbing in the Italian Seasoning and crushed garlic. Heat the oil in the pressure cooker and put in a few of the onion pieces to flavor the oil leaving it just long enough to soften slightly, then remove it and set aside. Brown the roast on all sides and both ends. Remove to extra plate so that you can add 2/3rds of the chicken broth scraping the bottom of the pan to get up all the good bits; add the trivet and return the roast, fat side up. Add the onion. Pressure cook for 1 hour; remove from heat and let it the pressure come down on its own.
  • Remove the roast and onions to a serving dish and tent with foil to rest for 15 minutes. In the meantime, mix the cold water and corn starch in a mixing cup or small bowl (I like to add a little pepper here). Remove the trivet from pot, add the rest of the chicken broth and bring to a boil. Add the water/corn starch mixture to the pot and remove from heat. This makes a wonderful gravy for the roast.

I found this recipe in a weekly magazine that comes with our newspaper. I am not a big meat eater, but I figured that matching the pork with the cherries was a good mix and boy was I right. I hope you enjoy this as much as my husband and I did! The cherry sauce did call for putting in 12 whole cloves when you are simmering it with the sugar and cinnamon, and then removing them. I did not do this as I don't like cloves.

  • Brown Pork Loin in Instant Pot: Heat up Instant Pot with "Sauté More" function. Wait until the screen says "HOT". Add 1 - 2 tbsp (15 - 30ml) olive oil in Instant Pot, and ensure the whole bottom is coated with olive oil. Pat dry the pork loin with a paper towel. Season one side of pork loin with kosher salt and black pepper. Place the pork loin in Instant Pot (seasoned side face down). Brown the first side for 4 minutes. Season the other side of pork loin with salt and black pepper. After 4 minutes, flip over and brown the other side for another 4 minutes. Set aside the browned pork loin.
  • Saute Onion and Garlic: Add 1 tbsp (15ml) olive oil in Instant Pot. Add in sliced onions, then saute for 3 minutes. Add in 1 bay leaf, 1 tsp (0.5g) dried oregano, 1 tsp (1g) dried rosemary, and minced garlic in Instant Pot, then saute for 30 - 45 seconds until fragrant. *Note: Your inner pot should look quite brown.   • Deglaze Instant Pot: Pour 1 cup (250ml) unsalted chicken stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix.
  • Pressure Cook Pork Loin: Add in 2 tbsp (30ml) regular soy sauce, then give it a quick stir.
