ZIPPITY-DO-DAH BAKED ZITI
I have had this recipe for a couple of years and got it from another site, but I did several modifications to the original. It makes a LOT! Great OAMC recipe!

Steps:
- Preheat oven to 350.
- Cook ziti according to package. Drain.
- Cook italian sausage along with garlic and onion until browned. Drain. Return sausage mixture to pan. Add in spaghetti sauce, sugar, and spices. Stir.
- Combine sour cream and cottage cheese.
- Grease 13x9 with cooking spray.
- Layer in the pan 1/2 of noodles, 1/2 of sauce, all of the provolone, all of the sour cream/cottage cheese mixture, 2nd 1/2 of noodles, 2nd half of sauce, mozzarella, and parmesan.
- Bake in oven for 20-30 minutes or until heated through and cheeses are melted.

BAKED ZITI

Steps:
- Heat the olive oil in a pot over medium heat. Add the garlic and onions and saute until starting to soften, 3 to 4 minutes. Add the ground beef and sausage and cook until browned. Drain off almost all of the fat, leaving a bit behind for flavor and moisture. Add the tomato sauce, tomatoes, Italian seasoning, red pepper flakes and some salt and pepper. Stir, bring to a simmer and simmer for 25 to 30 minutes. Remove 3 to 4 cups of the cooked sauce to a bowl to cool down.
- Bring a large pot of water to a boil and add some salt. Cook the ziti until not quite al dente.
- Preheat the oven to 375 degrees F.
- In a bowl, mix 2 cups of the grated mozzarella, the ricotta, Parmesan, parsley, eggs and some salt and pepper. Stir together just a couple of times (do not mix completely).
- Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps). Add the cooled reserved meat sauce and toss to combine.
- Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella. Repeat with another layer of the coated pasta and the remaining sauce and mozzarella.
- Bake until bubbling, about 20 minutes. Let stand 5 minutes before sprinkling with chopped parsley to serve.
FIRE ISLAND ZITI FOR TWO

- Toss the tomatoes with 1 tablespoon oil, garlic and salt. Place cut side down in a 15x10x1-in. baking pan. Bake at 450° for 20-25 minutes or until tender. Chop when cool enough to handle., Cook ziti according to package directions, adding broccoli during the last 4 minutes. Meanwhile, in a large skillet over medium heat, cook sausage in remaining oil until no longer pink. Add pepper flakes; cook 1 minute longer. Stir in tomatoes and heat through. , Drain ziti mixture; toss with sausage mixture. Sprinkle with cheese.

I was raised on my mother making this dish. I make itnow for my family's weekly Meatless meal because it's so hearty you don't really miss the meat I always use my zippy red sauce recipe but you can use your favorite pasta sauce. for a gret meal serve with my Last garlic bread you'll ever eat and caeser salad with my Low Fat caeser dressing

- preheat oven to 350 degrees.
- Cook ziti until halfway done.
- in oil sautee the onion and pepper and carrot until tender.
- Drain ziti and return to saucepan, adding veggies.
- stir in sauce, ricotta cheese and 1/2 of the mozzerella and parmsean.
- spoon unto a 2 quart baking dish op with remaining cheese.
- Bake 30 minutes or until heated through.

CROWD-PLEASING BAKED ZITI
This isn't your mama's baked pasta! My zippy ziti boasts all the comfort and heartiness of Mom's but with little kick from crushed red pepper flakes. Feel free to take the heat up a notch by using hot Italian sausage instead of sweet. The dish is easy to transport, making it great for potlucks.

- In a large saucepan, cook the beef, sausage, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the tomatoes, tomato sauce, bay leaf, Italian seasoning, basil, sugar, salt, pepper flakes and pepper., Bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Uncover; simmer 15-30 minutes longer or until sauce reaches desired thickness. Discard bay leaf. Cool., Meanwhile, cook pasta according to package directions; drain. In a large bowl, combine 1 cup sauce mixture, 1 cup mozzarella cheese, 1/4 cup Romano cheese, 1/4 cup Parmesan cheese and pasta., Spread 1-1/2 cups sauce mixture into a greased 13x9-in. baking dish. - Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. In a large saucepan, heat marinara with 1 teaspoon basil until bubbling. In a medium bowl, mix together ricotta, 1 teaspoon Italian seasoning, salt and pepper.
- Spread bottom of a 9x13 inch baking dish with sauce. Layer 1/2 of the ziti, 1/2, the sausage, 1/2 of the ricotta, and 1/2 the mozzarella. Spoon half of the sauce over top. Repeat layers. Sprinkle top with remaining 1/2 teaspoons basil and Italian seasoning.
- Bake in preheated oven for 40 to 45 minutes.
