Steps:
- 1. Heat oven to 350 degrees.
- 2. Cook noodles according to package directions.
- 3. In large skillet, heat oil; add onion and mushrooms and saute until onions are translucent.
- 4. Stir in pasta sauce and 1/4 cup of the soy sauce; heat through.
- 5. In medium bowl, combine ricotta cheese, eggs and remaining soy sauce.
- 6. Spread a layer of sauce on the bottom of a 9- x 13-inch baking dish.
- 7. Layer with noodles, cheese mixture and mozzarella cheese. Continue layering, ending with a final layer of noodles and meat sauce.
- 8. Cover with foil; bake 30 minutes. Let stand 15 minutes before serving.

- In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
- Preheat oven to 375 degrees F (190 degrees C).
- To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
- Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

HEALTHIER WORLD'S BEST LASAGNA
This truly is the World's Best Lasagna! I love this recipe but I am always looking for ways to take out the fat when I cook. I substituted lean ground turkey and turkey sausage for the meat. I also used lite mozzarella and cut out the egg and salt.

- If using regular lasagna noodles, cook as directed on package.
- Combine cheese& eggs; mix together well.
- Lightly spray baking dish with vegetable spray such as Pam.
- If using wine and/or the sugar, mix with marinara.
- Spread 1 cup marinara sauce in bottom of baking dish.
- At this point, if you care to, you can mix the remainer of the marinara sauce with the cooked ground beef.
- Easier and faster to layer that way.
- Lay 4 noodles on sauce in dish.
- Spread 1/2 the cheese mixture on noodles.
- Layer 1/2 the spinach on top of cheese mixture.
- Spread 1/2 the ground beef and marinara on top of spinach layer.
- Repeat layers once again: noodles, cheese, spinach, ground beef and marinara.
- Add one more layer of noodles.
- Spread jar of Alfredo Sauce over last layer of noodles.
- Cover and cook at 350 degrees for 40 minutes.
- Uncover and cook 15 minutes more.
- Can sprinkle more grated Parmesan on top for the last 15 minutes if desired.
- After cooking, it helps to let it sit for 10-15 minutes before cutting.
- Reduces the filling running out of the lasagna layers.
AMAZINGLY RICH LASAGNA
If you love lasagna and want something with a rich taste this is it! This recipe is a little different than traditional lasagna...I got bored w/the normal cottage cheese or ricotta recipe and came up with this one! My boyfriend absolutely loves it and asks me on regular basis to make it again!

- Preheat oven to 375. Spray bottom of casserole dish (I use 13X9, can use larger). Brown hamburger meat in pan, add 3 gloves garlic before fully browned. Drain any fat. Stir in jar of plain spaghetti sauce and 1/2 jar of 3 cheese blend sauce. Heat til warm/bubbly.
- In large bowl, combine cream cheese, ricotta, parmesan, 3 1/2 C mozzarella, and 2 eggs. Add oregano, parsely, and garlic powder. Stir until combined, mixture will be thick.
- To assemble lasagna, pour 1/2 C remaining 3 cheese blend sauce onto bottom of pan. Place 3-4 lasagna noodles on top of sauce, overlapping edges of pasta a little, spread 1/2 cheese mixture onto pasta, top with meat sauce, repeat. Pour remaining 1/2 C 3 cheese blend sauce onto top layer of noodles, top with remaining 1/2 C mozzarella. Cover with foil and bake 30 minutes. Remove foil and bake uncovered for 10 minutes. Remove from oven, let cool about 10 minutes and enjoy!
CREAMY SCALLOP LASAGNA

