COPYCAT OF ARBY'S CHICKEN SALAD SANDWICH
This is the actual Arby's Chicken Salad Sandwich recipe from the restaurant. This is a scaled down version, so I'm guessing on serving sizes. You may need to have more bread and lettuce on hand.

Steps:
- 1. Combine the first six ingredients and mix well.
- 2. Use two pieces of bread and one lettuce leaf for each sandwich.
- 3. Slide lettuce leaf on to one piece of bread.
- 4. Put two large scoops of chicken salad mixture on lettuce leaf; top with other piece of bread.

Steps:
- Preheat the oven to 400 F.
- Lay a sheet of aluminum foil flat on the counter.
- Place the thin sliced roast beef in the center of the foil and fold up all four sides to completely enclose the beef.
- Bake in the preheated oven for 10 to 15 minutes.
- When the beef is almost done, heat the cheddar cheese sauce in a microwave safe bowl for 30 seconds or until heated through.
- Place the bottom half of the onion bun on a plate and top with the Country French with Orange Blossom Honey Dressing. Click for Ken's Steak House Country French with Orange Blossom Honey Dressing.
- Layer on the roast beef slices piled high.
- Spread the heated cheese sauce on top of the roast beef.
- Top the sandwich with the remaining half of the onion bun.

- In a medium sized bowl add diced apple, and one tablespoon of lemon juice. Stir lemon juice into apples coating them well. This will help keep the apples from turning brown. Add chicken, sliced grapes, diced celery, and pecans. Mix well until everything is mixed through. Add 1/2 cup mayonnaise, if the mixture is too dry you can add another 1/4 cup of mayonnaise. Add salt and pepper to taste. Allow flavors to marry in a covered bowl in the refrigerator for about 1 hour before serving.
- To prepare sandwich like Arby's use thickly sliced wheat bread, add a couple of slices of green leaf lettuce, and add about 1 cup of chicken salad to the sandwich.
- While they do not toast their pecans, I think you could easily bring this salad to the next level by toasting the pecans in a skillet on medium high heat just until they become fragrant. Allow the pecans to cool completely before preparing the chicken salad.
