6 cups uncooked egg noodles (about 12 ounces)
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup sour cream
3/4 cup 2% milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 cups cubed cooked chicken breasts
1 cup crushed Ritz crackers (about 20 crackers)
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions for al dente; drain., In a large bowl, whisk soup, sour cream, milk, salt and pepper until blended. Stir in chicken and noodles. Transfer to a greased 13x9-in. baking dish. In a small bowl, mix crushed crackers and butter; sprinkle over top. Bake until bubbly, 30-35 minutes.

My whole family, full of picky eaters, loves this dish, and it's great for freezing and reheating on a cold day or for an easy dinner on cold nights. This dish comes out as more like a stew than a meat with a sauce. Serve over egg noodles or hot cooked rice. Goes great with fresh, crusty pumpernickel bread for hearty winter meal. Easy to make and can be kept on low heat on the stove for lengthy parties.

⅓ cup all-purpose flour
2 tablespoons paprika
1 teaspoon salt
1 pinch ground black pepper
6 skinless, boneless chicken breast halves, cut into bite-size pieces
2 tablespoons vegetable oil
1 onion, chopped
4 cloves garlic, minced
1 cup chicken stock
2 tablespoons tomato paste
1 ½ cups sour cream
1 tablespoon paprika
1 teaspoon cornstarch

Steps:

  • Mix flour, 2 tablespoons paprika, salt, and pepper on a shallow plate. Dip chicken pieces in mixture to coat.
  • Heat vegetable oil in a heavy skillet over medium heat. Cook and stir chicken in hot oil until browned completely, about 5 minutes. Remove chicken with a slotted spoon to a bowl, reserving oil and drippings in skillet.
  • Cook and stir onion and garlic in the reserved drippings until tender, about 5 minutes. Return chicken to the skillet. Pour chicken stock over the chicken mixture. Stir tomato paste into the chicken stock until integrated completely.
  • Bring the chicken stock to a boil, reduce heat to medium-low, place a cover on the skillet, and cook at a simmer until the chicken is cooked through, 5 to 8 minutes.

6 boneless skinless chicken thighs, cut into 1-inch pieces (about 1 1/2 lb)
1 1/4 teaspoons salt
1/2 teaspoon pepper
8 oz uncooked wide egg noodles
4 tablespoons olive oil
1 1/2 cups chopped onions
1 1/4 cups chopped red bell peppers
3 cloves garlic, finely chopped
2 tablespoons sweet Hungarian paprika
1/4 cup Gold Medal™ all-purpose flour
2 tablespoons Muir Glen™ organic tomato paste (from 6-oz can)
2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
4 oz cream cheese
1 cup sour cream
1/2 cup Progresso™ plain panko crispy bread crumbs
1 tablespoon finely chopped Italian (flat-leaf) parsley

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Season chicken with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper.
  • Cook noodles as directed on package; drain.
  • Meanwhile, in 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add chicken; cook 6 to 8 minutes, stirring occasionally, until chicken is no longer pink in center. Use slotted spoon to remove chicken from skillet.
  • Add 2 tablespoons oil to skillet; add onions, bell peppers and garlic. Cook 8 to 10 minutes, stirring occasionally, until vegetables are tender. Stir in paprika and flour; cook and stir 1 minute. Add tomato paste; cook and stir 1 minute. Stir in chicken broth, remaining 3/4 teaspoon salt and remaining 1/4 teaspoon pepper; heat to boiling. Reduce heat to low; simmer 3 to 5 minutes or until thickened. Remove from heat; stir in cream cheese and sour cream.
  • Return noodles to pot they were cooked in; add cooked chicken and onion-bell pepper mixture. Stir to combine. Pour into baking dish.
  • Cover with foil. Bake 20 to 25 minutes or until heated through.
  • Meanwhile, in 8-inch skillet, heat remaining 1 tablespoon oil over medium heat. Add bread crumbs; stir to coat. Cook and stir 3 to 4 minutes or until lightly browned. Transfer to small bowl. Stir in parsley. Sprinkle bread crumb mixture over baked casserole, and serve.