- Preheat oven to 350 degrees F.
- Melt 1 tablespoon butter in a large saute pan over medium-high heat.
- Add the mushrooms and cook until golden, about 5 minutes.
- Reduce heat to medium and add the green onions, shallots, and garlic, and saute for 3 minutes.
- Transfer the mushroom mixture to a bowl and set aside.
- Do not rinse out this pan- we're going to use it again in the upcoming steps.
- Rinse the scallops under cold water, then pat dry with a paper towel and season with the white pepper.
- Increase the pan heat to medium-high and, in the previously-used pan, melt another 1 tablespoon butter.
- Saute the scallops until just opaque, about 2 to 3 minutes.
- Be careful to not overcook.
- Season with salt and transfer to a strainer set over a bowl to let it drain.
- Reserve drained liquid.
- Cook the lasagna noodles according to package directions.
- Drain, rinse immediately with cold water and then drain again.
- Toss with 1 Tbsp olive oil and set aside.
- Now to start the sauce!
- Over medium heat melt the remaining butter in a saucepan.
- Add the flour and cook, stirring constantly to keep it from browning.
- Gradually add the chicken broth, cream, and vermouth.
- Cook, stirring occasionally, until smooth and thickened, about 5 minutes.
- As soon as sauce begins to boil, remove it from the heat.
- Season with thyme and basil.
- Stir in 1/4 cup of the reserved strained scallop juice.
- Lightly spray the bottom of a 9x13-inch baking pan with pan spray.
- Pour the half-and-half into the bottom of the baking pan.
- Lay 4 noodles in a single layer in the pan.
- Layer with 1/3 each of the mushroom mixture, scallops, and shredded cheeses.
- Then coat with 1/3 of the sauce.
- Repeat the process twice, ending with the sauce.
- Sprinkle with grated Parmesan.
- Cover pan with foil and bake at 350F for 20 minutes, then remove foil and bake 20 minutes longer.
- Remove from oven, cover, and let sit 15 minutes before serving.

- Preheat the oven to 400 degrees F and position the oven rack in the middle.
- To make the meat sauce, heat the olive oil in a large saucepan. Add the onion and cook over medium-low heat until translucent (about 5 minutes). Add the garlic and stir for one more minute. Then add the sausage and cook over medium-low heat. Breaking it up with a wooden spoon, for 10 to 15 minutes, or until fully cooked and no longer pink. Add the crushed tomatoes, tomato sauce, tomato paste, oregano, basil, sea salt, and freshly ground black pepper. Simmer uncovered over medium-low heat for 20 minutes.
- Soak lasagna noodles in hot tap water.
- While the sauce is simmering, make the cheese filling In a large bowl, combine the ricotta, 1 cup of Parmesan, the beaten egg, chopped parsley, sea salt, and freshly ground black pepper. Set aside.

WONDERFUL LASAGNA
This is not low fat, and is nothing but pure comfort food. Serve with yummy garlic bread and a salad. It also includes 8 hours of sitting time for the sauce, but I think everyone knows how much better Italian tastes the day after. This 8 hours of sitting lets the sauce develop. The cook time does not include the 8 hours of chilling time, so plan for that! I make the meat sauce the day before, and assemble the next day.

- Remove the sausage from the casings. Cook the sausage, ground chuck, 1/2 cup green onions, and garlic in 3-4 tbsp olive oil in a large skillet until the meat is browned, stirring to crumble the meat; drain. Add the tomato sauce, tomato paste, 1/4 tsp oregano, dash of basil, salt and pepper; stir well. Bring to a boil; cover, reduce heat, and simmer for 30 minutes, stirring frequently. Cover and chill for 8 hours.
- Combine the Monterey Jack cheese, ricotta cheese, cottage cheese, 1/2 cup minced green onions, parsley, beaten egg, basil, and oregano in a medium bowl; stir well, and set aside.

- Spoon half of the reserved meat sauce in a lightly greased 13 x 9 x 2 inch baking dish. Layer half of the reserved ricotta cheese mixture over the meat sauce; top with half of the spinach mixture. Arrange the noodles evenly over the spinach mixture. Repeat layers with half of the meat sauce, ricotta cheese mixture, and spinach mixture.
- Sprinkle the remaining 1 cup of Monterey Jack cheese evenly over the lasagna mixture; top evenly with Swiss cheese slices.
- Bake at 350 degrees for 40 to 45 minutes or until the cheese melts and the mixture is hot and bubbly.
