Citrus Herb Peppers, Olives and Cheese image

Chilled do-ahead appetizers take the heat and hassle out of entertaining. Even better--they're scrumptious!

6 large red or green bell peppers
1 cup whole Greek or pitted ripe olives
4 ounces mozzarella or provolone cheese, cut into cubes
1/4 cup olive or vegetable oil
1/4 cup lemon juice
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh or 1/4 teaspoon dried oregano leaves
1 teaspoon chopped fresh or 1/4 teaspoon dried basil leaves
1/2 teaspoon chopped fresh or 1/8 teaspoon dried sage leaves
1/2 teaspoon salt
1/8 teaspoon pepper
2 large cloves garlic, finely chopped

Steps:

  • Set oven control to broil. Broil bell peppers with tops about 5 inches from heat, turning occasionally, until skin is blistered and evenly browned. Place peppers in plastic bag and close tightly. Let stand 20 minutes.
  • Remove skin, stems, seeds and membranes from peppers. Cut peppers into 1/4-inch strips. In glass bowl or jar, mix peppers, olives and cheese.
  • In tightly covered container, shake all remaining ingredients; pour over pepper mixture. Cover and refrigerate at least 4 hours, stirring occasionally.

1/4 cup extra-virgin olive oil
1/4 teaspoon crushed red pepper flakes
2 sprigs fresh thyme
1 clove garlic, thinly sliced
1 strip lemon zest, removed with a vegetable peeler plus 1 teaspoon lemon juice
1 strip orange zest, removed with a vegetable peeler plus 1 tablespoon orange juice
Kosher salt and freshly ground black pepper
1 cup Castelvetrano olives

Steps:

  • Heat the olive oil in a small saucepan over medium heat. Add the red pepper flakes thyme, garlic, lemon zest, orange zest, salt and pepper to taste and cook, stirring occasionally, until the garlic is pale golden, about 2 minutes. Stir in the olives and cook, stirring, until just warm, about 2 minutes. Turn off the heat. Stir in the lemon juice and orange juice and transfer to a decorative jar or serving bowl. Serve warm or at room temperature.

Perhaps it was the presence of an orange in the toe of my Christmas stocking each year that makes me crave the freshness of citrus in the winter. It is easy to find jars of roasted peppers, and the two combine to make a cheerful colorful combination as welcome in the winter months as in the summer. Another name for shaved fennel is fennel slaw.

1 red grapefruit, peeled and segmented
1 white grapefruit, peeled and segmented
1 orange, peeled and segmented
1 fennel bulb, shaved
1 roasted red bell pepper, torn into 1/2-inch strips
1 small red onion, thinly sliced
1 to 2 tablespoons olive oil
1 to 2 tablespoons fresh lime juice
Grated rind of 1 lime, no white attached
1 garlic clove, chopped
Salt
Freshly ground black pepper
Granulated sugar
1/2 cup crumbled soft goat cheese
1 to 2 green onions, chopped
2 teaspoons chopped fresh herbs, optional

Steps:

  • Toss the grapefruit and orange segments, fennel, pepper strips, and onion together in a large bowl. Whisk together the oil, lime juice, lime rind, and garlic in a small bowl. Toss the dressing with the fruit mixture. Season to taste with salt, pepper, and sugar. Sprinkle the salad with cheese, green onion, and herbs. Cover tightly with plastic wrap and refrigerate for at least 1 hour. Serve cold.

kosher salt & freshly ground black pepper, to taste
bone-in chicken parts, pat dry (thighs and legs are best)
1 medium onion, thinly sliced (any kind)
1 teaspoon dried thyme, fresh chopped
1 tablespoon dried rosemary, fresh chopped

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl whisk together olive oil, garlic, sugar, lemon juice, orange juice, Italian seasoning, paprika, onion powder, red pepper flakes, and salt and pepper.
  • Place chicken in a rimmed 13-in. x 9-in. baking dish. Place parts skin side up and spread them out evenly in the pan. Pour olive oil mixture all over chicken, turning pieces to coat all sides. (If you marinated the chicken in this mixture, still add it all in). Arrange slices of lemon, orange and onion around and under the chicken. Sprinkle all over generously with thyme, rosemary, salt and pepper.
  • Bake uncovered for about 1 hour, or until chicken is cooked and juices run clear. Remove parts to a serving platter and garnish with additional chopped fresh herbs, if desired.

1 (10 ounce) whole-wheat pizza crusts or 1 (10 ounce) prepared whole wheat pizza dough
1 tablespoon extra virgin olive oil
1 medium red onion, halved and thinly sliced
1 garlic clove, minced (optional)
2 large roma tomatoes, sliced
4 ounces goat cheese, crumbled
12 fresh sage leaves, cut into 1/4-inch slices
1 tablespoon fresh thyme leave
1 tablespoon snipped fresh rosemary
1 tablespoon fresh flat leaf parsley, chopped for garnish (optional)

Steps:

  • Preheat oven to 450°.
  • Place prepared pizza crust on a baking sheet.
  • In a large skillet, heat olive oil and sauté onion for 5-8 minutes or until tender. Add sliced garlic, if using, and cook 1 more minute. Spread onions and garlic evenly over pizza crust, then top with tomato slices, spreading evenly to the edges. Top with cheese.
  • Bake for 5 minutes, then sprinkle sage, thyme, and rosemary evenly over pizza.
  • Return to oven and bake for 5-7 minutes more, or until tomatoes are hot and cheese has melted. Sprinkle parsley over top.
  • Cut into wedges with a pizza cutter and serve!
