HONEY SOY GRILLED SALMON WITH EDAMAME
The natural richness of salmon and it's high amount of Omega-3's makes it a great choice for a healthy meal that doesn't need much added fat. By stuffing a mixture of fresh herbs into the fillets, through a pocket, the fish is infused with bright flavors. A light glaze during the cooking process is the final touch.

- Preheat the grill over medium-high direct heat. Oil the grill grates. Finely chop the cilantro and scallion and mix in the oil and ginger. Season with salt and pepper.
- Cut two 3-inch long slits through the skin lengthwise on the bottom of the salmon fillets, going about halfway into the salmon. Evenly stuff the slits with the herb mixture. Season the fish with salt and pepper.
- Stir together the lime juice, soy and honey until smooth. Place the salmon, skin side up, on the grill and cook until well marked, 3 to 4 minutes. Turn the salmon and continue to cook, brushing the tops with the sauce, until the fish is cooked through, about another 3 to 4 minutes. Transfer to a serving plate and sprinkle the tops with the sesame seeds. Serve with edamame and lime wedges.
- Broiler directions: Position an oven rack so that a baking sheet set on the rack is about 4-inches below the heat source. Preheat the broiler. Prepare the salmon as above and place the fillets, skin down, on a foil lined baking sheet coated with cooking spray. Broil, basting 3 to 4 times with the sauce, until just cooked through, about 6 to 7 minutes.

- Cook pasta in boiling water 5 minutes. Add edamame; cook 6 minutes or until tender. Drain and rinse with cold water.
- Drain and place in a large bowl.
- Heat a nonstick skillet coated with cooking spray over medium-high heat.
- Add salmon; cook 7 minutes or until fish flakes easily when tested with a fork, turning once. Coarsely chop salmon. Add to pasta mixture; toss gently to combine.
- Heat oil in pan over medium-high heat. Add onion; sauté 4 minutes or until tender.
- Add spinach; cook 2 minutes or just until wilted, stirring frequently. Add spinach mixture and dill to pasta mixture; toss gently to combine. Add mustard, salt, and pepper; toss gently to coat.

CREAMY SALMON PASTA

- You can either steam or roast the salmon, depending if you want to turn the oven on or not. To roast, heat the oven to 200C/180C fan/gas 6, place on a baking tray, drizzle with oil and roast for 12 mins until opaque and the flesh starts to flake when pressed. To steam, place the fillets skin-side down in a steamer, and steam over a pan of simmering water for 8-10 mins until cooked.
- While the salmon is cooking, boil the pasta for 10 mins until al dente, then drain, reserving 100ml of the pasta water.
- Heat the oil on a medium heat in a wide frying pan and fry the shallot for 6 mins until softened, but not turning golden. Add the garlic and fry for a minute more until fragrant. Add the wine, bubble for a few minutes until reduced by half, then add the cream and season well. Bring to a very gentle simmer.
- Flake the cooked salmon into big chunky pieces, leaving the skin behind. Add to the sauce with the cooked pasta. Add the lemon zest, a squeeze of the juice and most of the dill. Add a splash of the pasta water to the sauce to coat the pasta if you need to. Toss gently to keep the salmon in big pieces. Check the seasoning, if using double cream you may need a squeeze more lemon juice. Grind over some black pepper and scatter over the remaining dill. Serve with a green salad.

Steps:
- Cut scallops in half or quarters depending on size.
- Beat egg with water in bowl large enough to hold scallops.
- Add scallops and stir to coat.
- Drain off excess egg.
- In a food storage bag mix flour, paprika, pepper and salt.
- Add drained scallops to bag and shake to coat.
- Heat a large frying pan over medium/low heat.
- When hot, remove scallops from bag throwing away excess flour mixture and add scallops to hot pan that has been sprayed with olive oil cooking spray.
- Cook scallops for about 5 minutes.
- Remove scallops and put aside.
- Meanwhile put pasta on to boil.
- While pasta is cooking, mix together broth, garlic, vinegar and soy sauce.
- Pour into the same pan that you cooked the scallops inches.
- Bring to a boil and add mushrooms and edamame.
- Cook for 5 minutes.
- Add scallops and cook for 5 to 7 minutes more.
- When pasta is done, drain and add to frying pan with other ingredients.
- Stir to mix in pasta and serve.

EDAMAME, SALMON, AND PASTA SALAD
Steps:
- In a large saucepan, bring the water to a boil over high heat. Add the pasta. Return to a boil and boil for 4 minutes. Stir in the edamame. Boil for 3 to 4 minutes, or until the pasta is just tender. Drain well in a colander.
- Meanwhile, in a large bowl, stir together the salmon, celery, onion, bell pepper, and tomatoes.
- Stir the pasta mixture into the salmon mixture.
- In a small bowl, whisk together the remaining ingredients except the lettuce. Pour over the salad, tossing to coat.
- Place 2 lettuce leaves on each plate. Spoon the salad onto the lettuce.
