- In a large skillet, cook turkey, mushrooms, pepper and onion over medium heat 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking turkey into crumbles; drain. Stir in garlic; cook 1 minute longer., Stir in beans, salsa, green chilies, chili powder, cumin, salt and pepper sauce. Cook, uncovered, 4-5 minutes or until heated through. Add cheese and corn; heat through. Spread about 1/3 cup filling over each tostada shell. Sprinkle with lettuce, tomatoes and cilantro. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Serve on tostada shells with toppings.

- Mix ground turkey, bread crumbs, onion, green onion, egg, garlic, parsley paste, Worcestershire sauce, hot pepper sauce, and salt together in a bowl. Cover bowl with plastic wrap. Refrigerate at least 1 hour.

- In a cold 12-inch skillet, combine oil, garlic and ginger. Place over medium heat until sizzling, then continue to cook, stirring frequently, until garlic and ginger are golden brown, 5 to 7 minutes. Transfer with a slotted spoon to a paper towel-lined plate and sprinkle lightly with salt.
- Add coconut oil to pan, then stir in scallion whites and cook until starting to brown, about 2 minutes. Stir in red-pepper flakes and cook for 1 minute.
- Stir in turkey, raise heat to medium-high, and cook, breaking up meat with a spoon, until golden and crisp, about 7 minutes. Don't stir the meat too much, so it can turn deep brown.
- Remove pan from heat and stir in lime juice, fish sauce and soy sauce. Taste and add more lime juice, red-pepper flakes, soy sauce and sugar or honey if you like.
- Gently mix about two-thirds of the fried garlic and ginger into the turkey. Serve turkey over rice, topped with cilantro, basil, scallion greens and fresh chile, and garnished with remaining fried ginger and garlic.
TANGY TURKEY SAUTE
This utilizes turkey breast slices and really turns it into something special. With garlic, thyme and lots of fresh mushrooms, this dish from Amy Wenger of Severance, Colorado really packs the flavor. But the really special aspect of it is the use of Marsala wine. Marsala is an rich Italian dessert wine used often in cooking. Most of the alcohol is cooked out, leaving a delicious sauce behind, but if you don't want to use the wine, feel free to substitute chicken broth.

SAUTEED TURKEY WITH TEQUILA CREAM SAUCE

- Heat 2 tablespoons oil in heavy large skillet over high heat. Season turkey strips with salt and pepper. Add to skillet and saute until brown but still pink inside, about 1 minute per side. Using slotted spoon, transfer turkey to platter.
- Heat remaining 2 tablespoons oil in same skillet. Add shallots and mushrooms and saute until brown, about 3 minutes. Add tequila and boil until reduced by half. Add chicken stock and boil until reduced by half. Add creme fraiche and simmer until sauce is reduced to sauce consistency. Return turkey to sauce. Stir in salt, white pepper and Tabasco.
- Spoon turkey and sauce over Spaetzle. Sprinkle with epazote leaves.
TURKEY BOLOGNESE

- Heat the oil in a heavy large frying pan over medium heat. Add the onion and garlic and saute until translucent, about 5 minutes. Add the carrot and celery and saute until the vegetables are tender, about 5 minutes. Add the turkey and saute 1 minute. Add the marinara sauce. Decrease the heat to medium-low and simmer gently for 15 minutes to allow the flavors to blend, stirring often. Stir in the basil. Season the sauce, to taste, with salt and pepper. (The sauce can be made 1 week ahead. Cool the sauce completely, then transfer it to a container and freeze for future use. Bring the sauce to a simmer before using.)
- Meanwhile, cook the spaghetti in a large pot of boiling salted water until just tender but still firm to bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid. Add the pasta to the sauce and toss to coat, adding enough reserved cooking liquid to moisten as needed. Serve with the Parmesan.

- Separate 6 biscuits into 2 rounds each. Gently stretch each round into a 5-inch circle. Press into cups of a non-stick muffin tin.

- Heat the oil in a large frying pan. Add half the onions, the garlic and some seasoning, and cook for 5 mins. Add the mince and cook until thoroughly browned. LINGUINE WITH TURKEY SAUTE
This light, tasty casserole is a good way to use left-over holiday turkey. It's a healthy alternative to those traditional post-holiday meals of gravy, stuffing and cranberry sauce. This is the recipe as written, but since I find the sage to be a little overpowering, I use less. Sometimes I substitute the sage for dill and add chopped garlic. The beauty of this recipe is that you can flavor it almost any way that you want to; make it spicy or not, depending on your tastes.

- Prepare pasta according to directions (6- 8 minutes).
- Two minutes before pasta is done, add broccoli flowerets to water.
- Cook 2 minutes; drain pasta and broccoli in colander.
- In a large skillet, warm the butter over medium heat.
- Add the onion, carrots, and celery; saute 3 minutes.
- Stir in the flour.
- Add the chicken broth and sage; stir in the turkey meat.

CREAMY TURKEY SAUTE
I used to make this all the time, but I can't find turkey breast steaks anymore at the grocery stores in my town. You can use chicken breasts, though. - Cut the turkey steaks in half crosswise, put in ziptop bag, pour in soy sauce, turn to coat, and marinate for 15 minutes. Remove from marinade and pat dry.
- Spray large saute pan generously with cooking spray, heat up, then add the turkey breast pieces to the pan and cook over medium heat until light brown, about 3 minutes per side.
- Remove turkey pieces to a platter and keep warm.
- Add mushrooms, onion and garlic to the drippings in pan, adding more cooking spray if needed. Saute for 3-4 minutes, or until tender.
- Stir in cream cheese, wine and thyme. Add salt and pepper to taste.
- Nestle the turkey peices back into the sauce along with any juices that have accumulated on the platter, and simmer for 15 minutes, until the turkey steaks are done through.

SARASOTA'S SWEET AND TANGY TURKEY FRENCH DIP SANDWICH
A great sandwich as an alternative to a traditional french dip. Deli turkey, sauteed onions and apples for a bit of a sweet flavor. A pretty traditional horseradish sauce, with a bit of a sweet honey and mustard and then a savory/sweet turkey au jus dipping sauce. The au jus and horseradish can easily be made ahead, which makes this just minutes to put together. Serve with some sweet potato fries or potato salad.

- Mustard Horseradish Sauce -- Just mix the mayo, horseradish, mustard, honey, apple juice, and thyme. Add to a small bowl, cover and refrigerate. Done. You can easily make this ahead.
- Apple Au Jus -- In a small pot, add the broth, apple juice, honey, Lipton seasoning and bring to a boil. Stir well and immediately reduce and simmer until it naturally thickens. About 5 minutes. This can easily be made and ahead and just reheated right in the microwave on on the stove.
- Onions and Apples -- In a small saute pan, add the butter and bring to medium heat. Add the onions, apples and pinch of salt and saute for 3-5 minutes until the onions and apples are soft, but not "mush." Season with a little pepper and set to the side as you make the sandwiches.
- Rolls -- As the onions and apples saute, put the rolls inside facing up under the broiler and toast very lightly. Keep the broiler on.
- Sandwich -- Spread the bottom bun with a little of the dressing. Then dip the turkey slices in the warm au jus, just to get a little juice on it and layer on the sandwich. Top with the warm onions and apples and 2 slices of the cheese. Put under the broiler for just a minute until the cheese melts. Top with the other roll, also slathered with the dressing.
- Serve -- Cut in half and serve with the warm au jus, 1/4-1/3 cup per person. ENJOY!
