MARTHA STEWART COCA COLA HAM (ADAPTED FOR LAZY PEOPLE)
While watching Martha and her friend Jane prepare this ham for Easter a few years ago, I adapted the recipe slightly and now just eyeball the ingredients and make it with whatever I have on hand. I made it for a potluck with Dr. Pepper, forgot to baste it, dumped cloves randomly in it, and it still turned out great. Mostly foolproof, which is good for foolish college students and klutzy cooks alike. I am posting this mostly for my own reference, so I don't have to go hunting for a handwritten note every time I make this. I'm guessing at the yield, but it was enough to serve several (5-6) at a small potluck. I serve it throughout the year for special occasions, not just Easter. Steps 1-11 are for the regular way; Steps 12-18 are for the lazy adaptation of this recipe.

Steps:
- Preheat oven to 325.
- Score the ham crosswise and lengthwise, forming a crosshatch/square-cut patter about 1/4 inches deep and 1 inch apart. Place a clove in the intersection of each square.
- Place ham in an aluminum roasting pan that you have placed on a baking/cookie sheet (for stability).
- Load the ham with sugar. Use the whole pack and just glom it on. Some sugar will fall off, but keep on packing.
- Bake until sugar just begins to melt (20-30 min).
- Remove ham, pour Coca-Cola all over the ham, and baste the ham with the sugar mixture in the bottom of the pan.
- Bake for another 20 minutes.
- Combine 1 cup of pineapple juice and wine, and baste the ham.
- Bake the ham for about 15 minutes per pound, basting every 20 minutes with the juices.
- During the last 20 minutes, decorate ham with pineapple rings. Use toothpicks to hold the rings in place, and put a cherry in the center of each ring with a toothpick.
- Prior to serving, remove all toothpicks.
- The extremely lazy way:.
- Pack the brown sugar on the ham.
- Pour the Coke and Wine mixture liberally on the ham.
- Forget about the pineapples and cherries, unless you really want pineapple, in which case, stick them randomly on the ham.
- Stuff it in the oven and baste every 20 minutes.
- Cover with aluminium foil after the first basting.
- Use a meat thermometer to tell when it's done, and serve.

Steps:
- For the ham:
- Peel and cut 1 onion in half. To a large pot or Dutch oven, place ham, the onion and pour over top, the 2 liter bottle of coca-cola. On a medium-high heat, allow to cola to come to a boil. Reduce heat to medium-low and cover, not tightly with lid, and allow to cook for 2 1/2 hours. It is 1 hour for every 2 pounds.
- Preheat oven to 500 degrees F.
- Pull the ham from the pot, and allow to rest on a cutting board reserving the cooking liquid. Using a sharp knife, trim the skin, leaving a thin layer of fat on the ham. Using the knife, score the fat diagonally into large diamond cut.. In each diamond pierce the fat with 1 clove. Spread the molasses over the meat. Gently pat the powdered mustard and sugar around the meat, so it sticks to the molasses. Line a roasting pan with aluminum foil. Gently place the ham in the roasting pan. Cook the ham for about 10 minutes or until glaze is burnished and bubbly.
- For braising the ham in advance and then letting the ham cool, take ham from the refrigerator, glaze it according to the recipe, and give it 30 to 40 minutes to sit at room temperature. Place in a 350 degree F oven for 30 to 40 minutes, then turning up the heat if you think it needs a more crispy exterior.

- If you know that you’re dealing with a salty ham, put it in a pan covered with cold water, bring to the boil, then tip into a colander in the sink and start from here; otherwise, put the ham in a pan, skin-side down if it fits like that, add the onion, then pour over the Coke. Bring to the boil, reduce to a good simmer, put the lid on, though not tightly, and cook for just under 2½ hours. If your joint is larger or smaller, work out timing by reckoning on an hour for every 2 pounds, remembering that it’s going to get a quick blast in the oven later. But do take into account that if the ham’s been in the refrigerator right up to the moment you cook it, you will have to give it a good 15 minutes or so extra so that the interior is properly cooked.
- When the ham’s had its time, take it out of the pan (but do not throw away the cooking liquid) and let cool a little for ease of handling. (Indeed, you can let it cool completely then finish off the cooking at some later stage if you want.) Then remove the skin, leaving a thin layer of fat. Score the fat with a sharp knife to make fairly large diamond shapes, and stud each diamond with a clove. Then carefully spread the molasses over the bark-budded skin, taking care not to dislodge the cloves. Gently pat the mustard and sugar onto the sticky fat. Cook in a foil-lined roasting pan for approximately 10 minutes or until the glaze is burnished and bubbly.
- Should you want to do the braising stage in advance and then let the ham cool, clove and glaze it and give it 30–40 minutes, from room temperature, at 350°F, turning up the heat toward the end if you think it needs it.

