SCALLOPED POTATOES WITH SMOKED SAUSAGE



Scalloped Potatoes with Smoked Sausage image

No cheese? No problem! These easy potatoes have all the creaminess you've come to expect from scalloped potatoes without using a bit of cheese. (Oh, and the addition of smoked sausage is de-lish!)

Number Of Ingredients 6

5 lb russet potatoes, washed, peeled and sliced thinly
1 1/2 ropes of eckrich smoked sausage --other brands still taste good, but not as good!
1/2-3/4 c pure butter (margarine will work, but not as good) if you do not have a full 1 1/2 links of sausage, you could use the larger amount of butter.
3/4 c all purpose flour
1 can(s) evaporated milk
salt and pepper (desired quantity)

Steps:

  • 1. Preheat oven to 350F. Spray an 8 x 13 inch casserole with vegetable spray. (I use the butter flavored.)
  • 2. Place a layer of sliced potatoes to cover the bottom of the casserole. Then dot with about 1/2 of the smoked sausage and 1/3 of the butter.* Sprinkle lightly but generously with flour, and salt and pepper. Add another layer, just like the first, and continue until potatoes and sausage are used up (ususally 2 layers). Finish up with the sprinkling of flour and salt & pepper.*
  • 3. Pour evaporated milk over to cover, moistening all of the flour on top. Add enough water or additional milk to ensure all of the potatoes are damp and most of them covered (not necessarily all, but most).
  • 4. *If you don't care about too much fat, you can add dots of sour cream and sprinkle with grated cheese of your choice as well. Oooo La La!
  • 5. Bake uncovered for at least an hour. Top should be browned and all bubbly. Test potato to see if it is tender. If it is too hard or stiff still, bake a little longer until potato tests done. Try one especially underneath in the milk. Especially good with steamed brocolli florets. I steam them, stir in a tiny bit of butter, and lemon juice.

1/2 cup chicken broth

Steps:

  • Arrange layer over potatoes in greased casserole dish.
  • Sprinkle with salt.
  • Repeat layering, ending in potatoes.
  • Mix cream and broth, pour over potatoes.
  • Sprinkle cheese over top and cover dish with foil.
  • Preheat oven to 400 degrees and bake for 30 minutes.
  • Remove foil and continue baking for another 10 minutes.

1 medium yellow onion, finely chopped
4 tablespoons olive oil, divided
1/3 cup thousand island dressing
3 slices American cheese

Steps:

  • First, start caramelizing the onions: heat 2 tablespoons oil in a large skillet over medium heat for 1-2 minutes. Place the onions in the skillet and let cook, without stirring, for 5-8 minutes, until the bottom sides have started to brown. Once the bottom sides have started to brown, reduce the heat to low and continue cooking, stirring occasionally, until the onions are thoroughly browned, about 20 minutes.
  • After the onions have been cooking for about 15 minutes, start cooking the potatoes. Heat remaining 2 tablespoons oil in a separate skillet over medium heat for 1-2 minutes. Add potatoes and cook, covered, until the potatoes are easily pierced with a fork, about 15 minutes. Stir occasionally.

4 large poblano peppers (fresh)
1 cup heavy cream
1 cup four-cheese Mexican blend cheese (preferably Crystal Farms)
8 taco shells (we like the Stand & Stuff variety)

Steps:

  • Roast poblanos over gas stove burner or beneath broiler, turning frequently, until blistered and beginning to blacken in spots. (Stove top is best, but if you don't have a gas burner, use the broiler carefully - do not overcook - need to have firm texture) Place hot poblanos in paper bag, fold bag to close and allow peppers to steam 5 minutes.
  • Preheat oven to 350?F.
  • While peppers are steaming, lightly spray interior of 12 inch non-stick skillet with non-stick cooking spray.
  • Heat over medium high heat until hot and add potatoes in a single layer. Cover and cook over medium high heat for 4 minutes without stirring. Remove lid, and turn potatoes over, re-cover and continue to cook over medium high heat 4 minutes. Do not stir - this allows potatoes to lightly brown on the edges which contributes a great texture to the finished dish. Repeat steps one more time and cook an additional 4 minutes.
  • While potatoes are cooking, remove peppers from bag, cut each pepper open, remove stems, seeds and veins, and open up to flatten each pepper onto cutting surface, skin side up. Scrape off blistered skin (ok if some remains) and slice peppers into ¼ inch strips.
  • When potatoes have cooked a total of 12 minutes, remove lid and stir pepper strips into potatoes. Add 1 cup heavy cream, stir and continue to cook over medium high heat, uncovered, until cream thickens 2-3 minutes.
  • Stir in cheese, remove from heat and cover.
  • Bake Taco Shells according to package directions until desired degree of crispness.
  • Spoon potatoes rajas into warm taco shells and serve.

2 (2 2/3 ounce) Italian sausages
1 (16 ounce) package refrigerated pizza dough
1 1/2 cups marinara sauce
1/2 cup canola oil, divided

Steps:

  • Oil a large bowl with 2 tablespoons oil, place pizza dough in bowl turning once, let warm to room temperature.
  • In a 12 inch skillet on medium heat, heat 2 tablespoons of oil.
  • Remove casings from sausage links, break up meat into small pieces, and brown in skillet for 5 minutes.
  • Add diced potatoes, stir, and cover, Cook for 12 minutes, stirring every 3 minures. Cover skillet between stirring.
  • Prepare 15 1/2 inch by 10 1/2 inch rimmed baking pan by oiling pan with 2 tablespoons oil.

50g unsalted butter, plus extra for the dish
1 onion, thinly sliced
2 garlic cloves, chopped
50g plain flour
500ml whole milk
250ml chicken or vegetable stock
1kg Maris Piper potatoes, thinly sliced (use a mandoline for the best results)
75g parmesan, finely grated

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a deep 20 x 30cm baking dish. Melt the butter in a pan over a medium heat and cook the onion and garlic with a pinch of salt for 8-10 mins until the onion has softened slightly. Tip in the flour, stir well, then cook for a few minutes more. Mix the milk and stock together, then gradually pour this in, whisking well between additions until everything is incorporated and you have a smooth sauce. Simmer for a few minutes, then season well.
  • Lay half the sliced potatoes in a single layer in the buttered dish, slightly overlapping them if needed. Pour over half the sauce, then scatter over half the parmesan. Arrange the remaining potatoes on top, then pour over the remaining sauce and scatter with the remaining parmesan. Cover with foil and bake for 1 hr, then remove the foil and bake for another 30 mins until golden on top.

1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
2 tablespoons butter
2 tablespoons all-purpose flour

2 cups milk
4 medium red potatoes, halved and thinly sliced (3-1/2 to 4 cups)
1/4 cup chopped onion
2 tablespoons minced fresh parsley, optional

Steps:
