TOMATO AND PEPPER SIRLOIN STEAK

1/2 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds beef top sirloin steak, thinly sliced
3 tablespoons canola oil
1 small onion, chopped
1 garlic clove, minced
1 can (28 ounces) diced tomatoes, undrained
2 large green peppers, cut into strips
2 to 3 tablespoons beef broth
1-1/2 teaspoons Worcestershire sauce
Hot cooked rice

Steps:

  • In a large bowl or shallow dish, combine flour, salt and pepper. Add beef slices, a few pieces at a time. Toss gently to coat., In a Dutch oven, heat oil over medium-high heat. Brown beef in batches. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add tomatoes; bring to a boil. Reduce heat. Simmer, covered, stirring occasionally, until meat is tender, 10-15 minutes., Stir in green peppers, broth and Worcestershire sauce; simmer, covered, until peppers are tender, 10-15 minutes. Serve with rice.

Yield Serves 4; 3 ounces beef and 1/2 cup topping per serving

1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
2 medium garlic cloves, minced
1 teaspoon dried oregano, crumbled
1/4 teaspoon pepper
1 pound boneless top sirloin steak, all visible fat discarded, cut into 4 pieces
2 cups grape tomatoes or cherry tomatoes, halved
2 tablespoons chopped kalamata olives
2 tablespoons crumbled fat-free feta cheese
1 tablespoon red wine vinegar

Steps:

  • In a large shallow glass dish, stir together the lemon zest, lemon juice, garlic, oregano, and pepper. Add the beef, turning to coat. Cover and refrigerate for 30 minutes to 8 hours, turning occasionally.
  • Meanwhile, in a medium bowl, stir together the topping ingredients. Cover and refrigerate until ready to serve.
  • Drain the beef, discarding the marinade.
  • Heat a large nonstick skillet over medium-high heat. Cook the beef for 4 to 5 minutes on each side, or to the desired doneness. (If you prefer, grill the beef on medium high or broil it 5 to 6 inches from the heat as directed.) Serve the beef with the topping.

Use a feta that is not too salty, there can be quite a difference in flavor when you buy feta cheese. You can substitute the fresh tomatoes for sun-dried if you like a more pungent flavor, but use less and taste it before you add more. Add several tablespoons of milk to turn the dip into a dressing. Also very good to spread on a sandwich and top it with tomato and cucumber slices.

8 ounces feta cheese, cubed
2 tablespoons chopped parsley or 2 tablespoons coriander
1 clove crushed garlic
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon hot paprika or 1 teaspoon sweet paprika
2 ounces cottage cheese
fresh ground pepper
2 -3 tablespoons olive oil
2 tomatoes, skinned,seeded and chopped
1 red onion, finely chopped
3 tablespoons chopped black olives or 3 tablespoons green olives (or more)
lemon juice

Steps:

  • Put the first eight ingredients in the food processor and mix, transfer to a bowl and add the olive oil, tomatoes, onion and olives.
  • Add the lemon juice, put in the fridge for at least one hour, serve with melba toast, crackers or pita bread strips.

5 large tomatoes (about 3 pounds), cored, sliced
1 red onion, halved, thinly sliced
1/2 cup olive oil
1/2 cup red wine vinegar
1/4 cup chopped fresh parsley
3 large garlic cloves, finely chopped
4 ounces feta cheese (about 1 generous cup), crumbled
1/3 cup brine-cured olives, preferably Kalamata (optional)

Steps:

  • Overlap tomato and onion slices on large platter. Whisk oil, vinegar, parsley and garlic in small bowl. Season to taste with salt and pepper. Pour over salad. Let stand at room temperature 1 hour or cover and refrigerate up to 3 hours, basting occasionally with dressing.
  • Sprinkle salad with cheese and garnish with olives, if desired.

Tender baby potatoes tossed with briny kalamata olives and then topped with a tangy tomato-onion mixture and a generous crumble of feta cheese. This versatile side is hearty enough to make a satisfying main for the vegetarians in the family.

Number Of Ingredients 15

1 1/2 pounds baby Yukon Gold or other thin-skinned yellow potatoes
2 tablespoons olive oil
2 medium red onions (quartered and sliced thinly)
4 medium garlic cloves (minced)
1 1/2 teaspoons dried oregano + another 1/2 teaspoon for topping
1 teaspoon ground cumin
1 fresh red chili (an jalapeno would also work)
2 teaspoons granulated sugar
1 tablespoon white wine vinegar
1 14-ounce can diced tomatoes, drained
30 pitted kalamata olives
3 ounces crumbled feta cheese
Salt and freshly ground black pepper
Olive oil for drizzling
Plain yogurt and lemon wedges for topping/serving

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Fill a large pot about halfway with water, and add the potatoes. Set on the stove over high heat and bring to a boil. Boil for about 20 minutes or until tender. Drain potatoes and rinse with cool water. Set aside until cool enough to handle, then cut into thick slices.
  • Add the olive oil to a heavy pan set over medium heat. Cook the onions until soft, about 5 minutes. Add the garlic, cumin, chili, and oregano and cook, stirring, for another minute. Stir in the sugar, vinegar, and tomatoes. Add a couple pinches of salt and a bit of freshly ground black pepper. Taste and add additional salt if you'd like.
  • Add the potatoes to the baking dish and top with olives. Toss lightly. Pour the tomato mixture over the top. Crumble the feta over the tomatoes, drizzle with a little olive oil, and sprinkle with the remaining 1/2 teaspoon oregano.
  • Bake for 25 - 30 miinutes until heated through.
  • Serve hot, topping individual servings with dollops of yogurt and lemon juice as desired.
