April's Spicy Chickpea Soup with Kale image

My friend April made this soup for me one afternoon when visiting. I loved it so much, I asked her how she made it and now make it often for myself. It's easy, wholesome, and can be adjusted to personal tastes easily. Enjoy!

1 tablespoon olive oil
2 teaspoons cumin seeds
½ teaspoon red pepper flakes
1 medium onion, minced
1 large carrot, peeled and diced
2 stalks celery, diced
3 cloves garlic, minced
4 cups chicken broth
1 (15 ounce) can chickpeas - rinsed, drained, and lightly smashed
1 small bunch kale, chopped
salt and ground black pepper to taste
½ cup finely chopped fresh parsley
1 tablespoon freshly grated Parmesan cheese, or to taste

Steps:

  • Heat olive oil over medium heat in a medium-sized pot until warm. Add cumin seeds and red pepper flakes; cook and stir until fragrant, about 30 seconds. Add onion, carrot, celery, and garlic; cook and stir until onion is softened and translucent, about 5 minutes. Stir in chicken broth, chickpeas, and kale.
  • Bring soup to a simmer and cook until kale is tender, 10 to 15 minutes. Season with salt and pepper; stir in parsley. Remove from heat; top with Parmesan cheese.

2 large or 4 small sweet potatoes (peeled and chopped into 1-inch pieces)
1 bunch Lacinato kale (stems removed and thinly sliced (2 packed cups))
1 pound boneless (skinless chicken breasts or thighs)
2 32-oz boxes low-sodium chicken stock
2-3 teaspoons kosher salt
2 teaspoons Italian seasoning
Extra virgin olive oil (to serve)

Steps:

  • Place all the ingredients in a 6-qt slow cooker, stirring to combine. Cover and cook on high for 4 hours or low for 6, or until the sweet potatoes are tender and the chicken is cooked through and very tender.
  • Remove the chicken and shred with two forks. Return to the slow cooker and stir to combine. Taste and add additional salt to taste. Serve hot with a generous drizzle of olive oil.

Slow Cooker Chicken and Chickpea Stew is a hearty meal in a bowl, full of chicken, chickpeas, veggies, and subtle Moroccan flavors.

1 medium onion (finely chopped)
3 garlic cloves (minced)
2 large carrots (chopped (about 1 cup))
2 15- oz cans chickpeas (rinsed and drained)
1 14.5- oz can petite diced tomatoes
2 tablespoons lemon juice (divided)
1 quart 32 oz chicken or vegetable stock
1-3 teaspoons salt
1 teaspoon cumin
½ teaspoon cinnamon
3 pounds boneless (skinless chicken breasts or thighs, trimmed)
½ cup chopped dried apricots
4 cups baby spinach
Green onion (chopped)
Cilantro (chopped)
Hot sauce

Steps:

  • Combine the onion, garlic, carrots, chickpeas, tomatoes, 1 tablespoon lemon juice, chicken stock, salt, cumin, cinnamon, and chicken in a 6-quart slow cooker.
  • Cover and cook on high for 4-6 hours or low for 6-8 hours, or until the chicken is tender.
  • Remove the chicken from the slow cooker and shred with two forks. Add the shredded chicken, along with 1 tablespoon lemon juice, the spinach, and the chopped apricots back to the slow cooker, stirring to combine. Taste and add additional salt and lemon juice to taste. Let sit 5 minutes to allow the spinach to wilt and the apricots to soften.
  • Serve hot, with rice, crusty bread, or on its own. Top with green onion, cilantro, and hot sauce, if desired.

2 yellow onions, diced
1 large carrot, chopped
2 stalks celery, chopped
1 tbsp Italian seasoning
4 cups chicken broth
1 (796mL) jar crushed/strained tomatoes (passata)
1 can chickpeas, drained and rinsed
1 red pepper, diced
2 cups kale, chopped
1 lb ground turkey (or use 4 turkey sausages instead of making your own, casings removed)
1 tbsp fennel
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper

Steps:

  • If using storebought sausages, remove casings and break up meat. If making your own, mix together sausage ingredients and break up. Add to slow cooker, along with rest of ingredients except for red pepper and kale.
  • Cook on high for 6 hours or low for 8 hours. When ready to serve, stir in red pepper and kale, then let sit for 3-4 minutes. Serve and enjoy!

1 onion, roughly chopped
4 cloves garlic, peeled and roughly chopped
1 tablespoon peanut oil
2 chicken leg quarters, skin removed
1 15 oz can garbanzo beans, drained and rinsed
3 cups kale, washed, roughly chopped with stems
1.5 lbs of small, white potatoes (diameter of no more than 1.5 inches)
3/4 lb carrots, peeled and chopped into medium chunks (no more than 1/2 inch thick x 1 inch long)
1 tbs freshly ground pepper
1/2 tbs dried tarragon
4 cups chicken broth (I used "Better than Boullion")

Steps:

  • Heat oil on medium-high heat in a saute pan. Cook onions until translucent but still firm. Add garlic and cook for 30 seconds, remove from heat and set aside. While onions are cooking, prepare other vegetables. Place onions and garlic in bottom of slow cooker. Add all other ingredients. Use a spoon to redistribute so that potatoes are all covered with broth. It's fine if chicken or other vegetables are not submerged since they will cook down. Put slow cooker on high heat for 1.5-2 hours, then switch to low heat for 2 hours (alternatively, leave on low heat for 5-6 hours). Once chicken appears done and tender, use two forks to shred meat from the bone. Once potatoes are tender, soup is ready. Serve with crusty bread or egg noodles.
