LEMON BLACK AND BLUE COBBLER

- Preheat the oven to 375 degrees F.
- In a medium bowl, combine the berries with the honey and cornstarch Mash together slightly with a fork just to release a little berry juice and combine with the cornstarch. Divide the berry mixture between 4 shallow (12-ounce) oven-safe dishes and reserve.
- In the bowl of a food processor add the flour, sugar, nutmeg, salt, and lemon zest and pulse to combine. Add the butter and pulse until the butter and flour are just barely combined, about 15 seconds. Transfer the butter mixture to a bowl and toss with the sliced almonds. Evenly divide the topping between the 4 dishes by sprinkling it over the berries to almost cover completely. Transfer to the oven and bake for about 20 minutes or until the top is lightly browned. Remove from the oven and serve warm with a scoop of ice cream.

- Preheat oven to 375°. In a small heavy saucepan, mix sugar, cornstarch, cinnamon and water until smooth; bring to a boil. Cook and stir until thickened, about 2 minutes. Remove from heat; stir in berries. Transfer to an 8-in. square baking dish coated with cooking spray. , For topping, beat sugar and butter until crumbly. Beat in vanilla and milk. Whisk together flour, baking powder and salt; add to butter mixture, stirring just until moistened. Drop by tablespoonfuls over fruit. , Bake until filling is bubbly and a toothpick inserted in topping comes out clean, 25-30 minutes. Serve warm.

SLOW COOKER BERRY COBBLER
This colorful cobbler is very juicy, but the sweetened berry "sauce" is so delicious it's worth spooning up. If you don't have time to make the sour cream topping, a sprinkle of confectioners' sugar or a dollop of vanilla yogurt works well, too.

- For the filling: Butter the sides and bottom of the insert of a 6-quart slow cooker. Whisk together the cornstarch, lemon juice and 2 tablespoons water in a small bowl. Add the mixture to the insert, add the berries and granulated sugar and toss.
- For the biscuit topping: Whisk together the flour, 2 tablespoons of the granulated sugar, baking powder and salt in a large bowl. Add the butter and rub the mixture together with your fingers so that it forms a coarse meal with some pea-sized lumps. Add the milk and stir with a wooden spoon to form a wet dough.
- Drop spoonfuls of the dough on top of the berry mixture. Combine the remaining 1 tablespoon granulated sugar and the cinnamon and sprinkle over the dough. Cover the slow cooker and set to high for 3 to 4 hours. The cobbler should be bubbly and the biscuits should be cooked through. Let rest for 20 minutes before serving.
- For the sour cream topping: Meanwhile, combine the heavy cream, sour cream and confectioners' sugar in a medium bowl and beat with an electric mixture until the mixture forms medium peaks.
- Spoon the cobbler into bowls and top with the whipped sour cream topping.
SUMMER SLOW-COOKER COBBLER

- Make the filling: Grease the insert of a large slow cooker (5 to 6 quarts) liberally with the 1 tablespoon softened butter. Place the peaches and berries in the insert and sprinkle with the lemon zest, juice, granulated sugar, flour and salt and toss to coat.
- Make the topping: In a small food processor, process the pecans, flour, oats, granulated sugar, brown sugar, dried buttermilk powder (if using), cinnamon and salt until well blended. Add the butter and pulse just until the butter is pea-sized (about 5 pulses).
- Sprinkle the topping over the fruit. Place a kitchen towel between the insert and the lid (to absorb condensation). Cook on high for 90 minute to 2 hours. Serve with vanilla ice cream.
SLOW COOKER FRUIT COBBLER
This easy dessert is always a hit in my house. It is especially good for entertaining; your guests think you slaved away baking when all you did was throw a few simple ingredients into the slow cooker! My favorite fruit mixture is peach/berry but any fruit your family loves will work. Serve hot with a scoop of vanilla ice cream.

- In a bowl, combine flour, 3/4 cup sugar, and next 4 ingredients.
- Combine eggs, milk, and oil; stir into dry ingredients until just moistened.
- Spread batter evenly onto the bottom of a greased 5-quart slow cooker.
