For those vegetarians who miss the taste of meatloaf, here is a tasty vegetarian version that matches the flavor.

1 (12 ounce) bottle barbeque sauce
1 (12 ounce) package vegetarian burger crumbles
1 green bell pepper, chopped
⅓ cup minced onion
1 clove garlic, minced
½ cup soft bread crumbs
3 tablespoons Parmesan cheese
1 egg, beaten
¼ teaspoon dried thyme
¼ teaspoon dried basil
¼ teaspoon parsley flakes
salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a bowl, mix 1/2 the barbeque sauce with the vegetarian burger crumbles, green bell pepper, onion, garlic, bread crumbs, Parmesan cheese, and egg. Season with thyme, basil, parsley, salt, and pepper. Transfer to the loaf pan.
  • Bake 45 minutes in the preheated oven. Pour remaining barbeque sauce over the loaf, and continue baking 15 minutes, or until loaf is set.

1 lb ground beef
1 egg
1/2 cup breadcrumbs
1/2 packet onion soup mix
barbecue sauce

Steps:

  • Mix the first 4 ingredients with your hands.
  • Evenly distribute into cups of a muffin tin, I used a jumbo tin, so I got 4"muffins".
  • Pour barbeque sauce on top of each.
  • Bake at 350F for 15-20 minutes.
  • Serve with mashed potatoes or mac and cheese.

1/4 cup organic olive oil
1 (1 ounce) packet onion soup mix (I use Simply Organic French Onion Soup & Dip mix)
1 cup finely chopped organic walnuts
2 cups organic cereal flakes (I use Nature's Path Organic Flax Plus Multibran Cereal)
1/4 cup chopped organic onion

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine cottage cheese, eggs, vegetable oil, soup mix, walnuts, cereal and onion.
  • Spoon into a muffin tin.
  • Bake for 15 to 20 minutes.
  • Let rest for 5 minutes.

Reduce the heat to medium low and simmer, uncovered for at least 40 minutes or until the water is absorbed and the lentils are slightly mushy.   • While the lentils are cooking, combine breadcrumbs and milk in a large bowl and let soak. Heat 2 tablespoons olive oil in a large skillet over medium heat. When hot, add the onion and cook, stirring occasionally, until soft but not brown, 5 to 7 minutes. Add the celery and cook 3 to 4 minutes longer. Add the mixture to the breadcrumbs.
  • In a small pan, toast walnuts over medium-low heat, shaking the pan occasionally, until fragrant, about 5 minutes. Add the nuts to the breadcrumb mixture along with the carrot, Parmesan, 1/4 cup ketchup, thyme, oregano, salt, pepper, and lentils. Mix thoroughly and divide evenly amongst muffin tins.
