BUTTERED SPINACH AND RICE



Buttered Spinach and Rice image

This is an interesting variation on the basic rice side dish from Taste of the Caribbean by Rosamund Grant. It is tasty all on its own, but unassuming enough to serve with a spicier dish to top it off. Note: The original recipe called for 2 1/2 cups basmati rice with 2 1/2 cups of water - I used that same amount of water with just a little over 1 cup of regular long grain rice and it was just right. Collard greens could also be used in place of the spinach.

3 tablespoons butter
1 onion, chopped
1 -2 fresh tomato, chopped
1 cup long grain rice
2 garlic cloves, crushed
2 1/2 cups stock or 2 1/2 cups water
12 ounces shredded fresh spinach (or 8 oz frozen spinach)
salt, to taste
pepper, to taste

Steps:

  • melt butter in a saucepan with tight-fitting lid.
  • Gently saute the onion for 3 or 4 minutes.
  • Stir in the chopped tomatoes.
  • Add the rice and crushed garlic, gently cook for 5 minutes.
  • Gradually add the stock or water, stirring constantly.
  • Season to taste with salt and pepper.
  • Cover and simmer gently for 10-15 minutes, till rice is almost cooked, then reduce heat to low.
  • Spread the spinach in a thick layer over the rice.
  • Cover the pan and cook over low heat, 5-8 minutes, till spinach has wilted and rice is tender.

1kg fresh or frozen spinach, rinsed and stemmed (35 oz.)
200g rice white rice (7 oz.)
1/2 cup olive oil
4 spring onions, chopped
1 red onion, finely chopped
1 leek, sliced
1/2 bunch dill, finely chopped
150g tinned chopped tomatoes (5.5 oz.) or 200g of fresh tomatoes, if in season.
1 tbsp tomato paste
1 cube vegetable stock
salt and freshly ground pepper

Steps:

  • To prepare this spanakorizo recipe (Greek spinach and rice), heat the olive oil in a large skillet over medium high heat. Add the onions, spring onions and leek and sauté for 3-4 minutes, until translucent.
  • Add the spinach and cook stirring for a few minutes, until wilted. Stir in the tomatoes, the tomato paste, two cups of hot water, the vegetable stock, the rice and season. Reduce heat to low and simmer, covered, for about 20-25 minutes, until the rice is tender.
  • While the Spanakorizo is simmering away, stir it every so often and check if the pan appears to be getting dry. If it is, add some more hot water and stir.
  • To know when its ready, take a grain of rice out of the skillet and pinch it with your fingernails. If its white on the inside it needs a little bit longer. When it's close to ready, season with salt and pepper to taste. Finally, finish the spanakorizo with fresh chopped dill and cook for a a couple more minutes.
  • Serve this traditional Greek spinach and rice (spanakorizo) with a squeeze of a lemon and top with crumbled feta. Enjoy!

2 tablespoons butter, plus more for dish
1 small onion, minced
Pinch cayenne pepper
1 package frozen spinach, thawed, drained and chopped
1 cup milk
2 eggs
2 cups shredded sharp Cheddar, plus extra for top
4 cups cooked rice
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
1 teaspoon chopped basil leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Butter a large casserole dish.
  • In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
  • In a large bowl, whisk together milk and eggs.
  • Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
  • Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

1 (10.75 ounce) can condensed cream of chicken soup, undiluted

2 fresh jalapeno peppers, seeded and chopped

½ cup chopped onion
1 (10 ounce) package frozen chopped spinach, thawed and drained
4 ounces processed cheese food, cubed

Steps:

  • In a pot, bring the rice and water to a boil. Cover, reduce heat to low, and simmer 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • In a bowl, mix the soup, milk, jalapeno peppers, salt, and pepper.
  • Melt the butter in a large skillet over medium-low heat, and cook the onion until tender. Mix in the cooked rice and spinach. Pour the soup mixture into the skillet, and continue cooking until heated through. Mix in the cubed processed cheese, and transfer to the prepared baking dish.
  • Bake 25 minutes in the preheated oven, until bubbly and lightly browned.

3 cups cooked long-grain rice
1/2 cup milk
1 tablespoon butter
3 cups chopped spinach
1/2 teaspoon cumin seed
1 onion, chopped
1 green chili, chopped
1 tablespoon oil
salt

Steps:

  • Heat butter on low heat and add rice, milk and salt and cook for 1 minute.
  • Heat the oil and fry cumin seeds until they begin to crackle.
  • Add onion and fry for 1 minute.
  • Then add the green chilli and fry for some time.
  • Add spinach and salt and cook till spinach is soft.
  • Spread spinach at the bottom of a greased jelly mould.
  • Spread the rice on top.
  • Press well and cover.
  • Bake in a preheated oven for 10 minutes at 400°F.
  • While serving, invert on a plate and serve with hot cream of tomato soup ro any other thick soup.

