Steps:
- Place roast in a 3- to 4-qt. slow cooker; top with onion. Combine the broth, water, chipotle peppers, adobo sauce, gravy mix, Creole seasoning, chili powder and cumin; pour over meat. Cover and cook on low until meat is tender, 8-10 hours., Remove roast; cool slightly. Skim fat from cooking juices. Shred beef with 2 forks and return to slow cooker; heat through. Using a slotted spoon, place meat on rolls. Serve with guacamole or salsa if desired and the cooking juices. Freeze option: Freeze individual portions of cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally. BEST BEEF DIP EVER
Wow...A favorite with all my family and friends. I refuse to give any of them the recipe because it is so easy. I love it when they keep asking for it! I often throw all the ingredients into slow cooker and head to work. We all eat when ever we get in the door. The au jus is great! Add beef to lightly toasted buns, and dip away in the au jus.

Steps:
- Mix refried beans, pinto beans, Rotel tomato's, cheese (I leave a little cheese to add to the top before I bake) and place in an 8x8 baking dish.
- Bake at 350 for 20-30 minutes ot until heated thru.
- After cooling slightly, put a layer of sour cream (depending on taste, I like a little thicker layer myself) followed by the chopped onion and if you choose, the jalapeno's (I put the jalapeno's on top so people can eat around them if they want).
- Serve with dip size Fritos or Tortilla chips.
- (I have used this same recipe with flour tortillas for simple bean burritos at a childs birthday party. I just used mild Rotel and nixed the jalapeno's).

BEEF & BEAN BURRITOS
Years ago I lived in Baton Rouge, La and frequented a restaurant called La Fonda's. They had a unique burrito that I loved. I have tried to recreate it with this recipe and it is very close. A difference is, I think, that they deep fried the tortilla shell where mine is baked.

- Brown beef (and chorizo if desired)in olive oil. Add the onions, garlic, cumin, white pepper, red pepper flakes, black pepper, and salt. Add chipotle powder if used. When the beef (and chorizo if used)has browned, add thee taco seasoning and water and stir in well. Now add the refried beans and chili beans and mix in well. Do not drain the chili beans. (Additional water may be used if the mixture is too dry). Simmer for 10 minutes to allow the beans to heat and the flavors to blend.

- Makes 8 hearty servings.
- May be served with Pico de Gallo or a lettuce & tomato salad or Spanish rice.

- Heat oil in a skillet over high heat. Add garlic and onion, cook for 2 minutes until onion is lightly browned. Add beef and cook, breaking it up as you go, until it turns from red to brown.
- Add Taco Seasoning (or use 1 packet store bought) and cook for 1 minute. Then add tomato paste and water, cook for 3 minutes until the water is mostly evaporated but the beef is still juicy, not dried out. Set aside to cool for 10 minutes – piping hot filling will steam the burrito, making the tortilla soggy.
- Place a burrito on a work surface. Place 1/4 - 1/3 cup of rice just below the centre. Top with 1/4 - 1/3 cup beef, then some lettuce, corn, black beans, tomato, a sprinkle of red onion, coriander and cheese.
