Provided by Marian Blazes

Categories     Appetizer     Lunch

Time 3h55m

Yield 40

Number Of Ingredients 27

For the Empanada Dough
4 cups flour
1 1/2 teaspoons salt (or to taste)
3 tablespoons sugar
2 tablespoons butter (chilled)
12 tablespoons lard (or vegetable shortening, chilled)
2 egg yolks
3/4 to 1 cup water
For the Filling
1/2 cup golden raisins
3 tablespoons vegetable oil
1 small onion (finely chopped)
1 teaspoon cumin
1/2 teaspoon garlic salt
Optional: 2 teaspoons aji panca paste
1 medium tomato (seeded and diced)
5 to 6 scallions (finely chopped)
1 tablespoon sugar
1 (15 1/2-ounce) can black beans (drained)
2 cups corn kernels (frozen)
1/2 lime (juiced)
4 ounces farmers cheese (cut into 1/4-inch cubes)
4 ounces pepper jack cheese (cut into cubes)
1/4 cup fresh cilantro (chopped)
For Assembly
1 egg (beaten)
Powdered sugar (for dusting)

Steps:

  • Gather the ingredients.
  • Sift the flour into a bowl. Stir in the sugar and 1 teaspoon salt.
  • Blend the lard (or shortening) and butter into the flour mixture with a pastry cutter, or with two knives, until fairly well blended.
  • Whisk the egg yolks with 3/4 cups water.
  • Stir in the water-egg mixture, a little bit at a time, until the dough starts to come together smoothly.
  • Keep kneading the dough, adding more of the water-egg mixture as needed (you may need a few tablespoons extra of water), until the dough is smooth. The dough will seem a bit shaggy until it has thoroughly chilled. Taste for salt and add more if needed.
  • Cover the dough with plastic wrap and refrigerate for about one hour.
  • Gather the ingredients.
  • Pour boiling water over the golden raisins and let soak for 10 minutes, then drain. Set aside.
  • Add the vegetable oil to a heavy skillet and place over medium heat. Add the chopped onions, aji paste, cumin, and garlic salt and sauté until the onions are very soft and translucent, about 5 to 8 minutes.
  • Add the chopped tomatoes, the scallions, and the sugar and sauté, stirring, for about 5 minutes more, or until excess liquid has cooked away and tomatoes are beginning to stick to the pan.
  • Add the black beans and sauté, until excess liquid is cooked away, about 5 minutes.
  • Add the corn, raisins, and lime juice, and cook for 5 minutes more.
  • Remove mixture from heat and scrape into a heatproof bowl.
  • Let cool to room temperature, then stir in the cheese cubes and the cilantro. Chill mixture for 2 hours, or overnight.
  • Gather the ingredients. Preheat oven to 375 F.
  • Divide the dough into 20 pieces for large empanadas or about 40 pieces for small, appetizer-size empanadas.
  • Roll each piece of dough into a circle about 1/4-inch thick. (Circles will be about 6 inches in diameter for the larger empanadas and about 3 1/2 inches for the smaller ones).
  • Place 1 heaping tablespoon of filling in the middle of each circle of dough (1 teaspoon for small empanadas).
  • Fold the dough over the filling to make a semicircle. Press the edges together firmly to seal.
  • Fold the edge over itself and crimp decoratively.
  • Transfer to a parchment-lined baking sheet and brush the empanadas generously with the beaten egg.
  • Bake for about 20 minutes, or until puffed and golden brown.
  • Let cool and dust with powdered sugar.
  • Serve warm or at room temperature.

SMOKY BLACK BEANS

Smoky Black Beans image

My daughter and I love the black beans found at a popular fast food chicken restaurant, but I could not find a recipe for that particular taste. I think I came pretty close with this one. A little spicy, a little sweet but oh, so good!!! These beans go great with almost any meat but are especially good with grilled chicken.

SOUTHWEST BLACK BEAN AND CORN ENCHILADAS

Southwest Black Bean and Corn Enchiladas image

I searched and searched for a black bean enchilada recipe that sounded good to me and couldn't find one so I made one up. A few pointers with this recipe it's really easy and you can change it to your tastes. We like to top these with lettuce, tomatoes, green onions, cilantro, guacamole, sour cream, and shoot just about anything else in the fridge that sounds good. Use your favorite salsa, use more or less sour cream, leave the corn, add more bell pepper, really it's up to your but we really really liked these. Hope you do too!

