- Preheat oven to 375 F (190 C).
- Meanwhile...Make lunches by mixing chili powder and cumin into meat mixture, then serve 1/2 cup (125 mL) meat mixture into the bottom of a small freezer bag. Roll it up so it forms a tube on the bottom. Freeze. Rinse lettuce in the salad spinner and spin dry. Keep in a vegetable bag in the fridge.Lay out 5 bags of plain nachos along with plastic forks. Before school, each child can stuff the frozen meat bag with lettuce and some grated cheddar. The frozen meat will keep it refrigerated. At lunch, open the nacho bag, crunch them into pieces, transfer lettuce and cheese to the nacho bag and warm up the meat. When meat is hot, add to bag as well. Enjoy your portable taco salad.
SLOPPY JOE UNDER A BUN
I usually keep a can of sloppy joe sauce in the pantry, because our kids love sloppy joes. But sometimes I don't have buns on hand. With this fun casserole, we can still enjoy the flavors that they love in a flash. - In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Stir in sloppy joe sauce. Transfer to a lightly greased 13x9-in. baking dish; sprinkle with cheese. , In a large bowl, combine the biscuit mix, eggs and milk just until blended. Pour over cheese; sprinkle with sesame seeds. Bake, uncovered, at 400° for 25 minutes or until golden brown.

- Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.

SLOPPY JOES
This is my adaptation of my mom's yummy sloppy joe recipe. I like to toast the buns, as they hold together a little better when they are toasty. I usually make a double batch, which gives us enough for dinner with leftovers for lunch. Times are estimated. Tip: my DH loves to add a slice of cheddar cheese before placing the bun top on. They are pretty tasty that way!

- In a large skillet over medium heat, brown beef until no longer any pink; drain.
- Add onions and garlic and cook until onions are transparent.
- Add remaining sauce ingredients and stir to combine. Bring to a simmer; reduce heat and simmer until thickened (about 15 minutes).
- Meanwhile, split buns and spread with butter. Place on a baking sheet and sprinkle with garlic and parmesan cheese. Place under broiler and broil until toasted golden brown. Set aside until sauce is done.
- Taste sauce and correct seasonings, if needed. Serve with toasted buns.
SLOPPY JOES BUN BUGGY
Cute little sandwiches for your little racers! Great addition to a Hot Wheels or Racing themed party (Menu #632).

Steps:
- Hollow out roll leaving a nice size edge. Use toothpick to attach each cucumber slice to the side of the car for wheels. Pull out toothpick and push carrot strip through hole.
- Cut olives in half horizontally. Make two holes in one end of each bun to attach "headlights" with a toothpick. Stick carrot strips into olive hole and into the holes you made in the bun.
- Run onion and celery through food processor until minced. Add mixture to large pan with meat and sauté. Drain fat. Stir in remaining ingredients. Simmer covered for about 15-20 minutes, stirring occasionally. Cook until you reach the desired consistency.
- Place cheese in bottom of bun and spoon mixture on top.
- Press pretzel twist into the Sloppy Joe mixture, making "windshield" on each buggy.

CLASSIC SLOPPY JOES

- In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, and garlic; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes.
- Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
- Stir tomato sauce, ketchup, and Worcestershire sauce into beef mixture in skillet. Simmer until thickened, stirring occasionally, 6 to 8 minutes.
- Season the mixture with more salt and pepper, as desired. Spoon onto buns, and serve immediately.
