- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the butter, white sugar and brown sugar. Beat in the eggs, one at a time, then stir in the 3/4 cup peanut butter. Combine the oats, flour and baking soda; stir into the creamed mixture until well blended. Press the dough evenly into the prepared pan.
- Bake for 15 to 20 minutes in the preheated oven, until firm. In the microwave or over a double boiler, melt chocolate chips and 1/2 cup peanut butter together, stirring frequently until smooth. Spread over cooled bars and allow to set up before cutting into squares.

- To make the crust: If the pecans aren't roasted when you buy them, roast them a bit before you start.
- Make sure they are a golden brown.
- Grind them finely.
- Mix them with the rest of the crust ingredients and press into a 9 inch pie plate.
- Put it in the fridge for about 10 minutes to set.
- To make the filling: Blend the icing sugar and cream cheese.
- Add the vanilla and the peanut butter and mix till no streaks are left (well blended).

Steps:
- Whisk the cornstarch with a little bit of the milk until very smooth and the cornstarch is completely dissolved. Add this mixture back to the rest of the milk, and set aside.
- In a medium, heavy bottomed saucepan, add the brown sugar along with a couple tablespoons water and melt the mixture until it starts to bubble.
- Add the milk and the salt to the saucepan, and whisk everything together. It's ok if the sugar seizes up, it will melt again as the pudding cooks.
- Over medium heat, continue to cook the mixture, stirring constantly, until it just comes to a boil.
- Remove from the heat and whisk in the peanut butter and the vanilla extract until completely smooth.
- Pour the pudding into your pudding cups, and allow to chill in the fridge for a few hours, or up to overnight. Serve with whipped cream and crushed peanuts, if desired.

- Measure peanut butter into a bowl.
- Heat peanut butter in microwave for 20 seconds.
- Spread approximately 1/2 cup peanut butter into bottom of each crust (about 1 cup total).