Cook baby spinach with the rice to bring out the colour in this vegetarian side dish - perfect as part of a Greek Easter lunch

100ml Greek extra virgin olive oil
1 onion , finely chopped
500g baby spinach leaves, washed and finely chopped
bunch dill , finely chopped
300g long-grain rice
juice 1-2 lemons

Steps:

  • Heat the oil in a large pan, add the onion and gently cook until softened but not coloured. Add the spinach and half the dill. Cook on a high heat, stirring regularly, until the spinach has wilted down and all the liquid has evaporated.
  • Stir in the rice and add 600ml water, then bring to the boil. Turn the heat right down again to a very gentle simmer, cover the pan with a tight-fitting lid and cook for 25-30 mins or until the rice has cooked and absorbed all the water. Give it a stir after 15 mins to ensure even cooking, adding a drop more water as required.
  • When the rice is cooked, stir in the remaining dill, season well, squeeze over the lemon juice to taste, and serve.

1 1/2 cups no-salt-added chicken broth
2 scallions

1 small onion, finely chopped

1 1/4 cups quick cook brown rice (see notes)

2 1/2 cups low-sodium chicken or vegetable broth
1 (8 oz.) bag fresh spinach, roughly chopped
1/4 cup grated Parmesan cheese (plus extra for serving)

Steps:

  • Heat olive oil in a large pan over medium heat.
  • Add onion and sauté 5-6 minutes, until softened. Add garlic and sauté another 30 seconds.

1 chicken or vegetable bullion
2 cups water
2 tsp butter
10 oz frozen spinach (thawed)
2 cloves garlic
2 tsp olive oil
salt
fresh grated cheese (optional)

Steps:

  • In a small heavy pot, melt butter.
  • Add rice and saute about 1 minute.
  • Add water and bullion and bring to a boil.
  • When all liquid evaporates, reduce flame to low and cover.
  • Cook about 15 minutes.
  • Shut flame off and keep covered another 5 minutes to let the steam finish cooking the rice.
  • Meanwhile, in a saute pan, heat olive oil.
  • Add garlic and saute until golden.
  • Add spinach and salt, mixing well for about 4 minutes.
  • Toss rice with spinach and top with good grating cheese like Pecorino Romano.

10 ounces frozen spinach
1/4 cup onion
1/2 cup mixed mushrooms
1 cup cooked brown rice
4 ounces cheddar cheese
1/3 cup skim milk
2 medium eggs
1/4 cup chicken broth
1 tablespoon Worcestershire sauce
1/2 teaspoon ground ginger
1 teaspoon ground mustard
1 teaspoon black pepper

Steps:

  • Thaw the spinach (microwave "defrost" setting, or in a sieve under cool running water), squeeze out the extra water, set aside in the sieve to finish draining.
  • Beat the eggs, shred the cheese, combine, set aside.
  • Mince the onions, slice the mushrooms, or use already-sliced criminis (life is too short to slice mushrooms! IMO).
  • In a medium saute pan, on med-high heat, heat half of the chicken broth, add the onions and bring to a simmer. Allow the broth to nearly cook away, while the onions become brown. Watch it - don't let it burn. As the broth simmers away, add the remaining broth and the mushrooms. Lower the heat as needed to maintain a low simmer. Give the onion/mushroom/broth mixture a stir, and when just a bit of broth is left, remove the saute pan from the heat.
  • Combine all ingredients in a baking pan and put in the oven, at 325 degrees for 35 - 40 minutes.
  • VERY IMPORTANT: be sure to use already-cooked rice.
  • (About cooking the rice ahead - I make a large-ish batch of it, and freeze it in smaller containers; it reheats pretty well in the microwave or skillet.).

CHICKPEA, SPINACH AND BROWN RICE MEDLEY

Delicious served with some yoghurt, a big dollop of hummus and some fresh whole wheat pita bread or Lebanese bread if you can get it. 4 cloves of garlic (minced)
2 onions (coarsely chopped)
1 tsp ground cumin
1 tsp seven spices seasoning (see notes for a cheat if you don't have any)
14 oz canned chickpeas (drained and rinsed)
1 cup cooked brown rice (cooked according to packet instructions)
80 g baby spinach leaves
1/2 tsp pepper
1/2 tsp salt
optional extras for serving: fresh chopped tomatoes, hummus, thick yogurt, Lebanese or pita bread.

Steps:

  • Heat the oil in a medium pan, add the onions and garlic and cook over a medium-low heat for about 7 minutes, stirring occasionally until lightly coloured. You want the onions to be almost caramel in colour, but not burnt.
  • Once the onions have cooked, add in the cumin and the seven spice seasoning. Stir to combine, making sure to coat the onion mixture.
  • Add the chickpeas and cooked rice to the onion mixture and heat through.
  • Add in the baby spinach and cook until just wilted.
  • Taste and season with salt and pepper. I usually go with about 1/2 tsp of each.
  • Serve immediately with some yoghurt, a dollop of hummus and some fresh whole wheat pita bread

This rice includes wine and plenty of garlic. It is crucial to use good quality freshly peeled garlic from whole heads for the success of this rice. The rice can be made vegetarian by using water in place of the chicken broth. This recipe is from Baja: Cooking on the Edge.

1/3 cup vegetable oil (do not use olive oil)
1/2 cup finely minced white onion
2 cups uncooked converted long-grain white rice
1/2 cup dry white wine
3 1/2 cups chicken stock or 3 1/2 cups water
1/2-1 whole large head of garlic, broken into cloves and peeled
1 tablespoon kosher salt
2 cups Baby Spinach, washed and stemmed

Steps:

  • Heat the oil in a 2-quart saucepan with a tight-fitting lid. Add the onion and saute until softened but not browned.
  • Add the rice and cook, stirring, until the rice has absorbed the oil and is lightly golden. Add the wine and cook until the rice has absorbed the wine. Add the stock, cover, and turn the heat to low. Cook without peeking until the rice is done, about 15 minutes. Keep warm.
  • While the rice is cooking, chop the garlic with the salt until it is almost a paste. The salt will bring the juices out of the garlic and help with the chopping as well as season the rice.
  • When the rice is done, fluff it with a chopstick or fork. Stir in as much of the garlic paste as you have the nerve for. Stir in the spinach and replace the lid for 5 minutes; the spinach will steam with the heat from the rice. Serve as soon as possible.

My friend Nancy served this salad at a backyard barbeque years ago, and I had to have the recipe. I've been making it ever since and it's always a hit. I often make it a day ahead and then bring it to room temperature and add the nuts just before serving.

1 1/2 cups white rice
1 (10 ounce) box frozen chopped spinach
1/2 cup slivered almonds
1/4 cup red onion, cut in 2 inch slices
1/2 cup canola oil
2 tablespoons cider vinegar
2 tablespoons soy sauce
1 teaspoon sugar

Steps:

  • Cook rice in salted water according to package directions, then let cool.
  • Thaw spinach and squeeze out the water.
  • Toast almonds in a 250-300 degree oven till light brown.
  • Combine dressing ingredients in a jar or cruet and shake well to combine.
  • Toss together cooled rice, spinach and onions.
  • Add dressing and mix well.
  • Refrigerate several hours or overnight to combine flavors.
  • Add toasted nuts just before serving.
  • Can be served cold, but it's better at room temperature.

Spanakorizo (Greek Spinach Rice) is the comfort food of your dreams. It gives you all the cozy, feel-good vibes but is also loaded with nutrients from spinach, plus flavor from dried herbs and a splash of lemon juice. This easy Greek rice recipe can be enjoyed as a vegetarian main for 4 people or as a side with your favorite protein (up to 6 people).

1 cup medium grain rice
4 tbsp extra virgin olive oil
1 yellow onion (chopped)
1 pound baby spinach
1 lemon, juiced
Kosher salt and black pepper
2 cloves garlic (minced)
2 tablespoons tomato paste
1 1/2 teaspoon dried mint flakes
1 teaspoon dried dill weed
Feta (for garnish)

Steps:

  • Rinse the rice well a few times until the water runs clear. Put the rice in a bowl and add water to cover it by 1 inch. Let is sit to soak for 20 minutes or until you are easily able to break one grain of rice between your fingers.
  • Heat ¼ cup extra virgin olive oil in a braising pan. Add the onions and cook for 5 minutes, stirring regularly, until soft and golden brown. Add the spinach, lemon juice, garlic, tomato paste, and a big pinch of kosher salt and black pepper. Sautee the spinach until just wilted. Stir in the mint and dill weed.
  • Drain the rice well and add it to the pan. Add 1 ½ cups of warm water. Bring to a boil for 3 minutes until the water reduces a bit. Turn the heat to low and cover.
  • Let the rice cook undisturbed for 20 minutes or until the rice is tender and fully cooked through and all the liquid has been absorbed.
  • Once cooked, let the rice sit covered for 5 to 10 minutes before serving.
  • When ready, fluff the rice with a fork and garnish for feta and parsley, if you like.

1 tablespoon olive oil
1 cup uncooked brown rice
2-3/4 cups water
1/3 cup snipped fresh dill
2 tablespoons minced fresh oregano

1 package (6 ounces) fresh baby spinach

Steps:

  • In a large saucepan, saute onions in oil until tender. Add rice; cook and stir for 3-4 minutes or until rice is lightly browned., Stir in the water, dill, oregano, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 35-40 minutes or until rice is tender. Add spinach; heat through.

  • Heat butter in a 1- to 2-quart heavy saucepan over moderately low heat until foam subsides, then cook shallots, stirring occasionally, until beginning to turn golden, about 2 minutes. Add rice and cook, stirring constantly, until grains turn opaque, about 2 minutes. Reduce heat to low, then stir in broth and cook, covered, until liquid is absorbed and rice is just tender, about 15 minutes. Remove from heat and let stand, covered, until ready to use.
  • While rice is cooking, heat oil in a 6- to 8-quart heavy pot over moderate heat until hot but not smoking, then cook garlic, stirring constantly, until it begins to turn golden, about 1 minute.
