Easy Tuna Pasta Salad image

We make this easy pasta salad a lot in the summer - it's delicious at room temp or cold on hot days, and there's no mayo in it, so it travels well, too. We also make this during the winter, to remember what summer tasted like. It makes a great light lunch or dinner. Adapted from a Gourmet recipe.

1/2 lb penne (or rotini, radiatore, bowtie, etc)
4 cloves garlic, minced
1 lemon, for juice and zest
1/4 cup packed fresh basil leaf
1 (6 ounce) can tuna in olive oil, not drained (or 6-ounces tuna in water, plus approximately 1/4 cup of extra virgin olive oil of your choice)
tomatoes, chopped
2 scallions, chopped
parmesan cheese, grated or shredded (optional)
hot sauce or Tabasco sauce, to taste (optional)
toasted pignolis or walnuts (optional)
salt and pepper

Steps:

  • Cook pasta to al dente.
  • While the pasta cooks, finely grate enough lemon zest to measure 1 tablespoon and squeeze 1 teaspoon juice (or more, to taste) Mince garlic.
  • Cut basil into thin strips.
  • Chop scallions and tomatoes.
  • Toast and chop nuts.
  • In a large bowl toss together all ingredients except for pasta.
  • Check and correct seasoning, lemon juice, and amount of olive oil.
  • When pasta is done, add it to bowl and toss with combined ingredients.
  • Check and correct seasonings again.

My own recipe for a delicious, cold salad made with multicolored rotini, canned tuna, onions, celery and carrots. It's wonderful in the summer as a light dinner served with blueberry or pineapple muffins. The secret is to used canned tuna in vegetable oil rather than water--it makes a more moist, delicate salad overall.

1 (12 ounce) can tuna in vegetable oil
1 (16 ounce) bag tri-colored rotini pasta
1 1/2 cups hellman's or duke's mayonnaise
1 (14 ounce) can chicken broth
1/2 cup chopped celery
1/2 cup chopped carrot
1/2 cup chopped yellow sweet onion (finely)
2 teaspoons dried dill weed
2 teaspoons salt
1 teaspoon black pepper
1 tablespoon lemon juice

Steps:

  • In a large 3 qt pot, mix can of chicken broth with enough water to cook pasta. Add 2 t. salt to pot. Put in package of rotini and follow package directions for MINIMUM cook time. Drain pasta immediately and flush with cold water until all pasta is cool and has stopped cooking entirely. Set aside.
  • In a large mixing bowl, combine mayonnaise with dill, pepper, and lemon juice.
  • Add pasta to mayonnaise mixture.
  • Drain can of tuna completely and add to pasta.
  • Add chopped onions, celery, and carrots.
  • Stir well until everything is combined.
  • Refrigerate for at least two hours; add salt to taste and stir.

1 lb elbow macaroni
2 (6 ounce) cans tuna in water
2 cups frozen peas
2 celery ribs
1 small onion
2 cups mayonnaise
seasoning salt (to taste)
pepper (to taste)

Steps:

  • Boil pasta as directed on the package.
  • Boil peas about 5-8 mins (you can boil with pasta) run under cold water when done.
  • chop celery and onions
  • mix pasta, peas, celery and onions together
  • gently stir in mayo and season with seasoning salt to taste.
  • refrigerate for at least 1 hour.

Three-color pasta, cubed cheese, tuna, and roasted sweet peppers blend into a spunky salad that we enjoy over 2 suppers during hot summer days. This is an excellent salad that I've served with or without cashews since sometimes I forget those. Fresh basil is essential to this recipe and we just have some fancy fresh breads and butter with it. I don't recall which of my magazines I got this from but it's favorite of mine.

2 cups dried tri-colored fusilli or 2 cups rotini pasta
3/4 cup cheddar cheese or 3/4 cup provolone cheese
2/3 cup frozen peas
1/2 cup celery
2 tablespoons thinly sliced fresh basil leaves
1/2 cup creamy roasted garlic salad dressing or 1/2 cup peppercorn ranch dressing
7 ounces chunk tuna in water, drained
1 (7 ounce) jar roasted red peppers, drained and coarsely chopped
romaine lettuce leaf
1/3 cup roasted cashews

Steps:

  • Cook pasta according to package directions; drain.
  • Rinse with cold water; drain again.
  • Transfer pasta to large bowl.
  • Stir in cheese, peas, celery and basil, AND tuna and peppers. (Thanks Sandylee for catching this).
  • Pour salad dressing over pasta mixture; toss gently to combine.
  • Cover and chill for 2 - 8 hours.
  • To serve, stir in a few tablespoons additional salad dressing, if necessary, to moisten pasta mixture.
  • Arrange romaine leaves in salad bowl or on chilled dinner plates.
  • Top with pasta mixture.
  • Sprinkle with cashews.

I made this up all by myself. My mom and I are big tuna eaters. I eat tuna everyday and I find this to be the EASIEST and TASTIEST way I can possibly make my tuna salad for my lunch everyday. It's very quick and takes me about 5 minutes, it's also low fat and good for you. My mom tells me all the time that she loves it. I enjoy it as well, I eat this tuna salad nearly every day for lunch at school. I eat it with crackers, on bread or plain with some fruit, the Mrs. Dash gives it a great flavor, I always keep Mrs. Dash on hand. I hope you like it. It's a recipe concocted by a 15 year old chef. lol.

1 (3 ounce) can albacore tuna, drained (I prefer Starkist Albacore Tuna, in the single serving cans)
1 tablespoon light mayonnaise (or fat free)
1 teaspoon honey mustard (use a little more if tuna salad is too dry, I use a teaspoonful)
1/2 teaspoon Mrs. Dash seasoning mix
1 baby carrots, chopped (optional)
sweet relish (optional)

Steps:

  • Drain your tuna well.
  • Scoop into a bowl with a fork and flake it well with your fork, breaking up the larger chunks of tuna.
  • Add remaining ingredients and enjoy.
  • Whenever I'm in a hurry I just use the mayonnaise, honey mustard and Mrs. Dash.
  • When I have time I add the carrot which gives it a nice crunch.
  • Eat it on 2 slices of whole wheat bread, with tortilla chips, or with crackers.
  • Sometimes I just eat it plain it tastes just fine that way.
