CHEESY, MEATBALL, VEGGIE CASSEROLE
My SO is trying to cut down on carbs and I'm not,so I wanted to come up with a recipe that both of us would enjoy.If desired, you can brown the meatballs for a better flavor.The time for browning the meatballs isn't included in the cooking time. The "ZAAR" database doesn't have the carb count for the meatballs, and the vegetable blend, so my SO and I figured the amount of carbs for 6 servings would be 13 grams for each serving. - Spray a 2 quart baking dish,set aside.
- In a large bowl,combine all ingredients mixing well.

VEGETARIAN MEATBALLS

- Preheat the oven to 400 degrees F.
- In a medium pot, add the lentils and 2 quarts water. Set the pot over high heat and bring the water to a boil. Reduce the heat to low and simmer the lentils until soft but not falling apart, about 25 minutes.
- Pour the cooked lentils through a colander and let cool. In a large frying pan set over a medium-high heat, saute the carrots, onions, celery, garlic, thyme and salt with the 1/4 cup olive oil until the vegetables soften, about 10 minutes.
- When the vegetables are tender and beginning to brown, stir in the tomato paste. Cook, stirring constantly, until the paste darkens, about 3 minutes. Stir in mushrooms and saute, stirring frequently, until completely cooked and browned on edges, about 15 minutes. Remove vegetables from frying pan and set aside to cool.
- In a large mixing bowl, combine cooled vegetables with lentils and all remaining ingredients, save for the 2 tablespoons olive oil and the pesto. Mix until well combined. Place the mixture in the refrigerator to cool completely, about 25 minutes.
- Drizzle the remaining 2 tablespoons olive oil into a large 9-by-12-inch baking dish, making sure to coat evenly. Roll the lentil mixture into round, golf-ball-size meatballs, making sure to pack the balls firmly. Place lentil balls into the oiled baking dish, making sure none of the meatballs touch one another.
- Roast the lentil balls until firm and cooked through, about 30 minutes. Allow the meatballs to cool for five minutes before removing them from the tray. Serve with pesto.
- Preheat the oven to 350 degrees F.
- Spread the walnuts out on a 9-by-13-inch baking dish and roast until golden brown, about 12 minutes. Set the nuts aside to cool.
- Fill a large stockpot three-quarters of the way full with water and bring to a rolling boil over high heat. Next, fill a large bowl with ice water.
- Drop the spinach and basil into boiling water and give the leaves a stir. After 1 minute, remove the greens and plunge them into ice water. Discard the boiling water.
- Once cool, remove the greens from the ice bath and squeeze them dry. Give them a rough chop and transfer to a food processor.
- Add the salt, olive oil and Parmesan to the food processor and blend until a uniform, pesto-like consistency is reached.
CHEESY MEATBALLS IN VEGETABLE SAUCE
Add some cooked pasta or spaghettie and you have a meal, from Super Food Ideas. TIPS - if serving 2 people, transfer half the cooked meatball mixture to an airtight container, cool freeze for up to 2 months, thaw in fridge overnight and reheat over medium high heat until heated through, adding beef stock or water if necessary. You can also freeze uncooked meatballs, following recipe to the end of step 2 - place meatballs in a single layer in an airtight container or snaplock bag (remove air from bag and freeze for up to 2 months, thaw in fridge overnight and commence from step 3 to cook.

- Combine mince, onion, basil, egg and breadcrumbs in a bowl and season with salt and pepper.
- Shape 1 tablespoon of mixture into a flat round and place 1 cheese cube in centre of round and then shape mixture around the cheese to form a ball and then repeat with remaining mixture and cheese cubes.
- Heat 1 tablespoon oil in a frying pan over medium high heat and cook meatballs in batches turning for 3 to 4 minutes or until browned and then transfer to a plate and cover with foil to keep warm.
- Heat remaining oil in pan and add celery, carrot and zucchini and cook, stirring occasionally for 5 minutes or until celery starts to soften and then add tomato and cook stirring for 2 minutes and then add tomato paste, crumbled stock cubes and 1 cup cold water and bring to the boil and then reduce heat to low and simmer covered for 30 minutes or until sauce has thickened.
- Return meatballs to pan and simmer covered for 5 to 7 minutes or until meatballs are cooked through.
- Serve meatballs and sauce with sp[aghetti.

- Finely chop the garlic. Heat the oil in a large pan and fry the onion, stirring frequently, for 8 mins. Stir in the balsamic vinegar and cook for 2 mins more. Meanwhile, put the beans in a bowl with the egg, tomato purée and spices, and mash until smooth. Stir in the almonds and sweetcorn with the thyme, a third of the chopped garlic and the balsamic onions. Mix well and shape into about 8 balls the size of a walnut, and place on a baking tray lined with oiled baking parchment.
- Heat oven to 220C/200C fan/gas 7 and bake the veggie meatballs for 15 mins until firm. Meanwhile, put the tomatoes, tomato purée and balsamic vinegar in a pan and cook with 2-3 tbsp water until pulpy, then stir in the remaining garlic and courgetti. Turn off the heat as you want to warm the noodles rather than cook them. Serve with the veggie meatballs.

THREE-CHEESE MEATBALL LASAGNE

- Squeeze the meat from the sausages and roll into meatballs - you'll get about four balls from each sausage. Heat 1 tbsp oil in a wide, deep frying pan or casserole dish. Cook the meatballs in batches, making sure you don't overcrowd the pan, until they're all golden brown. Put them aside on a plate when they're ready.
- Heat the rest of the oil in the pan and add the onion. Cook for 8-10 mins until soft, then stir in the garlic, fennel, oregano and chilli, if using. Stir around for a min or 2, then add the sugar, passata and tomatoes. Swish a little water around the containers to wash out all the tomatoes and add to the pan. Season well and simmer, uncovered, for 30-40 mins over a gentle heat until the sauce thickens and the chopped tomatoes break down.
- Heat the butter in a saucepan, add the bay leaves and let them sizzle in the butter for 1 min, then add the flour. Whisk to make a smooth paste, then add the milk, a little at a time, stirring continuously until it's all incorporated and you have a thick white sauce. Add the nutmeg and some seasoning. Leave over a low heat for 5 mins to allow the bay to infuse, whisking every now and then.
- Keep about 10 meatballs aside and add the rest to the tomato sauce. Spoon half the tomato sauce and meatballs into a baking dish (ours was 25cm x 35cm). Top with half the spinach, the basil and a little parmesan. Pour over about a third of the white sauce, and top with a layer of lasagne sheets, breaking them up to fit the dish if you need to.
- Repeat the layers once more; meatballs and sauce, spinach, basil, parmesan, white sauce, pasta. Pour the remaining white sauce over the lasagne, spreading it to the corners to cover the pasta. Dot with the meatballs you set aside earlier and the mozzarella, then scatter over a generous helping of parmesan and cheddar. Heat oven to 190C/170C fan/gas 5. Or if not eating straight away, chill for up to 24 hrs or freeze for two months (defrost in the fridge overnight before cooking).
- Bake the lasagne for 40-50 mins until bubbling and golden with lots of crusty cheesy bits around the edges. Leave to sit for 5-10 mins before serving.
