SMOKED OYSTER ROLL
Smoked oysters provide an easy make ahead appetizer for holiday entertaining. The roll can be refrigerated for up to two days.

Steps:
- In medium bowl (not in food processor) cream cheese with wooden spoon. Stir in mayonnaise, Worcestershire, garlic, onion, hot pepper sauce, and salt to taste. Blend well.
- Lightly oil a large piece of waxed paper and spread cheese mixture into 16 x 6 inch rectangle.
- In sieve, drain oysters and rinse with cold water. Pat dry with paper towels and chop finely. Spread on top of cheese rectangle, leaving small border all around. With spatula and using waxed paper as a guide, roll up jelly roll style as tightly as possible, staring from long side. Wrap well and refrigerate overnight.
- To serve, cut roll into 1/4 inch slices with very sharp knife. Dip knife into hot water occasionally for neater slices. Place on top of rounds of melba toast. Makes about 60 appetizers.

- Place each of the oysters onto a cracker, and then sprinkle each with the scallions and chiles. Add hot sauce, to taste.
ELECTRIC SMOKER SMOKED OYSTERS
Simple yet elegant oysters smoked in their own shells. I've never been a fan of canned oysters but they don't even compare to these. Smoking them in their own liquor plumps them up and gives them a great texture.

- Preheat an electric smoker to 225 degrees F (110 degrees C).
- Shuck oysters and add them to a bowl along with their liquor. Add salt and let marinate for 20 minutes.
- Meanwhile, wash 1/2 of the shells. Drain liquor from the oysters and place an oyster in each half shell.
- Place shells directly on the grate and smoke for 1 1/2 hours. Top each oyster with a dash of Worcestershire sauce before serving.

- In mixer bowl, combine the cheese, steak sauce, Miracle Whip, garlic and onion. Stir in oysters and 1 cup of pecans. Shape into two 9-in. logs. Roll logs in mixture of chili powder, remaining pecans and parsley.

SMOKED OYSTER CRESCENTS
I LOVE smoked oysters!!! But when you put them out for company they freak! LOL!!! (They ARE ugly lil' buggers! But so good!!) So to make them "pretty", I make them this way. Then people who do actually like them aren't given funny looks and don't shy away from them! And those who think they don't, actually give them a shot! LOL!!!) Hope you try them, too!

Steps:
- Seperate crescent dough triangles, and cut in half lengthwise with a sharp knife.
- You'll end up with 16 skinny triangles.
- Spread each thinly with approximately 1/4 teaspoons stone ground (or spicy) mustard. (Or mustard of your choice.) It doesn't need very much.
- Pour off oil, and drain oysters on paper towels to rid them of all the oil they pack them inches.
- At wide end of each, place 1-2 oysters, depending on size and how many you have, and roll up rolling towards pointed end.
- Place each, point side-down onto cookie sheet.
- In small bowl, whisk egg, add water, whisk til mixed.
- Lightly brush each with egg wash.
- Lightly sprinkle each with parmesan and a little bit of dried dill.
- Bake at 375 degrees for about 12-15 minutes, or til light golden brown.
- Can serve with lemon slices if desired.

SMOKED OYSTER CAESAR
In this recipe, smoky canned oysters complement the rich egg yolks and provide flavor for oyster cracker croutons. Other canned fish are good Caesar salad material, providing they are packed in oil, which amps up their flavor almost to a condiment level of oomph.

- In a food processor fitted with the blade attachment, or in a blender, pulse the egg yolks, lemon juice, Dijon, garlic, 2 teaspoons salt, and Worcestershire until thoroughly combined. With the machine running, add the vegetable oil very slowly to make an emulsified dressing.
- Drain the oysters from their oil, reserving 1 tablespoon of the oil for the croutons. Add the drained oysters to the dressing and pulse until smooth.
- Combine crackers, olive oil, 1 teaspoon kosher salt, and black pepper with the reserved tablespoon of oyster oil in a medium skillet over medium-high heat. Cook, tossing often, until the crackers are toasty. Set aside to cool.
- Put a spoonful of the dressing directly onto each plate. Place a romaine heart half, face up, on the dressing, and drizzle with additional dressing. Top with croutons, cracked black pepper and cheese.

- Dressing can be made up to 7 days ahead. Pour into a container and keep chilled.
