The way you measure your flour is key in this iconic cookie recipe. In Food Network Kitchens, we spoon flour into the measuring cup and level it off with a knife. We find this to be a more accurate way to measure than scooping.

Categories     dessert

Time 1h45m

Yield 28 to 30 cookies

Number Of Ingredients 9

2 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Fine salt
14 tablespoons unsalted butter, melted and cooled slightly
1 1/4 cup granulated sugar
1/4 cup packed light brown sugar
1 large egg
4 teaspoons ground cinnamon

Steps:

  • Adjust oven rack to the middle position and preheat oven to 400 degrees F. Whisk together the flour, baking soda, cream of tartar and 1/4 teaspoon salt in a medium bowl.
  • Add the butter, 1 cup of the granulated sugar, brown sugar and egg to the bowl of a stand mixer fitted with a paddle attachment (or a large bowl if using a hand mixer). Beat on medium speed just to combine, about 30 seconds. Add the flour mixture in 2 parts and beat on low until just combined. Let the dough rest at room temperature for 30 minutes.
  • Whisk together the remaining 1/4 cup granulated sugar and cinnamon in a small bowl.
  • Form the dough into 1 1/4-inch balls (about 1 tablespoon dough per cookie). Roll each ball in the cinnamon-sugar and coat well; arrange on two baking sheets, 2 inches apart. Do not flatten the balls, as they will spread a lot in the oven.
  • Bake one sheet of cookies at a time until the tops look cracked and the center still feels soft, about 9 minutes. Let the cookies cool in the pan for 3 minutes; they will continue cooking during this time. Once they've firmed up a little, transfer them to a rack to continue cooling. Store the cooled cookies in an airtight container for up to 3 days.

CLASSIC SNICKERDOODLE COOKIES

Classic Snickerdoodle Cookies image

These childhood favorites get their tangy flavor from an old-school leavener: cream of tartar. We've kept the recipe super traditional by using an all-butter dough, omitting the vanilla to let the tart flavor shine, and rolling the cookies in plenty of cinnamon-sugar before baking for a glistening finish.

Provided by Katherine Sacks

Categories     Cookies     Cinnamon     Bake     Dessert     Kid-Friendly     Small Plates

Yield Makes about 2 dozen

Number Of Ingredients 8

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 cup (1 stick) cold unsalted butter, cut into 1/2" pieces
1/4 teaspoon kosher salt
1 cup sugar, divided
1 large egg, room temperature
2 teaspoons ground cinnamon

Steps:

  • Whisk flour, baking soda, and cream of tartar in a medium bowl. Using an electric mixer on medium speed, beat butter in a large bowl until pale yellow, 2-3 minutes. Scrape down sides, add salt and 3/4 cup sugar, and continue to beat until light and fluffy, 3-4 minutes more. Scrape down sides, add egg, and blend until just incorporated. Reduce mixer speed to low and gradually add dry ingredients, beating until just incorporated.
  • Gather dough into a ball, wrap ball in plastic wrap, and chill until firm, about 30 minutes.
  • Place racks in upper and lower thirds of oven; preheat to 375°F. Line 2 rimmed baking sheets with parchment paper. Mix cinnamon and remaining 1/4 cup sugar in a small bowl. Using your hands, roll tablespoonfuls of dough into balls. Roll balls in cinnamon sugar, then transfer to prepared sheets, spacing about 2" apart.
  • Bake cookies, rotating sheets halfway through, until just golden brown around the edges, 8-10 minutes (cookies will firm up as they cool). Let cookies cool on sheets a few minutes, then transfer to wire racks and let cool completely.

WORLD'S BEST SNICKERDOODLES

World's Best Snickerdoodles image

Title says it all. DO NOT OVERBAKE THEM, or you will be sorry. Best to pull them out when they look a little raw and let them harden a bit on the cookie sheet. I have given these as gifts, sold them, and made them for guests, but I never have any left over by the end of the day. They are also very pretty, with the nice "broken" top characteristic of Snicks.

Provided by Teresa in CO

Categories     Dessert

Time 18m

Yield 36 cookies, 36 serving(s)

Number Of Ingredients 10

1 cup unsalted butter
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla (this is an occasion worthy of GOOD vanilla!)
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2 teaspoons cinnamon

Steps:

  • Preheat oven to 400 degrees F.
  • Cream together butter and sugar.
  • Add in eggs, one at a time, along with vanilla, until well-combined.
  • Mix dry ingredients (flour, salt, soda, cream of tartar) in a separate bowl. Add dry ingredient mix into the wet mix in 2-3 stages.
  • Mix the 2 tablespoons sugar and the cinnamon together in a small bowl.
  • Use your hands to roll dough into little (ping-pong ball-sized) balls.
  • Roll dough-balls in the cinnamon/sugar mixture so they're covered all the way around. Place them on an ungreased cookie sheet, 2 or 3 inches apart.
  • Bake 7 or 8 minutes, until they have spread out and have JUST started to turn brown. Remove from cookie sheets and place cookies on cooling rack to cool and set a little. If they're not completely cooked when they come out of the oven, let them cook a bit more on the cookie sheets, out of the oven. 7-8 minutes will make a nice, chewy cookie with a little crispness on the bottom.