1/2 pound extra wide egg noodles
2 pounds boneless
skinless chicken
dark or white meat
Pepper
1 large onion
quartered lengthwise then thinly sliced
2 red bell peppers
seeded
quartered lengthwise and thinly sliced
2 cloves garlic
finely chopped
2 round tablespoons ground sweet paprika
a couple of palmfuls
1/2 teaspoon ground allspice
eyeball the amount in your palm
2 cup chicken stock
1 cup sour cream
2 tablespoons butter
cut into small pieces
2-3 tablespoons finely chopped fresh dill
2 tablespoons chopped fresh chives
1/4 cup chopped cornichons or baby Gherkin pickles

Steps:

  • Place a large pot of water over high heat to cook the pasta
  • When the water boils, salt it well and drop the pasta in
  • Cook to al dente according to package directions
  • While the pasta is cooking, place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Season the chicken with salt and pepper, and sear until golden brown, about 5 minutes per side
  • Remove from the pan and reserve
  • Add the onion, bell peppers and garlic to the pan, and cook until the veggies have softened, 7-8 minutes
  • Add a drizzle more EVOO if the pan seems dry
  • Season with salt and pepper, and return the chicken to the pan
  • Add the paprika, allspice and stock to the pan and bring up to a bubble
  • Simmer until the chicken has cooked through, about 10 minutes more
  • Remove the pan from the heat and stir in the sour cream
  • Reserve
  • Drain the egg noodles and return to hot pot and toss the cooked noodles with the butter, dill and chives to coat
  • Ladle the chicken over the noodles and garnish with the chopped cornichons

I came up with this variation based on a dish my grandmother used to make - this is a great one-dish meal that will please the whole family. Once you try it a few times, you can get creative and add some of your favorite ingredients. You can cut the cooking time by using frozen chicken patties as indicated in the recipe below. It is also delicious when made with leftover ham and cream of mushroom soup.

2 lbs any type boneless skinless chicken (for a super quick substitute, use frozen, breaded or unbreaded, chicken patties instead)
1 (12 ounce) package egg noodles
2 (10 3/4 ounce) cans cream of chicken soup
1/2 cup milk (use more or less according to your preferred consistency)
1 (10 ounce) package frozen green peas
1 -2 tablespoon olive oil
8 ounces canned mushrooms
1 small onion, finely chopped
1 teaspoon minced garlic
1 teaspoon fresh ground black pepper

Steps:

  • In a large pot, heat water to a boil.
  • In a large skillet, cook chicken thoroughly using 1 tablespoon of heated oil and remove.
  • In the same skillet, heat olive oil (add more if necessary) on medium high heat then add mushrooms, onion, and garlic and cook until onions are transparent and drain.
  • Cut cooked chicken into bite sized pieces and add chicken, soup, milk, peas, and black pepper to the mushroom mixture and simmer for 15 minutes.
  • Cook noodles according to package then drain and rinse.

Spices lose their flavor over time but few as quickly as paprika, which starts out tasting of pepper and sunshine but deteriorates in but a few months to sawdust and bitterness. For this recipe, get some new at the market: sweet or hot Hungarian paprika is best, but the generic article isn't terrible and the smoky Spanish varieties known as pimentón de La Vera would not be out of place either, lending a deep, woodsy aroma reminiscent of cooking over an open fire. It's a dish that pairs beautifully with butter-slicked egg noodles.

