Steps:
- Remove the pork from the fridge for 1 hour before you want to cook it, to let it come up to room temperature.
- Preheat the oven to 220°C/425°F/gas 7.
- Place the pork on a clean work surface, skin-side up. Get yourself a small sharp knife and make scores about 1cm apart through the skin into the fat, but not so deep that you cut into the meat. If the joint is tied, try not to cut through the string.
- Rub sea salt right into all the scores you've just made, pulling the skin apart a little if you need to. Brush any excess salt off the surface then turn it over. Season the underside of the meat with a few pinches of salt and black pepper.
- Place the pork, skin-side up, in a roasting tray and roast for 30 minutes, or until the skin has started to puff up and you can see it turning into crackling. At this point, turn the heat down to 170°C/325°F/gas 3, cover the pork snugly with a double layer of tin foil, pop back in the oven and roast for a further 4½ hours.
- Meanwhile, halve the onions, carrots and celery, and break the garlic up into cloves (there's no need to peel them).
- Remove the pork from the oven, take off the foil, and baste the meat with the fat in the bottom of the tray. Carefully transfer to a board, then skim all but 2 tablespoons of excess fat from the tray into a jar, and pop in the fridge for tasty cooking another day.
- Add all the veg, garlic and bay leaves to the tray and stir them into the fat. Place the pork back on top of everything and place back in the oven without the foil to roast for 1 further hour, or until meltingly soft and tender.
- Carefully move the meat to a serving dish, cover again with tin foil and leave to rest while you make the gravy. Spoon away any fat in the tray, then add the stock (or replace with water, if you prefer) and place the tray on the hob.
- Bring to the boil and simmer for a few minutes, stirring constantly with a wooden spoon to scrape up all those lovely sticky tasty bits from the bottom of the tray.
- When you've got a nice, dark gravy, pour it through a sieve into jug using your spoon to really push all the goodness of the veg through the sieve. Season to taste, if needed.
- Serve the pork and crackling with the jug of gravy and all the trimmings - a dollop of apple sauce will finish this off perfectly.

- Preheat oven to 475 degrees.
- Foil line the roasting pan. Place rack in a pan.
- Trim fat from pork loin keeping a thin layer. Cut the loin in half so it would be 1/2 the length. Rinse and dry with paper towels.
- Mix all the oil rub ingredients together.
- Lay fat side down and rub some oil rub on the inside, then arrange the roasted garlic on one half. Top with the other half of loin keeping fat side out.
- Secure with string or silicone bands in 4 spots to hold together.
- Rub remaining seasoned oil over all the roast. Place roast on rack fat side up. Roast uncovered for 10 minute then lower temperature to 250 degrees and roast till internal temperature is 150 to 155. About 3-4 hours. Remove, tent with foil and let rest 20 minutes.
- It will continue to cook. Slice thin.

- Place olive oil, balsamic vinegar, garlic, brown sugar, thyme, dry mustard, and paprika into a food processor and blend. Pour marinade into a zip-top bag, add pork tenderloin, and marinate in the refrigerator for 24 hours.

- Pat dry pork with paper towel. Combine 1 tablespoon of oil with rub ingredients. Season pork, rubbing the mixture into the meat.
- Heat remaining oil (about 2 teaspoons) in a large pan or skillet over medium heat. Sear pork all over until golden browned, rotating the pork around to avoid spices burning.
- Melt butter in the same pan the pork was in while scraping up any leftover bits in the pan. Add garlic and sauté for 1 minute until fragrant. Stir in remaining sauce ingredients; bring to a rapid simmer for 1 minute.
- Place seared pork in a 6-qt (litre) slow cooker. Pour sauce over pork; cover with lid and cook on LOW heat setting for 4 - 5 hours.
- Transfer pork onto serving dish and tent loosely with foil. Let rest for 10-15 minutes.
- While pork is resting: pour juices from the slow cooker bowl into a pot large enough to fit the liquid. Bring to a simmer over medium-high heat.
- Mix 2 tablespoons of the juices with 4 teaspoons of cornstarch (cornflour). Whisk cornstach slurry into sauce and let simmer for a good 5 minutes, or until thickend into a syrup-like consistency. (For a thicker sauce, repeat this step with 1 teaspoon cornstarch mixed with 2 teaspoons water. Add into sauce and cook until thickened (please note: sauce will thicken as it cools). Continue this step until reaching your desired consistency.)
- Slice pork and serve drizzled with Honey Garlic Butter Sauce.
- Preheat oven to 350°F (175°C).
- Place seared/browned seasoned pork in a roasting pan.
- Prepare sauce, as above. Reserve 1/2 cup sauce for basting. Pour remaining sauce over pork.
- Add in 1/2 cup stock and 1/2 cup water around the pork.
- Cover and roast for 20 minutes. Baste with half of the reserved sauce and continue roasting, uncovered, for a further 15 minutes. Baste again and roast for a further 10-15 minutes, until a meat thermometer registers 145°F (62.5°C) in the thickest part(If pan dries out while cooking (it shouldn't), add a little more water.)
- Transfer pork onto serving plate and baste with pan juices. Tent loosely with foil and let rest for 10-15 minutes..
- Scrape up any browned bits leftover in the pan, mixing them through the pan juices and pour juices into a pot. Whisk in cornstarch/stock and water mixture and bring to a simmer. Slowly add in 1/4 cup water, whisk, then add a nother 1/4 cup if needed, until reaching a honey-like consistency. (Please note: sauce will thicken as it cools).
- Slice pork and drizzle with Honey Garlic Butter Sauce.

