DOWN HOME INSTANT POT CHILI
A fast and easy chili recipe that has lots of flavor but isn't too spicy! Perfect for any night of the week or for the chili cook-off contest.

Steps:
- Turn your Instant Pot to the saute setting. When the display says HOT add in the piece of bacon and the onion. The onion will cook in the bacon grease. Stir for a couple of minutes and then add in the beef. Break up the beef and brown it for 5-10 minutes. If there is excess grease spoon it off and discard. Leave the bacon in there for added flavor.
- Add in the kosher salt, pepper, chili powder, cumin, garlic powder, Better than Bouillon and adobo. Stir to really coat the beef in all the seasonings.
- Pour the water into the pot and scrape the bottom of the pot so that it's clean. Turn off the saute setting.
- Next layer the following ingredients on top of the beef and do not stir: chili beans and juices, crushed tomatoes, tomato paste (in dollops). Lastly sprinkle in the cinnamon and cocoa powder.
- Cover the Instant Pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 20 minutes on high pressure. When the time is up let the pot sit for 15 minutes and then move the valve to venting. Remove the lid.
- Stir the chili really well. Then ladle into bowls and serve with toppings. If desired refrigerate the chili and warm up the next day and serve for even better flavor.

- To a large skillet, add oil and heat over MED to MED-HIGH heat. Add onions and bell pepper and cook, stirring occasionally, until softened and very fragrant, about 5 minutes.
- Add ground beef and cook about 5 minutes, crumbling with a wooden spoon or potato masher, until beef is no longer pink. Drain any excess fat, and return beef mixture to skillet.
- Add salt, chili powder, cumin and black pepper and minced garlic, and cook about a minute.

- Start the Instant Pot on "Saute" mode and let it heat up. Wait until the screen says "Hot" and then add the olive oil and the beef.
- Brown the beef for about 5 minutes, adding the onion, garlic, carrots, celery, bell pepper, spices, and salt.
- Continue sauteing for a few minutes more, just until the veggies begin to soften.
- Add the beans, canned tomatoes, tomato puree, and beef stock and stir everything together well.
- Place the lid on the Instant Pot and seal the lid. Place the release valve on "sealing".
- Cook for 10 minutes on "Pressure Cook".

- Heat olive oil in a large and deep non-stick skillet over medium-high heat.
- Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
- Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
- Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
- Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
- Cover with lid and cook on low heat for 5 - 6 hours.

- Press Sauté and select the lowest temperature. Place the olive oil in the inner pot, wait about 1 minute for it to warm, then add the onions, bell pepper, garlic, and jalapeño. Cook with the lid off, stirring occasionally, until the onions soften slightly, about 5 minutes. Add the beef and sauté until no longer pink, about 5 minutes.

- Throw It All Together. With the clean inner pot back in pressure cooker add the tomato sauce, drained beans, diced or canned tomatoes, tomato paste and spices.
- Crank Up the Pressure! The trick, I am learning, is to get enough liquid on the bottom of the pressure cooker to prevent food from sticking to it.
- Let's Eat! When the pressure cooker is done it will go to the "keep warm" stage. This will last for up to 10 hours! but I don't recommend that. Give the steam 5 - 10 minutes to vent naturally then do a quick venting.
