8 oz fresh asparagus, cut into 2 inch pieces
12 mini sweet bell peppers, cut into halves
15 ounces nitrate-free sausage
sea salt and pepper, to your taste
1 tsp dried oregano
1 tsp smoked paprika
2 Tbsp avocado oil, or olive oil
4 fresh garlic cloves, minced or pressed
2 Tbsps raw honey
a small bunch of chopped fresh parsley, to garnish

Steps:

  • Preheat the oven to 400 degrees f.
  • Line a large sheet pan with aluminium foil or parchment paper.
  • Place all the veggies and sausage in a large bowl.
  • Pour in the oil, honey, add in garlic and seasonings.
  • Toss to evenly coat everything.
  • Arrange the veggies and sausage in a single layer on the sheet pan.
  • Bake for about 20 minutes, or until vegetables are crisp tender and sausage is browned.
  • Garnish with fresh chopped parsley and enjoy!

4 fully cooked chicken sausages (Can use beef, or pork, turkey.)
16 oz fresh green beans (trimmed)
16 oz fresh brussels sprouts
3 tbsp olive oil (extra virgin)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder

Steps:

  • Preheat oven to 425 degrees.
  • Slice sausage into circles and add in a single layer to baking sheet.
  • Chop your green beans in half and add to baking sheet.
  • Trim the bottom of each brussels sprout and peel away the first layer of leaves. That's where you usually see the dirt and any brown spots. Once this is done you'll have beautiful little bright green sprouts. Slice each sprout in half unless they're already small. Add to baking sheet.
  • Drizzle olive oil over all ingredients. Add salt, black pepper, and garlic powder to everything. Stir everything together so olive oil is evenly distributed on all ingredients. Spread in a single layer.
  • Bake for 20 to 25 minutes. Remove from oven and serve!

Steps:

  • Preheat the oven to 375 degrees.
  • Place the potatoes and onions in a large bowl. Drizzle them with 1 tablespoon of olive oil and season with the salt and pepper. Stir the mixture.

1 12 oz. package mild Italian chicken sausage ( or sausage of choice)
4 cups green beans (~ 1 lb. green beans)
4 cups cauliflower florets (~ 1 small head cauliflower)
1 large bell pepper (any color)
2 Tbsp. olive oil
2 tsp. garlic powder
2 tsp. onion powder
1/4 tsp. kosher salt
1/4 tsp. pepper

Steps:

  • Heat oven to 400 degrees Fahrenheit.
  • Start by thoroughly rinsing and drying 1 small head of cauliflower, 1 bell pepper, and 1 lb. green beans. Trip the ends of the green beans.
  • Once the green beans are trimmed, chop the beans into halves or thirds (depending on your preference). This yields roughly 4 cups of chopped green beans.
  • Break 1 small head of cauliflower into florets. Cut any larger pieces into smaller florets, making sure they are all relatively the same size to ensure even cooking. This yields roughly 4 cups of chopped cauliflower.
  • Remove the stem, seeds, and membranes from 1 bell pepper (any color). Cut the pepper into chunks.
  • Place the green beans, cauliflower, and bell peppers onto a large sheet pan (I find that either 11x17" or 12x16" works great).
  • Drizzle the vegetables with 2 tablespoon olive oil and sprinkle with 2 teaspoon each of garlic powder and onion powder. Sprinkle ¼ teaspoon kosher salt and pepper over the top. Toss the veggies in the olive oil and spices until completely coated.
  • Cut 1 12 oz. package of sausages into large chunks. Place the sausages over the top of the vegetables, being sure not to overcrowd the pan.

1 medium broccoli head (cut into florets)
2 medium bell peppers (any color, cut into 1 inch pieces)
2 cups cherry tomatoes
1 pound smoked sausage (chicken, turkey, pork, or beef sliced into ¼-inch slices)
¼ cup olive oil
1 tablespoon Italian seasoning
1 teaspoon garlic powder
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
¼ cup Parmesan cheese (grated, optional)

Steps:

  • Preheat the oven: Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
  • Combine ingredients: Prepare Place all the veggies (tomatoes excluded) and sausage on the prepared sheet pan. Drizzle the olive oil all over everything, then add the Italian seasoning, garlic powder, salt, pepper and toss everything together well. Arrange them so that they are one even layer over the baking sheet, to ensure even cooking.
  • Bake: Transfer the baking sheet to the oven and bake for 15 minutes.
  • Add tomatoes: Carefully remove the baking sheet from the oven and add the tomatoes. Flip or stir all the ingredients around. Return the baking sheet to the oven and bake for another 20 minutes or until the vegetable are crisp-tender and potatoes are fork tender.
  • Finish and serve: If desired, sprinkle with freshly grated Parmesan cheese as soon as they come out of the oven and serve over rice or quinoa.
