- Preheat oven to 350°F
- Puree the bananas in a food processor.
- Then add the coconut milk, eggs and sugar into the food processor and pulse until well mixed.
- Pour the banana custard mixture out into a bowl and stir in the shredded coconut.
- Butter eight 1/2-cup ramekins.
- Pour the banana custard into the ramekins, about 3/4 way up.
- Place the ramekins in a baking pan and pour enough hot water into the pan, water should come halfway up the sides of the ramekins.
- Bake the custards until just set, about 20 minutes.
- Immediately remove the ramekins from the hot water bath and place them on a rack to cool.
- Just before serving, sprinkle the custards evenly with about 1 tablespoon of sugar.
- Turn the oven to broil.
- Place the custards back into the oven, at least 4 inches from heating element, until sugar caramelizes, about 2 minutes.
- Garnish with the chopped candied walnuts.

EASY THAI BANANA COCONUT CUSTARD
This easy banana coconut custard dessert recipe is normally steamed in Thailand, but baking it in the oven is just as good and less messy.

Steps:
- Preheat the oven to 350 F.
- Prepare 4 to 6 ramekins for the dessert by greasing them with a little oil. If you have banana leaves, make a lining with them by cutting two or more wide strips and pressing them into the ramekin (like a cross or a basket).
- Place the coconut milk, sugar, eggs, banana, and flavoring in a blender or food processor. Blend or process for 30 seconds. If you don't have a blender or processor, simply mix the ingredients together in a bowl with a fork or whisk for 1 minute, or until the sugar has dissolved.
- Pour the mixture into the ramekins, filling each one 3/4 full.
- Place the ramekins in a flat-bottomed glass dish (a lasagna or casserole dish works well). Fill part-way with water-up to 1/2 the height of the ramekins-and carefully place the dish in the oven.
- Bake for 45 minutes to 1 hour, or until the custard has set and is firm.
- Serve the ramekins either hot, cold or at room temperature. If desired, sprinkle with a little dry shredded coconut, sweetened or unsweetened. Coconut milk is used in many Thai desserts as well as savory dishes. For those who want creaminess but are eating dairy-free, it is a useful ingredient. You may also want to make a Mango Custard and enjoy another tropical fruit flavor.

Steps:
- Whisk cornstarch, sugar, and salt together in a heavy-bottomed saucepan.
- Add milk and egg replacer or banana and whisk until lumps disappear.
- Heat over medium heat, whisking, until the custard thickens.
- To test whether the custard is thick enough, dip a wooden spoon into the mixture and run your finger through the coating.
- When the custard is thick enough, the trail will not close back up.
- Take the custard off heat. Whisk in butter, vanilla, and nutmeg.
- Cool with a plastic sheet pressed to the surface to prevent a skin from forming.