- Adjust oven rack to upper-middle position and heat oven to 250 degrees. Heat oil in a small skillet over medium-low heat. Add whole garlic cloves and cook, stirring occasionally, until soft and golden, about 5 minutes. Remove with a slotted spoon; reserve oil.
- Turn pork loin fat-side down. Slit lengthwise, almost but not quite all the way through, to form a long pocket, leaving a 1/2-inch border of unslit meat at each end. Brush cavity with some of the reserved garlic cooking oil, and sprinkle generously with salt and pepper and 1 Tb. of the rosemary. Line cavity with sauteed garlic and apricots; sprinkle in cranberries. Tie loin together with kitchen twine or heavy-duty string at 1 1/2-inch intervals.

SLOW ROAST PORK

- First make the spice rub. Grind the bay leaves, fennel, peppercorns and salt with a mortar and pestle to a fine powder. Mix in the lemon zest. Then rub the mixture over the pork, being sure to get it inside the scored skin. Set the pork aside for an hour to come to room temperature and take on the flavours of the rub. Heat the oven to 240°C/220°C fan/gas 9. Mix the carrots, onions, celery and garlic and spread over the base of a medium roasting tin. Place the pork on top, skin side up. Pour around the wine and stock and cover with a large tent of foil. Make sure the foil doesn't touch the pork, and seal it really well around the rim. Roast until the liquid starts to steam and show signs of simmering, around 30-45 minutes (check by lifting up a corner of the foil and taking a peek). Reduce the temperature to 190°C/170°C fan/gas 5 and continue roasting, with the foil still in place, until the meat is meltingly tender. This will take 2-2 and a half hours - maybe even 3. Remove the pork to a board and pour all the juices and vegetables into a big sieve set over a pan or bowl. Squish the soft vegetables against the sieve to encourage as much juice and vegetable pulp through as possible until nothing more will come out, then discard the pulp. Heat the grill and position a rack below to accommodate the pork around 8cm below the element. Return the pork to the roasting tin and pour the sauce around the meat. Grill until the skin has crackled to your liking. Keep an eye on it, as a fierce grill can burn it easily. While the skin is crackling the sauce should be bubbling and reducing slightly. If you don't have a grill (as I don't in my Aga), you can opt to cut off the crackling and put it back into a very hot oven to crisp up. In this case reduce the sauce in a small pan. Wrap the joint well in foil and keep covered with a blanket to keep warm. Some juices will have seeped out of the joint while resting, so pour them back into the sauce - so as not to waste the flavour. Use a knife to cut away and divide the crackling, then chop the pork up roughly and serve with pickled quince, mash and greens, making sure everyone gets plenty of sauce.

- Preheat the oven to 140c/275ºF / Gas mark 1.Season the pork all over with salt, pepper and thyme. In a large, heavy-duty casserole that will hold the pork snugly, heat the oil over a moderate heat, until hot but not smoking. Add the pork and sear well on all sides, about 10 minutes.Transfer the pork to a platter and drain fat into a bowl to store for roasting potatoes. Wipe the casserole clean with a kitchen towel. Return the pork to a casserole, bone side down. Set aside.In a large, heavy-duty frying pan, combine the butter, carrots , onions ,garlic, celery and season with salt. Sweat cook, covered, over a low heat without colouring until the vegetables are soft and cooked through-about 10 minutes.Spoon the vegetables around and on top of the pork. SLOW-ROASTED PORK WITH CITRUS AND GARLIC

