Time 12h15m

Number Of Ingredients 5

(4) 3 ounce boxes Jello gelatin (, assorted colors)
4 cups boiling water
(2) .25 ounce envelopes unflavored gelatin
2 cups hot water
14 ounce can sweetened condensed milk

Steps:

  • Dissolve each box of jello into its own individual container, using 1 cup of boiling water per flavor (no more than 1-inch deep.) Chill until solid, about 3 hours or overnight.
  • Once solid, cut each of the different flavors into small square cubes.
  • Using a 9×13 glass dish, gently mix the cubes together in an even layer (being very careful not to break or tear them.)
  • In a medium-sized bowl, dissolve 2 envelopes of unflavored gelatin in 2 cups of hot water. Let the hot mixture cool slightly and then whisk in the sweetened condensed milk.
  • Let mixture cool to the touch (If it's too warm, it could melt the Jello cubes.) Then evenly pour the mixture over the cubes of Jello.
  • Chill in the refrigerator overnight.
  • Cut into squares and serve.

Time 15m

Yield 16 serving(s)

Number Of Ingredients 12

4 ounces lemon Jell-O gelatin or 4 ounces orange Jell-O
4 ounces lime Jell-O gelatin
4 ounces raspberry Jell-O gelatin or 4 ounces strawberry Jell-O gelatin dessert
1 ounce unflavored gelatin (1 package)
1/4 cup cold water
1 cup hot pineapple juice
2 cups whipping cream
1/2 cup sugar
1 teaspoon vanilla
2 dozen graham crackers
1/2 cup soft margarine
1/2 cup sugar

Steps:

  • For Jello: Make the three kinds of jello, dissolving each in 1 and 1/2 cups hot water. Set into separate square or cake pans, for thin layer of jello and chill until firm, or overnight.
  • For Crust: Crush graham crackers. Mix with butter and sugar. Line a spring-form pan or pie dish with mixture. Set aside some of the crumb mixture, this will later be used as a topping. Place the graham crumb base in the fridge so that it starts to harden.
  • For Filling: Soften unflavored gelatin in cold water; dissolve in hot pineapple juice. Whip cream, adding sugar and vanilla when almost whipped, while pineapple-gelatin mixture is cooling. When cool, fold into whipped cream.
  • Cut flavored jello into small 1/2 inch cubes; fold into filling. Pour into pan over crust and sprinkle with remaining crust mixture. Chill six to eight hours or overnight.

BROKEN GLASS CAKE

Broken Glass Cake image

The name does not accurately describe this dessert but since it has been a family favorite for so many years I am loathe to change it. This is a light, child-friendly dessert we instituted for the children at Christmas. It is especially well-received after a heavy meal. You will be asked for seconds!

Time 8h

Yield 12

Number Of Ingredients 13

1 (3 ounce) package lime flavored Jell-O® mix
1 (3 ounce) package orange flavored Jell-O® mix
1 (3 ounce) package strawberry flavored Jell-O®
3 cups boiling water, divided
3 cups cold water, divided
1 cup canned pineapple juice
1 (.25 ounce) package unflavored gelatin
2 ½ cups graham cracker crumbs
½ cup butter, melted
½ cup brown sugar
2 cups chilled heavy cream
½ cup white sugar
1 teaspoon vanilla extract

Steps:

  • Place lime, orange, and strawberry gelatin mixes into 3 separate 9x9-inch glass dishes.
  • Pour 1 cup boiling water into each flavor of gelatin mix; stir the gelatin until dissolved.
  • Pour 1 cup cold water into each flavor of gelatin, stir to combine, and refrigerate the 3 flavors of gelatin until set, at least 4 hours.
  • Heat pineapple juice in a saucepan until hot but not simmering. Stir unflavored gelatin into pineapple juice until dissolved. Refrigerate pineapple juice mixture until cool and thickened, about 30 minutes. Stir occasionally.
  • Mix graham cracker crumbs, melted butter, and brown sugar together in a bowl. Set 1 cup of crumb mixture aside for garnish. Press remaining 2 cups crumb mixture into the bottom of a 9x13-inch cake pan to make a crust.
  • Pour cream into a large metal mixing bowl and beat with an electric mixer until the cream is fluffy and forms soft peaks, about 3 minutes. Slowly beat sugar into whipped cream, 1 or 2 tablespoons at a time; beat in vanilla extract.
  • Cut the different flavors of gelatin into cubes. Use a thin spatula to lift the cubes away from the bottom of the dish and loosen them.
  • Very gently fold the thickened pineapple juice and gelatin cubes into the whipped cream mixture until thoroughly combined. Spoon into the graham cracker crust.
  • Sprinkle the cake with reserved graham cracker crumb mixture.
  • Refrigerate until set, at least 3 hours to overnight.

  • Make a double batch of each flavor of Jello (a double batch using the two boxes of strawberry, and a double batch using the two boxes of blueberry) according to package instructions in two 9×13-inch pans. Refrigerate until completely chilled.
  • Remove the jello and use a knife to cut each batch into small squares (mine were about 1/2-inch). Carefully remove all squares from the pans, then mix and layer the blocks into a new 9×13-inch pan.
  • In a separate bowl, sprinkle 2 envelopes unflavored gelatin into 1/2 cup cold water and let it sit for 3 minutes. After the gelatin blooms, add 1 1/2 cup boiling water and stir to dissolve. Stir in the can of condensed milk. Then refrigerate mixture for 20-30 minutes until cooled. Pour cooled milk mixture evenly over jello. If need be, use a toothpick to pop any bubbles that have arisen to the surface (just to make it look smooth). Chill overnight.
