Time 20m

Yield 5 servings

Number Of Ingredients 16

Seasonal fruit
1 lb(s) (450 g) extra lean ground beef (per recipe; 2 in one pan, 1 in another for lunches)
1 Tbsp onion flakes (15 mL)
1 cup ketchup (250 mL)
1 Tbsp prepared mustard (15 mL)
1 ½ tsp Worcestershire sauce (7 mL)
½ cup water (125 mL)
8 to 12 whole wheat buns
Meat mixture
½ tsp chili powder (2 mL)
½ tsp cumin (2 mL)
Small freezer zipper type bags
1 head green leaf lettuce
Individual bags of nacho chips (preferably plain and baked)
Plastic forks
1 cup grated cheddar cheese (250 mL)

Steps:

  • Preheat oven to 375 F (190 C).
  • Meanwhile...Make lunches by mixing chili powder and cumin into meat mixture, then serve 1/2 cup (125 mL) meat mixture into the bottom of a small freezer bag. Roll it up so it forms a tube on the bottom. Freeze. Rinse lettuce in the salad spinner and spin dry. Keep in a vegetable bag in the fridge.Lay out 5 bags of plain nachos along with plastic forks. Before school, each child can stuff the frozen meat bag with lettuce and some grated cheddar. The frozen meat will keep it refrigerated. At lunch, open the nacho bag, crunch them into pieces, transfer lettuce and cheese to the nacho bag and warm up the meat. When meat is hot, add to bag as well. Enjoy your portable taco salad.

SLOPPY JOE UNDER A BUN

Sloppy Joe Under a Bun image

I usually keep a can of sloppy joe sauce in the pantry, because our kids love sloppy joes. But sometimes I don't have buns on hand. With this fun casserole, we can still enjoy the flavors that they love in a flash. The bun-like top crust is made with biscuit mix, sprinkled with sesame seeds and baked until golden. -Trish Bloom, Ray, Michigan

SLOPPY JOES

Sloppy Joes image

This is my adaptation of my mom's yummy sloppy joe recipe. I like to toast the buns, as they hold together a little better when they are toasty. I usually make a double batch, which gives us enough for dinner with leftovers for lunch. Times are estimated. Tip: my DH loves to add a slice of cheddar cheese before placing the bun top on. They are pretty tasty that way!

Sloppy Joes Bun Buggy image

Cute little sandwiches for your little racers! Great addition to a Hot Wheels or Racing themed party (Menu #632).

Provided by NcMysteryShopper

Categories     Lunch/Snacks

Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 16

6 hot dog buns (not split)
24 slices cucumbers or 24 slices zucchini
1 carrot, cut into 1-inch matchstick-size strips
6 ripe olives
6 miniature pretzel twists
3 cheese slices, cut in half
1 lb ground beef or 1 lb ground turkey
2 stalks celery
1 small onion
1 (8 ounce) can tomato sauce
1/4 cup ketchup
1/4 cup barbecue sauce
1 tablespoon brown sugar
1 teaspoon dry mustard
1 tablespoon Worcestershire sauce
1 tablespoon vinegar

Steps:

  • Hollow out roll leaving a nice size edge. Use toothpick to attach each cucumber slice to the side of the car for wheels. Pull out toothpick and push carrot strip through hole.
  • Cut olives in half horizontally. Make two holes in one end of each bun to attach "headlights" with a toothpick. Stick carrot strips into olive hole and into the holes you made in the bun.
  • Run onion and celery through food processor until minced. Add mixture to large pan with meat and sauté. Drain fat. Stir in remaining ingredients. Simmer covered for about 15-20 minutes, stirring occasionally. Cook until you reach the desired consistency.
  • Place cheese in bottom of bun and spoon mixture on top.
  • Press pretzel twist into the Sloppy Joe mixture, making "windshield" on each buggy.
