- In large pan, cook turkey, onion and green pepper until meat is browned; drain. Add remaining ingredients; bring to a boil. Cover, reduce heat and simmer for 25 to 30 minutes.

Steps:
- In a large, heavy pot or a large enameled cast-iron casserole dish, set over medium-high heat, heat the oil.
- Add the ground turkey and cook, breaking the turkey with a wooden spoon and stirring, until browned, about 5 minutes. With a slotted spoon, transfer to a bowl and set aside.
- Add the onions and zucchini to the pot and cook over medium heat, stirring occasionally, until the onions are translucent, about 6-8 minutes.
- Add the garlic, chili, cumin, oregano, salt, and black pepper and cook for 1 minute, stirring constantly.
- Add the turkey, tomatoes with the liquid, beans and chocolate, stir until chocolate melts. Simmer the chili over low heat for 20 minutes, stirring occasionally.
- Serve the garnishes in individual bowls as a toppings bar, or serve individually, topping each bowl with a dollop of sour cream, sprinkle of cheese and scallions. Kids can crumble tortilla chips on top.

BLACK BEAN AND CHOCOLATE CHILI
I know the title seems somewhat bizarre, but the slight "hint" of semi-sweet chocolate gives this vegetarian chili a real depth of flavor. It reminds me somewhat of a sweet, yet spicy mole sauce. This recipe was adapted from one I found in the "Moosewood Restaurant Celebrates" cookbook.

- In a large skillet, heat olive oil over medium heat. Add onions and garlic and sauté until onions become soft and translucent, about 10 minutes.
- Add the celery and chile, cover and cook for another five minutes more.
- Reduce the heat and stir in spices, (cumin, oregano, cinnamon, cloves, coriander, chili powder, black pepper, salt) along with the bell peppers. Cover again and cook for another five minutes. Stir often to keep the spices from burning. If the pan gets too dry add a little liquid from the diced tomatoes, or some water.
- Next, add the black beans, tomatoes, lime juice (if using) and soy sauce. Let the chili simmer on low for 5 to 10 minutes, until it thickens slightly and flavors combine.
- Stir in the chocolate. When chocolate has melted, taste to adjust the salt and pepper. Serve with topping of your choice. I like a bit of vegan cheese, sour "cream" and scallions.
- Chili can also makes a great filling to serve wrapped in flour tortillas, or in taco shells if you prefer.

BUSH'S CHILI BEAN CHILI
This chili is amazing and has great flavor. My sons and I will only use this recipe, we tried others but this is our favorite and chili isn't just for cold winter nights,it is for anytime you are in the mood for chili. I make this alot and there is never any leftovers.

- 1. Heat oil in Skillet. Lightly brown meat, push to the side of the pan, add onion, and garlic (& celery if using). Cook until soft.
- 2. Drain excess fat if using beef. Mix in the remaining ingredients. Simmer 30-45 minutes.
- 3. Very good served over brown rice, white rice,noodles and as for toppings you can add sour cream,grated cheddar cheese,add biscuts or cheese bread sticks. This chili has excellent flavor!

- Brown ground beef in heavy dutch oven or soup pot.
- Add chili powder while browning and mix in well.
- Add onion and pepper to meat and brown for 2 minutes.
- Drain off excess grease.
- Stir in remaining ingredients except for cheese and sour cream.
- Simmer on low heat for 10-15 minutes.
- Serve with shredded cheese and dollop of sour cream.
