Throw some of those bananas on the barbi! A scrumptious dessert that will make your tastebuds jump for joy! Try pouring a drop of your favorite liquor over the bananas and ice cream just before serving.

4 bananas
1 tablespoon lemon juice
1 cup brown sugar
1 teaspoon ground cinnamon
2 cups vanilla ice cream

Steps:

  • Preheat grill for low heat.
  • Halve each of the bananas lengthwise, then widthwise. Sprinkle bananas with lemon juice. In a small bowl, mix together the brown sugar and cinnamon. Roll banana pieces in sugar/cinnamon mixture until well coated.
  • Lightly oil the grill grate. Arrange bananas on preheated grill, and cook for 3 minutes per side. Serve in a bowl with vanilla ice cream topped with a sprinkling of remaining cinnamon/sugar mixture. Yum!

Make the foil parcels for these BBQ rum bananas in advance, then place them in the dying coals while eating your main - the perfect end to a summer barbecue

50g butter , softened
40g light brown muscovado sugar
1-2 tsp treacle
1-2 tbsp spiced rum
6 unpeeled bananas
ice cream , to serve (we like coconut)

Steps:

  • Mix the butter with the sugar and treacle, then add the rum. Make a split through the inside curve of each banana skin - be careful not to cut all the way through. Spread a spoonful of the spiced butter inside each skin.
  • Place the bananas, curved-side up - so the butter doesn't leak when it melts - onto individual sheets of foil large enough to wrap them completely. Crimp up the foil to make a parcel, then put onto the embers for 15 mins, turning once. The bananas should be sticky and caramelised, but check one and cook for longer if necessary. Serve with a scoop of ice cream.

Posted for RecipeZaar World Tour 2006. Use a small long dish with low sides to place your foil into while assembling these so that you don't let the liquid escape while you are folding up the parcel. REGION: New Zealand.

4 large bananas
60 ml dark rum (4 Tablespoons)
50 g demerara sugar (2 oz)
1 large orange, juice and zest of (grated)
2 1/2 ml ground cinnamon (1/2 teaspoon)
25 g butter (1 oz) or 25 g margarine (1 oz)
orange slice, to decorate
whipped cream or ice cream, for serving

Steps:

  • Cut 4 large rectangles of baking foil, peel the bananas (keeping them whole) and lay one on each piece of foil. Stab them carefully in several places with a small toothpick.
  • Mix together rum, sugar, orange juice and cinnamon, add to each parcel and place 1/4 of the butter on top of the banana in each parcel.
  • Carefully join up the long sides of the foil over the banana and fold over several times to seal, then fold up the short ends of the foil so that the liquid can not escape during cooking.
  • Place the parcels on the BBQ and grill for 15 minutes, turning them over once after 7 minutes.
  • Open the parcels carefully and transfer to serving dishes, pour over liquid that is left in the foil, decorate with orange slices and serve with whipped cream or icecream.
