This is a very delicious version of Italian beef using turkey. Serve on hard rolls or French bread with onion slices or pepperoncini.

4 beef bouillon cubes
1 quart water, or as needed
1 skinless, boneless turkey breast half
¼ cup white vinegar
1 medium onion, chopped
1 green bell pepper, seeded and cut into strips
2 cloves garlic, minced
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 (.75 ounce) packet brown gravy mix
½ cup water

Steps:

  • Dissolve the beef bouillon cubes in 1 quart water, and pour into a slow cooker. Place turkey in slow cooker, adding more water to cover if needed.
  • Cover, and cook 8 to 10 hours on Low. Two hours before end of cook time, mix the vinegar, onion, green bell pepper, garlic, oregano, and Worcestershire sauce into slow cooker.
  • Blend the brown gravy mix and water in a small bowl, and stir into the slow cooker, continue cooking 20 minutes.

2 medium stalks celery, sliced (1 cup)
1 small red bell pepper, chopped (1/2 cup)
1/2 teaspoon dried basil leaves
1/3 cup water
4 turkey thighs (8 to 12 oz each), skin removed
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup uncooked regular long-grain rice
1 teaspoon dried oregano leaves
1/2 cup shredded Italian-style six-cheese blend or mozzarella cheese (2 oz)

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix carrots, celery, bell pepper, basil and water. Sprinkle turkey with salt and pepper; place on vegetable mixture.
  • Cover and cook on Low heat setting 6 to 7 hours.
  • Remove turkey from cooker. Stir rice and oregano into vegetable mixture; return turkey to cooker. Cover and cook on Low heat setting about 1 hour or until rice is tender.
  • Remove turkey from cooker. Stir cheese into rice mixture until melted. Serve with turkey.

2 cups frozen mixed vegetables (or peas and carrots)

1 (20 7/8 ounce) package ground turkey
1 medium onion, chopped
1 small green pepper, finely chopped
1 egg, lightly beaten
2 garlic cloves, chopped
1 (8 ounce) can tomato sauce, divided
1/2 cup seasoned bread crumbs
1/3 cup grated parmesan cheese, plus (divided)
2 tablespoons grated parmesan cheese, divided
2 teaspoons italian seasoning, divided
1/2 teaspoon garlic salt
1/4 teaspoon black pepper

Steps:

  • Press a 24-inch long piece of nonstick aluminum foil into an oval slow cooker bowl, with nonstick side facing up, so that it is flush with bowl and ends hang out over sides.
  • In a large bowl, gently stir together turkey, onion, green pepper, egg, garlic, 1/2 cup tomato sauce, bread crumbs, 1/3 cup cheese, 1 teaspoon Italian seasoning, garlic salt and black pepper. Place meatloaf mixture in slow cooker and form into a 9 x 5-inch log. Cover and cook on HIGH 2-1/2 hours or on LOW 4-1/2 hours or until internal temperature registers 160° on an instant read thermometer.
  • About 30 minutes before cooking is complete, place remaining 1/4 cup tomato sauce in a small bowl and stir in remaining 2 tablespoons Parmean cheese and 1 teaspoon Italian seasoning. Pour tomato sauce mixture over meatloaf; cover and continue to cook another 30 minutes.
  • Carefully lift meatloaf out of slow cooker using foil cradle and place on a cutting board. Using two long offset spatulas, carefully lift meatloaf off of foil and place on serving dish. Discard foil and any liquid and serve immediately.

2 leeks (cleaned and finely chopped)
2 carrots (peeled and diced)
2 stalks celery (diced)
2 cloves garlic (minced)
1 tablespoon tarragon (dried)
1 teaspoon each salt and cracked black peppercorns
1/4 cup all-purpose flour
1/2 cup dry white wine ((or see Tips below))
2 cups chicken stock
8 ounces mushrooms (trimmed and quartered)
4 cups skinless boneless turkey (or chicken breast (about 2 lbs))
2 cups green peas
1/2 cup whipping cream (35% )
3/4 cup whole wheat flour
3/4 cup all-purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
3/4 cup buttermilk
2 tablespoons olive oil

Steps:

  • In a skillet, heat oil over medium heat. Add leeks, carrots and celery and cook, stirring, until softened, about 5 minutes. Add garlic, tarragon, salt and peppercorns and cook, stirring, for 1 minute. Add flour and cook, stirring, for 1 minute. Add wine and stock and cook, stirring, until mixture comes to a boil and thickens, about 5 minutes.
  • Place mushrooms and turkey in stoneware of a large (approximately 5 quart) slow cooker and add leek mixture. Stir well. Cover and cook on Low for 3 1/2 hours or on High for 1 3/4 hours. Stir in peas and whipping cream.