Provided by I Cook Therefore I

Categories     Black Beans

Time 40m

Yield 6 enchiladas, 4-6 serving(s)

Number Of Ingredients 14

2 tablespoons oil
1 small yellow onion, diced
1 red bell pepper, diced
1 garlic clove, minced
1 (15 ounce) can black beans, drained and rinsed
1/2 cup salsa (your favorite)
1/2 cup corn kernel (frozen, fresh, or canned)
1/3 cup sour cream
1 teaspoon cumin
1/2 teaspoon Mexican oregano
salt
6 eight inch tortillas (corn or flour)
4 cups enchilada sauce (I recommend Red Velvet Enchilada Sauce, but use your favorite recipe, or just use canned)
cheddar cheese, shredded (as much as makes you happy!)

Steps:

  • Heat oil in a pan until it shimmers.
  • Add the onion and bell pepper and cook for about thirty seconds.
  • Add the garlic, cumin and mexican oregano and cook until the onions and peppers are really soft.
  • Add the salsa and black beans and cook until heated through.
  • Using a potato masher, roughly mash the black beans so that some are broken and some are whole.
  • Add the corn and cook until heated through.
  • Stir in the sour cream.
  • Spray a 9 X 13" casserole pan with cooking spray.
  • Spread about a 1/2 cup of the enchilada sauce over the bottom of the casserole dish.
  • Spoon the black bean mixture evenly in the center of the tortillas.
  • Roll the tortillas up leaving the ends open, and place them seem down in the casserole dish. When I made this I got 6 pretty well stuffed tortillas and it almost totally filled my baking pan.
  • Pour the rest of the enchilada sauce over the enchiladas, and use more or less to suit your liking.
  • Cooking times vary. If you make this dish ahead of time and put it in the fridge and it cools down all the way I cover it with foil and put it in a 350 degree oven for 30 minutes, and then uncover it and sprinkle the cheese all over it and return it to the oven for another 15 minutes or until it's bubbling and heated through. If you make the bean mixture and stuff the tortillas immediately you won't have to bake it for as long, 10 minutes at 350 degrees uncovered and then sprinkle the cheese over and bake for another 10 minutes and that should do it. Since everything has already been cooked the key here is just getting it heated through.
  • Serve topped with your favorite enchilada toppings.
  • Enjoy!

Categories     Mexican

Time 1h30m

Yield 24 empanadas, 8 serving(s)

Number Of Ingredients 20

1 tablespoon olive oil
1/4 cup finely diced onion
3/4 teaspoon minced garlic
1/4 teaspoon cumin
1/4 teaspoon dried Mexican oregano, crumbled
1 1/2 cups cooked black beans
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons water
1/4 cup crumbled queso blanco or 1/4 cup cheddar cheese
3/4 cup flour
1/2 cup masa harina
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 tablespoon canola oil
2 large eggs
2 tablespoons water
egg wash
3 cups oil (for frying)
kosher salt, as needed for garnish

Steps:

  • To make filling:.
  • Heat olive oil in a medium saute pan over med-hi heat. Add onion and garlic and saute until tender, stirring frequently to prevent garlic from burning.
  • Stir in the cumin and oregano and cook for 30 more seconds. Add the beans and salt and pepper.
  • Remove from heat and cool slightly. Place beans in a blender and puree. If they are too stiff, add the water as needed to make a smooth puree.
  • Transfer to a bowl and mix in the cheese.
  • The filling can be prepared ahead and stored in the fridge for up to 2 days.
  • To make dough:.
  • Combine the flour, masa harina, baking powder and salt in a medium bowl. Toss to mix. Add oil and stir with a wooden spoon.
  • In a liquid measuring cup, mix together the eggs and water. Add gradually to the flour mixture until it is all incorporated.
  • Turn dough out onto a board and knead until it is very pliable - about 3 minutes. Add more flour or water if needed.
  • To assemble:.
  • Roll the dough out very thinly, about 1/16 inch thickness. Cut using a 3 inch round cutter. You should have 24 circles.
  • In a small bowl beat together 1 egg and 1 T. water to make an egg wash.
  • Place 2-1/2 teaspoons of filling in the center of each circle. Brush edges with egg wash and fold in half. Seal by pressing together with a fork. Place on a parchment lined baking sheet.
  • You may make these ahead and chill, covered, for up to 24 hours or freeze for up to 3 weeks.
  • Heat oil in a deep fryer or skillet to 350 degrees. Fry until golden brown and crisp about 3-4 minutes. Drain on paper towels and sprinkle with kosher salt before serving.
  • Serve with sour cream, salsa or guacamole.
