Steps:

  • Heat oven to 400°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie plate.
  • In large bowl, mix blueberries, 1/2 cup of the sugar, the tapioca and lemon juice. Spoon into crust-lined pan. Top with second crust; seal edge and flute. Cut slits in several places in top crust. Brush top crust with milk; sprinkle with remaining 1 tablespoon sugar.
  • Place foil or cookie sheet on oven rack below middle rack to catch any spills. Place pie on middle oven rack. Bake 40 to 45 minutes or until crust is golden brown and filling is bubbly. After 30 minutes of baking, cover crust edge with foil to prevent excessive browning, if necessary. Cool at least 2 hours before serving. Serve warm or cold.

1 recipe pastry for a double-crust 9-inch pie, divided
5 cups fresh blueberries (preferably wild)
½ cup white sugar
¼ cup all-purpose flour
½ teaspoon ground cinnamon, or more to taste

¼ cup butter, cut into small pieces
1 tablespoon milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Press 1 pie crust pastry into the bottom and sides of a 9-inch pie pan.
  • Stir blueberries, sugar, flour, and cinnamon together in a large bowl. Add almond extract; stir to coat. Pour blueberry mixture into the prepared pie crust. Dot the blueberry mixture with butter pieces. Top with second pie crust, crimping the two crusts together. Brush top crust with milk. After trying many recipes, I have finally come up with the ultimate blueberry pie recipe. It is incredibly simple with few ingredients to let the blueberry flavor shine through without being too thick or too runny.

4 cups fresh blueberries or 4 cups frozen blueberries
1/2 cup sugar (or more, depending on sweetness of berries)
1/4 cup all-purpose flour
1/2 teaspoon cinnamon
1 pinch nutmeg
2 (9 inch) pie crusts (homemade or store bought)

Steps:

  • Preheat oven to 400 degrees F.
  • Press one of the pie crusts into a 9" glass pie dish, making sure to press the bottom and sides gently against the glass dish.
  • Combine the sugar, flour, cinnamon and nutmeg in a large bowl. Add blueberries and toss to coat.
  • Add the blueberry mixture to the pie plate, sprinkling excess flour, sugar and spices evenly over the berries. Spread out berry mixture so it is fairly even in the dish.
  • Take the second pie crust and lay it over the pie, folding the meeting edges of dough over to make a seal. Crimp the edges with your fingers or by placing fork tines against it to ensure the crust is sealed.
  • Using a knife or fork, cut a few slits in the top pie dough so steam can escape from the pie.

2 ½ cups all-purpose flour (300 g)
½ tsp salt (227 g)
1 cup unsalted butter (chilled, 227 g)
6 to 8 Tbsp ice water (90 to 120 mL)
1 large egg (whisked)
6 cups fresh blueberries (600 g)
¼ cup cornstarch* (30 g)
¼ cup sugar (50 g)
1 tsp lemon zest
½ tsp cinnamon
¼ tsp salt

Steps:

  • Make Dough: Combine flour and salt. Cut the butter into the flour using either a pastry cutter or two forks, until you reach a crumbly texture. Slowly drizzle in water while mixing until the dough can be formed into a loose ball. Divide into two equal balls, pat into disk shapes, wrap in plastic wrap, and set in the fridge to firm up for at least an hour.
  • Filling: Mix together your blueberries, cornstarch, sugar, lemon zest, cinnamon, and salt.
  • Bottom Crust: Preheat oven to 400 degrees Remove one of the pie crust disks from the fridge and roll into a large circle (at least 1 inch larger than your pie pan, I recommend a 9 inch pie pan). Transfer the crust into the pie pan, leaving ½ inch overhang on all sides.
  • Fill It: Spoon blueberry filling into the crust, gently evening out the top.
  • Top Crust: Remove the other pie crust from the fridge and roll into an equally large circle. Cut dough into 1 inch wide strips. Lay a row of dough strips going one direction (horizontal). Fold half of the strips back over themselves, then lay a strip going the other direction (vertical). Lay the horizontal strips over the vertical, then fold the other half of the horizontal strips to repeat, weaving the dough strips to form a lattice pie topping.
  • Bake: Brush dough with whisked egg, optionally sprinkling with a bit of sugar. Set pie in the oven, with a baking sheet below it to catch drips. Bake for 20 minutes at 400 degrees F, then reduce temperature to 350 degrees F and continue baking for 35 minutes, or until filling is bubbling at the edges. If you notice crust beginning to brown too much, cover the edges with aluminum foil.
  • Serve: Allow pie to cool before serving to allow blueberry filling to thicken.

One 14.1-ounce box refrigerated pie crust (2 crusts total)
2 cups blueberries
3 tablespoons sugar
2 teaspoons lemon zest, plus 1 tablespoon fresh lemon juice
1 large egg
Sanding sugar, optional

Steps:

  • Preheat the oven to 425 degrees F and line 2 rimmed baking sheets with parchment or silicone baking mats.
  • Lightly flour your work surface then unroll the pie crusts. Cut out as many circles as possible from each crust using a 3- to 4-inch round cookie cutter, rerolling the dough scraps if necessary.
  • Arrange half of the circles on the baking sheets, spacing them at least 1 inch apart (these are the bottom crusts). Set aside the remaining circles (these are the top crusts).
  • Stir together the blueberries, sugar, lemon zest and lemon juice in a medium bowl. Divide the blueberry mixture among the bottom crusts, leaving a 1/4-inch border around each circle.
  • Top each bottom crust with 1 of the top crusts and crimp the edges together with a fork. Cut small slits in each top crust to vent steam. (Alternatively, cut out shapes with a smaller cookie cutter from each top crust.)
  • Beat the egg with 1 tablespoon water then brush onto the top crusts. Sprinkle sanding sugar on top then bake the hand pies until golden brown and the blueberry juice is bubbling, about 15 minutes.
  • Remove the hand pies from the oven and let cool completely on the baking sheets before serving. (See Cook's Note.)

½ cup light brown sugar
½ cup butter, melted
2 ½ tablespoons cornstarch

  • Move a rack to the center of the oven and preheat oven to 350 degrees F (175 degrees C).

I usually like fresh fruits rather than frozen but make an exception for raw blueberries-- I actually prefer frozen because they are usually bigger, sweeter, and don't have any moldy/rotten ones in the mix. Being cheaper than fresh is a nice added bonus. Plus, they work awesome for pie filling! Forget the canned stuff or straining yourself with fresh berries-- this comes out tart but big on blueberry flavor, I like to use 1/8 cup Sun Crystals in place ofthe sugar. Arrowroot thickens quicker than cornstarch and aids digestion. Prep time does not account for defrosting the berries. This makes enough for one 9" pie.
