GRILLED SALMON WITH HERBED BUTTER SAUCE

Number Of Ingredients 14

1 (5 to 6 pound) whole salmon
2 to 3 tablespoons olive oil
Salt and freshly ground black pepper
Herbed Butter Sauce, recipe follows
2 shallots, minced
1 tablespoon unsalted butter, plus 1/2 cup cold unsalted butter
1/4 cup Chardonnay
2 tablespoons chicken stock
1 tablespoon white wine vinegar
1 tablespoon lemon juice
1/4 cup heavy cream
1/2 cup packed chopped tarragon leaves
2 tablespoons packed chopped parsley leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F. Preheat a grill to high heat.
  • To make the fish: fillet the fish and remove all bones (You can ask your fishmonger to do this). Season the fish with the olive oil, and salt and pepper. Grill on both sides until the fish has clear grill marks, about 6 minutes per side. Remove from the grill, place on a sheet pan, and finish in the oven.
  • Transfer to a warmed platter and brush with Herbed Butter Sauce.
  • To make the sauce: in a small pan, sweat the shallots in butter. Add the wine, stock, vinegar, and lemon juice and simmer until reduced by half.
  • Stir in 3 tablespoons cream. Add half of the tarragon. Whisk in the cold butter, 1 tablespoon at a time, strain and add remaining tarragon and chopped parsley. Season with salt and pepper to taste.
  • Reserve warm.

3 tablespoons olive oil
1 onion, finely diced
1/4 cup finely chopped parsley, divided
1/2 cup tasso, finely diced
1 cup cornbread crumbs
1/2 to 3/4 cup chicken stock
1 pound lump crab meat, picked through
Salt and freshly ground pepper
2 pounds large shrimp, about 10 per pound, peeled with tails on
Melted butter
10 ounces mixed micro greens
Roasted Tomato Aioli, recipe follows
2 egg yolks*
2 teaspoons salt
2 teaspoons dry mustard
Dash cayenne
1/2 lemon, juiced
4 roasted garlic cloves
Pinch saffron dissolved in 2 tablespoons hot water
3 Roma tomatoes, split and oven dried
1 cup canola oil

Steps:

  • Heat oil in a skillet over medium heat. Saute the onion, tasso ham and 2 tablespoons parsley for 3 to 5 minutes until fragrant. Combine cornbread crumbs with the sauteed ham mixture in a large bowl. Add chicken stock and blend to evenly moisten. Gently fold in crab meat and remaining parsley. Season with salt and pepper. Preheat oven to 400-degrees F. Butterfly the shrimp by cutting almost all the way through the inside curl of the body. Open flat to resemble a butterfly shape and devein. Spoon 2 tablespoons into the cavity of the shrimp, fold the tail over to hold the stuffing in place. Perch the shrimps on a lightly buttered baking dish, tail side up. Drizzle with some melted butter and bake 10 to 15 minutes. Serve on bed of greens with Roasted Tomato Aioli.
  • Begin with all ingredients at room temperature, they will emulsify more readily. In a food processor or blender, process the yolks, salt, mustard, cayenne, lemon juice, garlic and saffron water. Add the tomatoes and process again. With the motor running, add a few drops of the oil, the mixture will begin to thicken. Then, begin adding the remaining oil in a thin, steady stream. Scrape down the sides of the processor/blender. Check and adjust seasonings.

STEWED BLACK-EYED PEAS WITH COUNTRY HAM

1 quart low-sodium chicken stock
1 cup cold water
Salt and freshly ground black pepper
2 tablespoons olive oil
1 cup chopped onions
2 tablespoons minced garlic
2 bay leaves
1 sprig fresh thyme
5 to 6 ounces (about 1 cup) roughly chopped country ham pieces
1 pound dried black-eyed peas, soaked in cold water overnight and rinsed well

Steps:

  • In a medium stockpot, heat the olive oil over medium-high heat. When the oil is hot, add the onions and cook for 2 minutes. Stir in the garlic, bay leaves, thyme, and country ham. Add the black-eyed peas, chicken stock, and 1 cup cold water. Bring the liquid up to a boil, partially cover and reduce to a simmer. Simmer the peas for about 25 minutes, uncover and cook an additional 20 to 25 minutes, or until the peas are tender. Season the peas with salt and pepper as needed.

