ROASTED PEARS WITH BLUE CHEESE AND WALNUTS
This is a very easy recipe, makes a beautiful presentation, and is ridiculously delicious. Great first course for the holidays or a dinner party. It comes from Tyler Florence on the Food Network.

Steps:
- Preheat oven to 375 degrees F.
- Arrange the pears, cut side up, on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Strip the leaves from the thyme branches and sprinkle over the pears.
- Bake 20 minutes, then remove from oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half.
- Return to oven and roast until they are tender and cheese is soft, about 10 minutes.
- Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes; chop.
- When the pears are cooked, transfer them to a serving plate and sprinkle with toasted walnuts.
- Serve hot.

Put the baking sheet in the oven and bake 20 minutes. Remove the baking sheet from the oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half, return the pears to the oven and roast until they are tender and the cheese is soft, about 10 more minutes.
- Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes. Chop. When the pears are cooked, transfer them to a serving plate and sprinkle the toasted walnuts over the top. Serve hot.

- Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
- In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
- Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.

- 1. Use apple corer to remove core from pear. Crosswise cut pear into 1/4-inch-thick rings. In small bowl toss together pear rings and olive oil. Arrange in single layer on baking sheet lined with parchment paper. Bake at 400degrees F for 27 to 30 minutes or until soft and beginning to brown, turning once after 15 minutes. Set aside.
- 2. When pears are cool enough to handle, cut each ring into quarters.
- 3. Spread scant teaspoon of blue cheese on each KEEBLER TOWN HOUSE Original cracker. Top each with pear piece and pecan half.
- *NOTE: If you can't find glazed or candied pecan halves at your grocery store, make your own. In small saucepan combine 1/4 cup sugar, 2 tablespoons light corn syrup, 1 tablespoon butter and 1/8 teaspoon salt. Bring to boiling over high heat. Stir in 1 1/2 cups pecan halves. Cook, stirring constantly, for 3 minutes. Spread in single layer on baking sheet lined with foil and sprayed with cooking spray. Bake at 350degrees F for 12 to 15 minutes or until bubbling and browned, stirring once after 7 minutes. Cool completely. Break up. Store in airtight container for up to 1 week.

- Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil.
- Lay the prosciutto slices side by side on a work surface. Place a pear wedge near the end of each one and roll up. Transfer the wrapped pear wedges to the baking sheet. At this point you can lightly sprinkle over with freshed ground black pepper, if desired. Roast about 6 minutes, until the prosciutto is lightly browned and the pear has softened.
- Meanwhile, combine the blue cheese, cream and thyme in a small saucepan over medium heat. Cook about 3 minutes, stirring constantly, until the cheese melts. Season with pepper to taste. Arrange the roasted wrapped pears on a plate around a small bowl containing the blue cheese cream. Serve immediately.

PLANK-ROASTED PEAR SALAD WITH BLUE CHEESE AND WALNUTS
I recently had a salad comparable to this in a restaurant. It was delightful! Inspired by a recipe Costco published, June, 2010, but I am suggesting a different dressing. Adjust the amount of blue cheese and walnuts to your liking. Enjoy!

- Soak the planks for 60 minutes in water.
- Preheat your grill.
- Optional" Roast the walnuts. Walnuts can be roasted in a dry skillet before chopping. Simply put them in a skillet over medium heat and roast until you start to smell them. They are done at that point. Be careful not to burn them.
- Cut the pears in half lengthwise, leaving the stems intake. Take a melon baller and remove the seed/ core section.
- In a bowl, mix the butter and honey. Brush the honey mixture over the cut surface of the pear. Sprinkle the pears with blue cheese, add some extra to the cored out center YUM!
- Place the planks on the grill grate and close the lid. When the planks start to smoke and pop, about 3-5 minutes, open the grill and *use tongs*, turn the planks over.
- Place the pears on the planks, cut side & blue cheese side UP.
- Close the grill and roast for 12-15 minutes or until the pears are scorched around the edges and the cheese is melted.
- Serve on top salad greens, sprinkle with walnuts
- Dress with vinaigrette.
- ALTERNATELY: Plank-Roasting in the oven.
- Preheat oven to 450°F.
- Place the prepared pears on the planks and place the planks in the middle of the oven.
- Plank roast for 12-15 minutes or until pears are scorched around the edges.

This is based on a Ina Garten recipe. It's a very elegant and delicious dessert and it's very easy to make. If using a smaller pear such as Bosc you may need to use more pears.

- Preheat the oven to 375 degrees F.
- Toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Set aside.
- Chop off the top of one pear to remove the stem. Peel and slice it lengthwise into halves. With a small sharp paring knife and a melon baler or small cookie scooper, remove the core and seeds leaving a round well. Remove a bit more from the center so you have a nice hole in each pear half. Trim a small slice away from the bottom rounded side of each pear half so that they will sit upright without wobbling. Place the pear halves in a baking dish core sides up and brush them all over with lemon juice using a pastry brush. Repeat with all the pear halves. Use a 2 to 2 1/2 quart shallow casserole dish so that the pear halves all fit snuggly in the dish.
- Stuff each pear hole with some of the cheese mixture, mounding it on top of the holes and packing it slightly.
- Combine the apple cider, port, pear liquor and brown sugar in a small bowl. Stir well to dissolve the sugar. Pour the mixture by tablespoons over each pear half letting the excess run over in to the dish.
- Bake the pears, basting each half every 10 minutes with the cider mixture, for 30 minutes, or until the pairs are tender. Set aside to cool. Serve warm or at room temperature.