3 to 4 pounds chicken thighs and drumsticks, or whole chicken legs
Kosher salt and freshly ground black pepper to taste
1 tablespoon neutral oil, like canola
3 tablespoons unsalted butter
1 large yellow or Spanish onion, peeled and diced
3 cloves garlic, peeled and minced
3 tablespoons Hungarian paprika, sweet or hot, or a combination
3 tablespoons all-purpose flour
1 cup canned crushed tomatoes or 1 large ripe tomato, chopped
1 cup chicken broth, homemade or, if not, low-sodium
1 pound egg noodles
3/4 cup sour cream

Steps:

  • Heat oven to 400. Season the chicken aggressively with salt and pepper. Heat the oil and 1 tablespoon of the butter in a large, heavy, oven-safe sauté pan or Dutch oven set over high flame, until the butter is foaming. Sear the chicken in batches, skin-side down, until it is golden and crisp, approximately 5 to 7 minutes. Then turn the chicken over, and repeat on the other side, approximately 5 to 7 minutes. Remove chicken to a plate to rest.
  • Pour off all but a tablespoon or 2 of the accumulated fat in the pot. Return the pot to the stove, over medium heat, and add the onion. Cook, stirring frequently with a spoon to scrape off any browned bits of chicken skin, until the onion has softened and gone translucent, approximately 5 minutes. Add the garlic, and stir again, cooking it until it has softened, approximately 3 to 4 minutes. Add the paprika and the flour, and stir well to combine, then cook until the mixture is fragrant and the taste of the flour has been cooked out, approximately 4 to 5 minutes.
  • Add tomatoes and broth, whisk until smooth and then nestle the chicken back in the pan, skin-side up. Slide the pan or pot into the oven, and cook until the chicken has cooked through and the sauce has thickened slightly, approximately 25 to 30 minutes.
  • Meanwhile, set a large pot of heavily salted water to boil over high heat. Cook noodles in the water until they are almost completely tender, approximately 7 to 8 minutes. Drain the noodles, and toss them in a bowl with the remaining butter, then toss again to coat.
  • Place the chicken on top of the noodles, then add the sour cream to the sauce, stir to combine and ladle it over the whole.

1 medium onion
4 tablespoons unsalted butter
3 tablespoons Hungarian sweet paprika

2.5 pounds chicken breasts and thighs
3 tablespoons flour, divided
1 1/2 cups chicken broth
1 cup sour cream

Steps:

  • Dice the onion, and cut the chicken breasts and thighs into bite-size chunks.
  • In a large skillet, sauté the onion in the butter over medium heat until translucent. Meanwhile, toss the diced chicken pieces with about two tablespoons of flour. Add the coated chicken to the pan, and brown on all sides. Once the chicken is browned, add the sweet paprika, salt, and pepper, and stir well.
  • Slowly add the chicken broth to the pan, and use a wooden spoon to scrape and deglaze the bottom of the skillet. Cover and simmer on low for 25 minutes. While the chicken is simmering, prepare the No Yolks noodles according to the directions on the package.
  • Remove the chicken to a plate. Whisk about one tablespoon of flour into the drippings left in the skillet to thicken. Turn off the heat and stir in the sour cream. Add the chicken back to the sauce and stir to coat.

8 ounces egg noodles

Steps:

  • Bring a pot of salted water to a boil. Meanwhile, cook the bacon in a separate pot over medium heat, 2 minutes. Add the onion and bell pepper and cook 3 more minutes. Combine the flour, paprika, marjoram and 1 teaspoon salt in a large bowl; add the chicken and toss to coat. Push the bacon and vegetables to one side of the pot and increase the heat to medium high. 1 rotisserie chicken
3 tablespoons extra-virgin olive oil (EVOO)
1 large onion
finely chopped
Salt and pepper
4 cloves garlic
sliced or grated on large side of rasp grater
3 tablespoons paprika (I use a mix of hot
smoked and sweet paprika
my own blend for spicy and smoky flavor-for mild
use all sweet; for smoky but not hot
2 sweet and 1 smoked)
One 14-ounce can crushed or chopped fire-roasted tomatoes
1 roasted red pepper
finely chopped (or 1 jar pimientos)
2 cups chicken bone broth or stock
¾ cup sour cream
12 ounces wide egg noodles
2 tablespoons butter
1 cup fresh herbs
dill
parsley and chives
combined
loosely packed
then finely chopped

