2 loaves thin whole wheat bread

Steps:

  • Mix together the first three ingredients: refrigerate at least 8 hours.
  • Spread mayonaisse mixture on bread, trim crusts if desired* cut bread in forths diagonally.
  • *hint*when trimming crust from bread; use electric knife.
  • Do the same for mutiple sandwiches.
  • Stack, and let knife glide down.
  • No more ragged or torn bread.

My family loves these sandwiches, they are especially great using garden tomatoes, I make them using Pepper Jack cheese but American cheese slices works good also, you can adjust the butter amount to suit taste.

4 slices cooked bacon
5 tablespoons soft butter, divided (or to taste)
4 slices bread (white or whole wheat)
4 slices monterey jack pepper cheese (or use American cheese)
4 slices tomatoes

Steps:

  • Spread about 1 tablespoon butter into the bottom of a large skillet (or just leave some fat in the pan from the bacon).
  • Spread 1 tablespoon (can use more) onto one side of each slice of bread.
  • Place the 4 slices of bread butter-side down onto a large skillet or flat grill.
  • Top with 1 slice of cheese, 2 slices of tomato and 2 slices cooked bacon, then 1 more slice of cheese.
  • Cover with a slice of bread (butter-side facing outside).
  • Fry over medium turning once with a spatula until golden brown on both sides.

8 slices Vienna bread, 1/2 inch thick

Steps:

  • In 12-inch nonstick skillet, cook bacon over medium heat about 4 minutes, stirring occasionally, until almost cooked. Add onion. Cook 2 to 3 minutes, turning occasionally, until tender. Remove bacon and onion from skillet. Reserve 1 tablespoon drippings in skillet.
  • To make each sandwich, layer cheese, bacon and onion between 2 bread slices. Place 2 sandwiches in drippings in skillet. Cover and cook over medium-low heat 3 to 5 minutes, turning once, until bread is crisp and golden brown and cheese is melted. Repeat with remaining sandwiches.

3 strips thick-cut, naturally cured bacon (see note)
2 slices high-quality sandwich bread, such as shokupan
2 tablespoons (30ml) homemade or store-bought mayonnaise (see note)
1 1/2 cups finely shredded iceberg lettuce (see note)
4 thick slices ripe tomato (see note)
Coarse sea salt, such as fleur de sel or Maldon
Freshly ground black pepper

Steps:

  • Place a griddle or skillet over medium-low heat. Add bacon and place a bacon press, skillet, or masonry trowel on top of it to keep it flat as it cooks. Cook until lightly browned on first side, about 5 minutes, then flip, cover again, and continue cooking until bacon is browned on both sides and fat has rendered, about 3 minutes longer. Transfer bacon to a paper towel-lined plate and set aside.
  • Place bread on same skillet or griddle and toast in bacon fat over medium-low heat, swirling occasionally, until evenly browned on first side. Flip and brown second side.
  • Lay toasted bread on a work surface and spread mayonnaise on both top faces. Divide lettuce evenly between both pieces of bread. Layer tomato slices on 1 piece of bread and sprinkle generously with coarse salt and freshly ground pepper.
  • Break bacon slices in half and layer them onto the sandwich in 2 layers of 3 half slices each, alternating the orientation of bacon in each layer for more structural stability. Close sandwich and cut in half diagonally. Serve immediately.

French Toast with Bacon, Onion and Tomato Jam image

8 slices bacon, cut into 1/4-inch lardons
Extra-virgin olive oil
1 small onion, cut into 1/4-inch dice
Kosher salt
Pinch of red pepper flakes
1 medium beefsteak tomato, seeded and cut into 1/2-inch dice
2 sprigs oregano, leaves finely chopped
For the French toast:
4 large eggs
1 cup whole milk
Pinch of cayenne pepper (optional)
8 slices white bread
1 cup grated Gruyere or monterey jack cheese
For the eggs:
2 tablespoons chopped fresh chives

Steps:

  • Make the filling: Toss the bacon into a large skillet with a few drops of olive oil. Bring the pan to medium heat and cook the bacon until brown and crisp, about 13 minutes. Spoon off about half of the drippings. Add the onion to the pan and season with salt and the red pepper flakes. Continue to cook, stirring occasionally, until the onion is soft and very aromatic, 8 to 10 more minutes. Add the tomato, season with more salt and cook another 8 to 10 minutes, or until the tomato is soft and mushy and most of the liquid has evaporated. Taste and reseason if needed. Stir in the oregano and let cool.
  • Make the French toast: Preheat the oven to 200 degrees F. In a wide dish, combine the eggs, milk, cayenne (if using) and a pinch of salt. Beat until smooth and homogeneous.
  • Lay 4 slices of bread on a work surface. Sprinkle each piece of bread lightly with cheese (use about half of the cheese). Spoon a quarter of the bacon filling onto each piece of bread, then sprinkle with the remaining cheese. Top each slice with another piece of bread and press to secure. Working in batches, soak each "toast" in the egg mixture, about 1 minute; flip and soak the other side.
  • While the toasts are soaking, coat a large saute pan with olive oil and bring the pan to medium heat. Working in batches so you don't crowd the pan, cook the toasts for 2 to 3 minutes per side. The toasts should be golden brown, lovely and crisp-YUM! Transfer the toasts to a baking sheet and place in the oven to keep warm.
  • Make the eggs and assemble: Coat a large nonstick skillet lightly with olive oil and bring to medium heat. Add the eggs to the pan, working in batches if necessary. Cook until the whites are cooked through and the yolks are warm and runny, 3 to 4 minutes. Remove the toasts from the oven and top each with a perfectly fried egg. Sprinkle with chives and serve immediately.