- Pulse the garlic, oregano, thyme, coriander and cumin seeds, bay leaves, 2 tablespoons salt and 1 teaspoon pepper in a food processor to make a thick paste. Trim off all but a thin layer of fat from the pork, then make deep slits all over the roast (about every 2 inches) with a paring knife. Rub the spice paste over the pork and into the slits.
- Mix the citrus juices, Worcestershire sauce and olive oil in a large glass bowl. Submerge the pork in the marinade and top with the onions and reserved orange and lemon peels. Cover with plastic wrap and refrigerate at least 8 hours or up to 2 days. Bring to room temperature 1 hour before roasting.
- Preheat the oven to 450. Remove the citrus peels from the bowl and refrigerate. Place the pork on a rack in a large roasting pan (reserve the marinade and onions); roast, uncovered, about 1 hour. Add the marinade to the pan and pile the onions on top of the meat. Cover with foil, lower the oven temperature to 350 and roast 2 more hours. Uncover, place the citrus peels around the pork and continue to roast, basting occasionally, until the meat browns and a thermometer inserted into the bottom half registers 190, 1 hour 30 minutes to 2 hours.
- Transfer the pork to a cutting board and let rest 10 minutes. Meanwhile, skim any excess fat from the pan juices. Slice the pork and serve with the onion and pan juices. Garnish with citrus peels.

- Preheat the oven to 220C/200C Fan/Gas 7.
- Rub 2 tablespoons of salt over the skin of the pork. Put the onions, garlic, bay leaves, sage and stock into a deep roasting tin. Sit the joint on top, skin-side up. Cover the roasting tin with foil and seal the edges tightly. Roast for about 40 minutes.
- Reduce the oven temperature to 150C/130C Fan/Gas 2 and cook for 2½-3 hours, or until the meat is completely tender and falling off the bone.

Cover the pork with foil and keep warm. Slide the baking sheet into the oven and cook the skin for 5-10 minutes, or until it is crisp and deep golden brown.
- Meanwhile, melt the butter in a saucepan. Add the flour and stir over the heat for a few seconds to make a roux. Whisk in the reserved hot stock over a medium-high heat, whisking until the sauce is thick and smooth.
- Pull the pork off the bone and arrange next to the onions on the serving platter. Snip the crackling into pieces and add to the platter. Serve with the hot gravy in a jug.
ROAST PORK LOIN WITH GARLIC AND ROSEMARY

- Preheat oven to 400°F. Line 13 x 9 x 2-inch roasting pan with foil. Mix first 4 ingredients in bowl. Rub garlic mixture all over pork. Place pork, fat side down, in prepared roasting pan. Roast pork 30 minutes. Turn roast fat side up. Roast until thermometer inserted into center of pork registers 155°F., about 25 minutes longer. Remove from oven; let stand 10 minutes.
- Pour any juices from roasting pan into small saucepan; set over low heat to keep warm. Cut pork crosswise into 1/3-inch-thick slices. Arrange pork slices on platter. Pour pan juices over. Garnish with rosemary sprigs, if desired.

- In a sauce pan bring 2 cups of water to the boil. Add the salt and sugar, stirring to dissolve. Add the spices and boil for 3 minutes. Remove from heat and add 4 cups of cold water. Allow to come to room temperature. Place pork loin in a container large enough to accommodate with brining liquid (See Note 1). Seal and refrigerate fro at least 8 hours.
- Cook broccoli rabe in heavily salted boiling water for 3 minutes. Plunge into an ice bath for 1 minute. Drain well. Wrap broccoli rabe in paper towels and squeeze dry. Chop rabe into 1 1/2-inch pieces.
- Place in bowl with 1 tablespoon oil, 1/4 teaspoon salt, pepper, and garlic; stir well (See Note 2).
- Preheat oven to 375°F. To butterfly the pork loin: Use a sharpened knife. Cut down but not through on one long side of the pork loin, about 3/4" from edge and down through to 3/4". Now with knife parallel to cutting board, continue slicing lengthwise, rolling loin in other hand like you're unrolling a scroll.

- Peel and quarter the onions. Cut celery ribs in fours as well. Cut 3 garlic cloves in half, length-wise. Place veggies in the middle of the roasting pan in one single layer, about the same size as the pork loin.
- Using a small knife, pierce holes in meat in several places over the top. Make holes that are about 1-inch deep. Push garlic into each hole. If garlic cloves are too big, cut them in half length-wise.