Steps:

  • Remove skin and bones from chicken and shred the chicken into bite-sized pieces with your hands
  • Heat a Dutch oven or pot over medium heat with EVOO, 3 turns of the pan, and add onions and season with salt and pepper, soften 5 to 7 minutes, add garlic and stir 2 minutes more, add paprika and stir, add tomatoes, roasted peppers, and broth or stock and bring to a bubble
  • Add chicken and let simmer for 20 minutes
  • Stir in sour cream to finish
  • Meanwhile, bring a large pot of water to a boil and cook egg noodles 1 minute less than package directions
  • Reserve ½ cup water and drain, return to hot pot with butter and water and about ⅔ of herbs
  • Toss 1 minute
  • Serve chicken on egg noodles and top with remaining herbs

This is good served with rice in place of the egg noodles. You can make this with boneless skinless chicken breasts, I have to say that it is better using the skin on chicken. You can add in 1/4 cup red wine, if you do then decrease the water by 1/4 cup.

4 -6 tablespoons oil (more if needed)
1 1/2 tablespoons paprika
2 (8 ounce) cans tomato sauce

1 1/4 cups sour cream
1 red bell pepper, seeded and chopped
cooked buttered egg noodles

Steps:

  • Season chicken pieces with salt and pepper.
  • Heat oil in a large skillet until hot (I use my electric frypan for this).
  • Brown the chicken in batches on both sides (about 6 minutes per side) transfer to a large bowl.
  • Add in onion, garlic and dried chili flakes; saute for about 6 minutes.
  • Add in paprika, tomato sauce, water and chopped red bell pepper; stir with a wooden spoon.
  • Add the chicken back to the skillet (skin side up).
  • Cover and cook for about 35 minutes, or until the chicken is tender and the sauce is thickened, stirring occasionally.
  • After the 35 minutes, remove the lid and season with salt and pepper; continue cooking for another 5 minutes.
  • Transfer 1 cup of sauce to a bowl and whisk in the 1 cup sour cream, then stir the mixture back to the sauce in the skillet.
  • Serve with hot buttered egg noodles.

1 (16 ounce) package tri-color spiral pasta
2 tablespoons olive oil
3 (8 ounce) skinless, boneless chicken breasts, cut into small cubes
2 (14.5 ounce) cans chicken broth
2 ½ tablespoons paprika
1 cup half-and-half
1 cup sour cream
¼ cup all-purpose flour
1 tablespoon garlic powder
1 tablespoon chicken bouillon granules, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the pasta at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Heat oil in a large saucepan over medium heat. Add chicken; cook and stir until juices run clear, 8 to 10 minutes.

1-1/2 pounds boneless skinless chicken breasts, cut into 1/2-inch-thick strips

1 pound sliced baby portobello mushrooms
1 tablespoon butter
1 large red onion, halved and sliced

1 cup creme fraiche or sour cream

Steps:

  • Cook noodles according to package directions; drain., Meanwhile, toss chicken with paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper. In a Dutch oven, heat oil over medium-high heat. In batches, saute chicken until browned, 2-3 minutes. Remove from pan., In same pan, saute mushrooms in butter until lightly browned, 4-5 minutes. Add onion; cook and stir until softened, 3-4 minutes. Add garlic; cook and stir 1 minute., Add wine, stirring to loosen browned bits from pan. Add stock, Worcestershire sauce and mustard; bring to a boil. Cook, uncovered, until liquid is reduced by half, 10-12 minutes. Stir in chicken; cook, uncovered, over medium-low until chicken is no longer pink, 3-5 minutes., Stir in creme fraiche, parsley and the remaining salt and pepper; remove from heat. Stir in noodles.

