SMOKED CANDIED BACON
Steps:
- Preheat smoker to 275°F. Place a small handful of pecan wood chips in smoker firebox.
- Cover cooking pan or baking tray with aluminum foil. Place cooking rack on top of tray. Arrange bacon across rack, leaving about half an inch between each strip.
- Using a basting brush, apply maple syrup across the top side of the bacon. Sprinkle BBQ rub and brown sugar across bacon.
- Transfer baking tray to smoker and close lid. Smoke for 15 minutes, or until the sugar has started to melt. Flip bacon over and apply remainder of maple syrup, rub, and brown sugar across the surface. Close lid and smoke for a further 15 minutes.
- Remove from smoker and serve immediately
BACON CANDY
There are a lot of different ways to make bacon. The most common method is in a skillet on your stove. Some people like to cook their bacon in the oven, and sometimes people even cook bacon in the microwave (gasp!). My favorite bacon recipe uses the smoker, and we affectionately call it bacon candy. In my house, it's just about guaranteed that within ten minutes of this bacon coming off the smoker, the entire batch will be gone.

- In a large mixing bowl combine the brown sugar and maple syrup. Mix it thoroughly until you have a thick sugary paste.
- Open your pack of bacon and using a pair of tongs put each piece into your bowl, one by one. Once all of the bacon is in the bowl, toss the pieces in the mixture until all of them have a sticky coating of brown sugar and maple syrup.
- Set your smoker to cook at 225 degrees. I like using Oak Pellets, but Cherry or Apple are good for this recipe too.
- When your smoker is up to temp place each piece of bacon on the grill grate. Be sure to give each piece some good spacing. The bacon will shrink as it cooks, but it won't cook evenly if you have pieces overlapping or touching one another.
- After an hour at 225 degrees flip each piece of bacon. The fat in the bacon is slowly rendering, and by flipping the bacon it will cook a little more evenly. If you really want to get crazy, you can brush some more maple syrup on the bacon slices after you flip them.
- Check on the bacon thirty minutes after the flip to check on the progress. Some of your pieces may look like they are close to done, and if that's the case I'd recommend pulling those pieces off the smoker to taste test them. This bacon won't crisp up the same way that bacon does in a skillet, but I promise you the flavor is out of this world.
- Continue checking on the bacon every ten minutes, and when the bacon starts to take on a darker color, and it's somewhat firm when you pick it up with tongs, it's time to pull it off the smoker. Put the bacon on a rack to let it cool a few minutes, and then dig in.

- Remove rack(s) from the smoker
- Preheat your smoker to 210 degrees
- Lay out each piece of bacon on a piece of wax paper or a cookie sheet
- Drizzle maple syrup over each piece of bacon, spreading the syrup evenly on each piece of bacon, using a basting brush
- Sprinkle brown sugar over each piece, spreading evenly with the brush
- Transfer bacon to smoker racks
- Smoke for 1 -1/2 Hours

- Preheat your smoker to 275 degrees F.
- Cover a baking sheet with aluminum foil. Place a flat cooking rack on top of the baking sheet and lay the bacon down in a single layer on the rack.
- Brush the top side of the bacon with maple syrup, then sprinkle each piece with some of the brown sugar and the sweet rub.
- Place the baking sheet in the smoker and close the lid. Smoke for 12-15 minutes or until the fat has started to render, the sugar has mostly melted, and the edges have started to wrinkle.
- Flip the bacon over and brush the top with maple syrup, and sprinkle with the remaining brown sugar and sweet rub.
- Close the lid and smoke for an additional 12-15 minutes or until the bacon is cooked to your liking.
- Serve warm and enjoy!

CANDIED BACON
This is a really easy breakfast item because you can put it in the oven, set the timer and forget about it while you make everything else and pull it out just before sitting down so it's piping hot.

- Preheat the oven to 325 degrees F.
- Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
- Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!

- Preheat the oven to 300 degrees Fahrenheit.
- Mix the chili powder and brown sugar in a shallow bowl.
- Fit a sheet of parchment paper onto a jelly-roll pan.
- Bury each slice of bacon in the chili and sugar mixture; rub both sides to assure the mixture adheres.
- Lay the bacon strips on the prepared pan.
- The bacon strips may be left flat or twisted two or three times by holding each end to make a candied "stick".
- Bake for 30 minutes without turning.
- Always transfer candied bacon using tongs; the hot sugar can easily burn your fingers.