240g plain white flour
1 medium egg (fridge temperature)
2 pinches of salt
1 tsp baking powder
½ tsp vanilla
160g unsalted butter (at a cool room temperature)
160g white caster sugar
240g plain white flour
1 medium egg (fridge temperature)
2 pinches of salt
1 tsp baking powder
½ tsp vanilla
150g fresh blueberries, washed and dried
160g unsalted butter (at a cool room temperature)
160g white caster sugar
240g plain white flour
1 medium egg (fridge temperature)
2 pinches of salt
1 tsp baking powder
½ tsp vanilla
150g fresh blueberries, washed and dried
50g dried apricots, chopped
60g dried banana chips (placed in a mug and just covered with boiling water and allowed to soak for 15 minutes and then drained).
160g unsalted butter (at a cool room temperature)
160g white caster sugar
240g plain white flour
1 medium egg (fridge temperature)
2 pinches of salt
1 tsp baking powder
½ tsp vanilla
150g fresh blueberries, washed and dried
50g dried apricots, chopped
60g dried banana chips (placed in a mug and just covered with boiling water and allowed to soak for 15 minutes and then drained).
50g chopped walnuts
60g raisins
160g unsalted butter (at a cool room temperature)
160g white caster sugar
240g plain white flour
1 medium egg (fridge temperature)
2 pinches of salt
1 tsp baking powder
½ tsp vanilla
150g fresh blueberries, washed and dried
50g dried apricots, chopped
60g dried banana chips (placed in a mug and just covered with boiling water and allowed to soak for 15 minutes and then drained).
50g chopped walnuts
60g raisins
1 eating apple (peeled and chopped into pieces no bigger than a pea
160g unsalted butter (at a cool room temperature)
160g white caster sugar
240g plain white flour
1 medium egg (fridge temperature)
2 pinches of salt
1 tsp baking powder
½ tsp vanilla
150g fresh blueberries, washed and dried
50g dried apricots, chopped
60g dried banana chips (placed in a mug and just covered with boiling water and allowed to soak for 15 minutes and then drained).
50g chopped walnuts
60g raisins
1 eating apple (peeled and chopped into pieces no bigger than a pea
30g caster sugar
2 tsp ground cinnamon

Steps:

  • The recipe makes about 24 snickerdoodle cookies. It's divided in half to make two different flavours of snickerdoodles at a time (approx 12 each). Choose from blueberry, banana and apricot, walnut and raisin or apple. Most cookie recipes use a higher proportion of sugar and butter which makes them either crisp and thin or soft and chewy. For a less sugary treat, I've used a lower ratio of sugar, which creates light and cakey texture - the added fruit and nuts provide extra natural sweetness.
  • Preheat the oven to 180C, Gas 4.
  • Ensure the butter is at a cool room temperature. Mix the butter with the sugar in a large bowl and beat with an electric mixer until light and fluffy.
  • Add the salt, vanilla and egg to the butter and continue mixing until combined and smooth and fluffy, about 3 to 4 minutes.
  • Weigh the flour and put into a bowl, add the baking powder and mix well with a whisk. Add to the butter mix and blend on a low speed with the electric mixer, or a wooden spoon until it just comes together. Let the dough rest in the fridge whilst measuring the added ingredients.
  • Divide the mixture in half and add one choice of ingredients to each half
  • Mix the cinnamon sugar and put in a wide flat bowl. Using a soup spoon, scoop out dough and work in the palms of hands to make a small golf ball size ball. Roll this in the cinnamon sugar and place on a baking sheet. Press down in a firm stroke to slightly flatten the ball to a disc about 2cm thick. The cookies do not spread very much, but allow plenty of space between each. Ideally, cook one tray of cookies at a time.
  • Bake toward the top of the oven for between 12-15 minutes until browned at the edges. Remove from the oven and leave on the baking tray to cool for a few minutes. Then transfer to a rack and cool completely. Store in an airtight container.
  • Tips: The snickerdoodles are also good plain, or with added chocolate chips. Sprinkle any leftover cinnamon sugar on hot buttered toast...