1 pound chicken breasts (boneless and skinless, cut into bite size pieces)
1 tablespoon smoked paprika
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoon all-purpose flour
2 tablespoon olive oil
1 tablespoon butter (unsalted)
1 medium onion (chopped)
8 ounce white mushrooms (sliced and diced)
3 cloves garlic (finely minced)
1 ¾ cups chicken broth (low-sodium )
2 tablespoon tomato paste
1 bay leaf
¼ cup plain yogurt (creme fraiche, or sour cream)
2 tablespoon parsley (chopped, for garnish)

Steps:

  • Prep the Chicken: In a medium bowl toss the chicken pieces with the paprika, salt and pepper. Sprinkle the flour on top of the chicken and toss to coat.
  • Cook Chicken: Heat the olive oil in a large nonstick skillet over medium heat until hot. Add the chicken in a single layer and cook until golden brown on each side, tossing occasionally, about 5 minutes. Don't worry if the chicken is not cooked through, it will fully cook later on in the sauce. Transfer the chicken onto a plate and set aside.
  • Saute: Add the butter to the pan, and stir in the onions and mushrooms. Saute the mixture, stirring occasionally and scraping up the browned bits from the chicken, until the onion is translucent and the onions and mushrooms are browned, about 5 minutes. Add the garlic and cook for another 30 seconds, until fragrant.
  • Add Ingredients: Pour in about 1/4 cup of the chicken broth and deglaze the pan by scraping up any bits from the bottom. Stir in the tomato paste, whisking to combine. Add the rest of the chicken broth and the bay leaf, stirring well.
  • Finish Cooking: Add the chicken back into the skillet and simmer the mixture over medium-low to medium heat, until the chicken is cooked through and the sauce thickens slightly, about 5-6 minutes. Stir in the yogurt and cook for about 2-3 minutes longer. Let the mixture simmer for 2-3 minutes until thickened.
  • Serve: Serve over mashed potatoes, egg noodles or rice and garnish with fresh parsley, if desired.

  • Step 1Bring 3 to 4 inches of water to a full boil in a large pot. Season with salt, add the broccoli rabe and cook until crisp-tender, about 3 minutes; drain. Refill the pot with 6 quarts water and bring to a boil for the pasta. Pat the broccoli rabe dry. Step 2In a large skillet, heat the oil, three turns of the pan, over medium. Add the anchovies; cook, stirring often, until they break down and melt into the oil, about 2 minutes. Add the garlic, chile pepper, shallot and raisins. Cook, stirring often, until the shallot softens, about 3 minutes. Add the stock and wine, then the saffron; let it bloom in the sauce.Step 3Salt the boiling water, add the pasta and cook until 1 minute shy of the package directions, 7 to 8 minutes.Step 4Add the broccoli rabe to the saffron sauce and cook until heated through, 1 to 2 minutes.Step 5Add 1/2 cup of the pasta cooking water to the sauce, then drain the pasta. 3 pounds chicken pieces with skin and bones
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1 large onion, chopped
4 garlic cloves, finely chopped
1 1/2 tablespoons paprika (preferably sweet Hungarian)
2 (8-ounce) cans tomato sauce
1 1/2 cups water
1 cup sour cream
Accompaniment: buttered egg noodles or white rice
Garnish: chopped fresh parsley

Steps:

  • Rinse chicken and pat dry, then sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper.
  • Heat oil in a 6- to 8-quart heavy pot over moderately high heat until hot but not smoking, then brown chicken in 2 batches, skin sides down first, turning over once, about 12 minutes per batch. Transfer chicken to a shallow bowl. Add onion and garlic to pot and sauté, stirring, until lightly browned, about 6 minutes.
  • Add paprika and stir in tomato sauce and water. Add chicken pieces, skin sides up, and simmer, covered, until chicken is very tender but not falling off the bone, about 30 minutes. Remove lid and cook, stirring occasionally, until sauce is thickened, about 10 minutes more. Stir in remaining 1/2 teaspoon salt and 1/4 teaspoon pepper.