4 slices bacon, chopped
1 lb spanish chorizo sausage, thinly sliced
1 yellow onion, chopped
1 red bell pepper, chopped
1 celery rib, chopped
2 garlic cloves, minced
2 (14 ounce) cans black-eyed peas, drained
2 (8 ounce) bottles clam juice
1 (28 ounce) can crushed tomatoes
1 teaspoon dried thyme leaves
1 teaspoon paprika
1/2 teaspoon coarse salt
1/2 teaspoon ground red pepper
1/2 teaspoon ground black pepper
1 lb medium shrimp, peeled, deveined
1 pint grape tomatoes, halved
5 green onions, white and some green, thinly sliced
1/4 cup chopped flat leaf parsley

Steps:

  • Cook bacon in a Dutch oven over medium-high heat, turning once, until crisp, about 4 minutes. Stir in sausage; cook, stirring, until sausage begins to brown. Transfer bacon and sausage to a paper towel. Add onion, bell pepper and celery to the Dutch oven; cook, stirring, until vegetables begin to soften, about 4 minutes. 12 ounces ham hocks (two or one large one)
2 tablespoons vegetable oil
1/4 lb other ham or 1/4 lb sausage (**If there is no Tasso Recipe here on Recipezaar I will post one-it's worth making)
1 cup chopped yellow onion
1/2 cup chopped green bell pepper
2 tablespoons minced garlic
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne
2 bay leaves
1 lb black-eyed peas, rinsed and picked over
2 quarts chicken stock or 2 quarts low-sodium chicken stock
2 tablespoons minced fresh flat leaf parsley

Steps:

  • With a sharp knife score the fat on the ham hocks 1/4-inch deep.
  • Heat the vegetable oil in a large heavy stockpot over medium high heat.
  • Add the tasso and cook, stirring often, until heated through, about 3 minutes.
  • Add the onions and bell peppers and cook, stirring often, until softened, about 4 minutes.
  • Add the ham hocks, garlic, salt, pepper, cayenne, and bay leaves.
  • Cook, stirring often for 2 minutes.
  • Add the black-eyed peas and chicken stock.
  • Bring to a boil over high heat.
  • Reduce heat to medium low.
  • Simmer uncovered until the peas are tender, about 45 minutes to 1 hour, stirring often and skimming off any foam that forms.
  • Remove the bay leaves and discard.
  • Cut the meat from the hock, discarding the skin and bones.
  • Return meat to the pot.
  • Stir in the parsley.
  • Serve.

Steps:

  • Cook bacon in a 12" heavy skillet over medium heat until browned but not crisp. Transfer bacon to a plate, then tear into small pieces.
  • Cook scallions, carrot, celery, bell pepper, 2 large garlic cloves, bay leaf, thyme, red pepper flakes, 1/8 tsp salt and 1/4 tsp pepper in bacon fat in skillet over medium heat, stirring occasionally until vegetables are pale golden, about 10 minutes. Add black-eyed peas and broth and simer for 5 minutes. Transfer to a bowl.
  • Heat oil in skillet over medium-high heat until it shimmers.
  • Season shrimp with 1/4 tsp salt and 1/2 tsp black pepper. Cook shrimp with remaining garlic, stirring occasionally, untiljust opaque (shrimp will not be fully cooked), about 3 minutes. Add wine and bring to boil, then briskly simmer for 2 minutes. Add bacon and black-eyed pea mixture and simmer until just heated through (mixture will be juicy). Discard bay leaf.