- Add gammon to slow cooker and pour over cola until just about covered, saving 1/4cup/60ml. Top up with water if needed. Add in onion, carrot, star anise, cinnamon and peppercorns. Place on the lid and cook on high for 4 hours.
- Meanwhile, in a small pot over low-medium heat combine sugar, mustard, honey and leftover cola. Simmer for 5mins until the sugar dissolves and it starts to thicken, stirring frequently. It will continue to thicken as it rests.
- Remove ham from slow cooker and place on a wire rack above a tray or plate (to catch juices). Make sure it's fat side up. Once cool enough to handle, score the fat in a criss-cross style to create large diamonds. Be careful not to slice into the ham. Stud a clove at the tip of each diamond.
- Place ham on a foiled baking tray. Scrunch up some foil to prop the ham up so it doesn't fall over if you need to. Brush around 2/3 of your glaze all over the ham.

- Mild-cure gammon doesn’t need soaking. If you know that you’re dealing with a salty piece, then put it in a pan covered with cold water, bring to the boil then tip into a colander in the sink and start from here; otherwise, put the gammon in a pan, skin side down if it fits like that, add the onion then pour over the Coke. Bring to the boil, reduce to a good simmer, put the lid on, though not tightly, and cook for just under 2 1/2 hours. If your joint is larger or smaller work out timing by reckoning on an hour a kilo altogether, remembering that it’s going to get a quick blast in the oven later. But do take into account that if the gammon’s been in the fridge right up to the moment you cook it, you will have to give a good 15 or so minutes’ extra so that the interior is properly cooked. Meanwhile preheat oven to 240°C (fan 220°C/464°F/gas 9).
- When the ham’s had its time (and ham it is now it’s cooked, though it’s true Americans call it ham from its uncooked state) take it out of the pan and let cool a little for ease of handling. (Indeed you can let it cool completely then finish off the cooking at some later stage if you want).
- Then remove skin, leaving a thin layer of fat. Score the fat with a sharp knife to make fairly large diamond shapes, and stud each diamond with a clove. Then carefully spread the treacle over the bark-budded skin taking care not to dislodge the cloves. Then gently pat the mustard and sugar onto the sticky fat. Cook in a foil lined roasting tin for approximately 10 minutes or till the glaze is burnished and bubbly.
- Should you want to do the braising stage in advance and then let the ham cool, clove and glaze it and give it 30-40 minutes, from room temperature, at 180°C (fan 160°C/350°F/gas 4), turning up the heat towards the end if you think it needs it.

- Coca-Cola Balsamic Dressing. Some cola with your salad? Sure thing! This next recipe from Coca-Cola strikes the perfect harmony between indulgence and health with a plethora of fresh vegetables including beets, beans, and cherry tomatoes all beautifully dressed up with a tangy cola-balsamic vinaigrette dressing.
- Coca-Cola Sheet Cake. Who can resist a sheet cake? Better question: who can resist the ease of MAKING a sheet cake? Simply put, I cannot, and with this recipe, you’ll find yourself equally inspired to get back into the kitchen for some baking to ring in the Spring Season!
- Chocolate Chip N' Cola Cookies. Chocolate chip n' cola cookies put a new spin on our traditional sweet-tooth cravings. As a replacement for sugar, it works wonderfully by adding a lightened consistency from the carbonation (think of the same effect soda water has on a batter) and a delicious, distinct sweetness that's unique from brown sugar or confectioners.
- Cola Beef Brisket. Brisket is one of those dishes that is, on the surface, an intimidating cut of beef to work with, especially for beginners. As a motley assemblage of muscle and fat cut from the chest of the animal, brisket needs the tenderizing factors of low heat and time, and this method from Recipe Lion takes the methodology seriously—25 hours, serious!
- Chocolate Ganache Toast with Cola Syrup. With a sprinkle of green perfect for St Patrick’s day, this is the breakfast of champions to keep you going all day (and night thanks to all that sugar!).
- Virginia Peanut Pie with Coke Reduction. Close to the HQ of Coca-Cola in Atlanta, Georgia, a new spin was put on an old classic in the kitchen of a favorite locals' dive, JCT’s Kitchen.
- Coca-Cola Beef Tacos. These days, street eats and food trucks are all the rage, and the taco is the veritable king of all street foods. Conceived in the heydays of the food truck revolution, the new beef taco incorporates the heartiness of slow-cooked pulled beef with a tangy-sweet base and a variety of freshly pickled vegetables as accoutrements.
- Cola Carrot Cake. When Easter comes rolling around the corner, it's hard to resist the urge to bake up the Easter Bunny’s favorite sweet treat, and this new spin involving Coca-Cola brings the temptation to irresistible heights!
- Cherry Coke BBQ Burgers. If you’re like me, grilling season is all year round. Whether the sun is shining outside in 30-degree heat or a Canadian blizzard is raging outside, I never make the compromise of cooking burgers on the stovetop, and neither should you!
- Coca-Cola Soft Serve Ice Cream. This one from The Kitchn inarguably takes top prize for creativity and effort required—and also an ice cream machine, which means we're entering true foodie territory!