1 onion, medium, diced
⅓ cup low-sodium chicken broth, low-sodium
1 tbsp sweet paprika
¾ cups sour cream, preferably full fat
1 tbsp butter
1 tbsp canola oil
4 cups egg noodles, cooked

Steps:

  • Heat the oil in the skillet.
  • Add chicken thighs and onion to oil and stir until chicken is cooked through and meat thermometer registers 165°F (74°C).
  • Add butter. Once butter is melted add paprika and stir.
  • Once well combined, add chicken broth and stir to mix well.
  • Lower heat. When mixture has cooled slightly, add sour cream and stir until sour cream is completely mixed in with broth.

4 clove garlic minced
1 red bell pepper sliced
1 medium onion thinly sliced
3 Tbsp sweet paprika
1 tsp allspice
2 c chicken stock
1 c creme fraiche or sour cream
2 Tbsp butter
2 Tbsp each chives and dill minced

Steps:

  • 1. Bring a lot pot of water to boil. While the water is coming to a boil place a large skillet over med. high heat. Add olive oil to skillet.Season the chicken with salt and pepper. Cook the chicken until almost done then remove chicken to a plate.
  • 2. Add the bell pepper and onion to the skillet and cook until softened. Add the garlic and cook one more minute. Add the chicken stock, paprika and allspice bring to a boil. Reduce the heat and whip in the creme fraiche or sour cream. Add the chicken back to the pan. Taste and adjust for salt and pepper.
  • 3. Once the noodles are cooked and drained Add the butter, chives, and dill. Mix well. Serve the chicken mixture over the noodles.

2 tablespoons extra virgin olive oil
1 onion (diced)

2 ½ cups low sodium chicken stock (or chicken broth, divided)
1 bay leaf
1 fresh thyme sprig (or 1 teaspoon dried thyme)
1 teaspoon Kosher salt (or sea salt)
1 teaspoon fresh ground black pepper
1 cup diced celery
1 pound dry wide egg noodles (or noodles of your choice)
3 tablespoons unsalted butter
3 tablespoons all purpose flour
2 cups whole milk (divided)
1 cup peas (frozen)

Steps:

  • In a large pot or dutch oven, sauté diced onion in olive oil over medium high heat until translucent, about 3 to 5 minutes. Add garlic and carrots and continue sautéing for an additional minute, stirring frequently.
  • Add 1 ½ cups chicken stock or broth, bay leaf, salt, pepper and thyme and bring to a simmer over medium high heat. Cook until the carrots are tender, about 5 to 7 minutes.
  • Add the remaining chicken stock or broth and celery and bring to a boil. Add the noodles and cook for 5 minutes, uncovered.
  • While the noodles are cooking, prepare the roux. In a small skillet, melt butter then add flour and whisk to combine. Cook for one minute and then add 1 cup of milk and bring to a simmer and let simmer for 2 to 3 minutes until thickened. Remove from heat.
  • Stir the remaining one cup of milk, frozen peas, and prepared roux into the pot with the noodles. Stir to combine.
  • Add the shredded chicken and continue cooking over medium heat at a gentle simmer until thickened to your liking.
  • Serve hot with fresh herbs, Parmesan cheese, smoked paprika or fresh ground black pepper.

Steps:

  • Bring a large pot of water to a boil, salt the water, and cook the noodles to al dente.
  • While the water is coming to a boil, place a large skillet over medium-high heat with the EVOO. Season the chicken liberally with salt and pepper and brown the meat for a few minutes on each side. Transfer to a plate and reserve.
  • Add the garlic, bell peppers, and onions to the pan, season with salt and pepper, and cook to soften, 7 to 8 minutes. Add a drizzle more EVOO if the pan seems dry.