  • In medium, broilerproof, nonstick skillet, cook bacon until crisp.
  • Using slotted spoon, transfer bacon to paper towels to drain.
  • Pour off all but 1 tblsp drippings from skillet.
  • Add olive oil to skillet.
  • Add sliced onion and cook over medium-high heat until golden, stirring frequently, about 5 minutes.
  • Reduce heat to medium-low.
  • Add chopped tomatoes and cook until almost all liquid evaporates, stirring frequently, about 10 minutes.
  • Preheat broiler.
  • Whisk eggs in large bowl until frothy.
  • Whisk in bacon, basil and season to taste.
  • Pour into skillet with vegetables.
  • Cook over medium heat until bottom is just golden and top is still unset, occasionally lifting edges of frittata and tilting pan to let uncooked egg run underneath, about 10 minutes.
  • Sprinkle top with Parmesan cheese.
  • Broil frittata until top puffs and turns golden, about 3 minutes.
  • Slide frittata onto platter.
  • Serve warm or at room temperature, cutting into wedges.

One 28-ounce can Italian plum tomatoes, preferably San Marzano
1/2 teaspoon coarse sea salt or kosher salt, or to taste, plus 1 tablespoon for the pasta pot
4 cups 1/3-inch-thick onion slices (about 3/4 pound)
4 tablespoons extra-virgin olive oil, plus more for serving
4 plump garlic cloves, peeled and crushed
6 ounces guanciale, pancetta, or bacon, cut in 1/2-inch pieces
1/2 teaspoon peperoncino flakes
1 pound bucatini or perciatelli
1 cup grated Pecorino Romano cheese, plus more for passing
Recommended Equipment
A heavy-bottomed skillet or sauté pan, 13- or 14-inch diameter

Steps:

  • Drain the canned tomatoes; save all the juices. Cut each tomato in quarters lengthwise; slice the quarters in strips, 1/2 inch wide.
  • Start heating 6 quarts of water with 1 tablespoon of salt in a large pot, to cook the bucatini.
  • Put 1/2 cup water in the wide skillet, and set it over medium-high heat. Dump in the sliced onions; spread them out and turn them over in the pan as the water starts to boil. Cook the onions, turning occasionally, for several minutes, until they're softened and the water is nearly evaporated.
  • Pour the olive oil over the onions, toss in the crushed garlic cloves, and sprinkle with 1/4 teaspoon salt. Stir well to coat all the onion slices with oil; cook for a couple of minutes or more, until onions and garlic are sizzling.
  • Clear a space on one side of the skillet and scatter in the cured pork (guanciale, pancetta, or bacon). Heat and stir in the hot spot until they're rendering fat and sizzling, then stir in with the onions. Sprinkle the peperoncino in the pan, stir, and let everything cook for 4 or 5 minutes, until the onions and pork are caramelized and golden-adjust the heat so nothing burns.
  • Now spill all the sliced tomatoes and their juices into the skillet, and stir well. Rinse the tomato containers with a couple cups of "slosh" water, and stir that in too; season with salt lightly. Bring the sauce to a boil, stirring frequently, and then lower the heat to keep it simmering actively. Let the sauce cook and thicken for about 20 minutes, or until it has the consistency you like for pasta. (If you're pressed for time, concentrate the sauce at a boil, stirring frequently.)
  • When the tomatoes have been added and the sauce is simmering, you can start cooking the bucatini. (If you prefer, prepare the sauce ahead of time. Stop cooking when nearly thickened and let it cool. Return it to the simmer as your pasta cooks.)
  • With the water at a rolling boil, slide the bucatini into the pasta pot, letting the strands soften so they don't break, and fanning them out so they don't stick together. Stir well, cover the pot to bring the water back to the boil over high heat, then cook partially covered.
  • Stir the bucatini occasionally, and check doneness frequently. When the sauce has thickened, taste it and adjust seasoning-keep in mind that the Pecorino Romano will add salt.
  • When the bucatini are cooked through but still al dente, lift them from the cooking pot with tongs, drain for just a moment, then drop them right onto the simmering sauce. Toss together continuously, over moderate heat, for a couple of minutes, until the pasta is perfectly cooked and evenly coated with sauce. If the dish is dry, ladle in a bit of hot pasta water from the cooking pot. If the sauce is soupy, toss over higher heat to concentrate.
  • Turn off the heat, and toss in the grated cheese. Drizzle over it a final flourish of olive oil, and serve, either directly from the skillet or in a warm serving bowl, passing additional cheese at the table.

This recipe is something I created the other night for some friends and they loved it. It is probably your "Doctor's Worst Nightmare" kind of recipe, but try it and indulge yourself now and again.

1 lb bacon
2 onions (diced)
4 garlic cloves (sliced)
1 (28 ounce) can diced tomatoes (drained)

Steps:

  • Cut bacon slices into 4 pieces and cook over medium heat in a large sauce pan. You may have to do this in 2 batches.
  • Cook bacon until a golden brown, but NOT crispy. You do not want any burnt edges.
  • Remove bacon and place on paper towels to absorb fat.
  • Add roughly diced onions and cook on medium heat until translucent.
  • Add your garlic and continue cooking until onions appear to start turning golden brown.
  • Strain mixture with a sieve over a bowl, as you want to reverse the bacon fat.
  • Put mixture back into pan and add a half of the diced tomatoes.
  • Cook, toss and turn for about 5 minutes.
  • Return bacon and bacon fat back into mixture and heat through.
  • Pour over your favourite pasta and sprinkle with cheese and fresh basil leaves.
