EASY BURGERS WITH RICE & GRAVY
My Mom made this when we were growing up, and now my grandkids ask for it too! Great for those nights when you are short on time, but long on hungry kids! The secret is searing the meat briefly before simmering in gravy. Comfort Food!!

Steps:
- Form the ground chuck into small patties, about 4 oz. each.
- Spray a heavy skillet with cooking spray, season the skillet with seasoned pepper. Place over high heat until very hot.
- Add patties, sear briefly on each side until crusty, app. 1-2 minutes per side.
- Remove skillet from heat, and gently place patties onto paper towels to drain. Pour off any remaining fat from skillet, but do not wipe. Return meat to skillet, and pour the gravy over all.
- Cover skillet, place over medium-low heat. Simmer 10-15 minutes, until cooked through.
- Serve over hot, cooked rice.

HAMBURGER GRAVY
This is my grandmothers recipe, she was a cook in the local high school, and we used to get served this, it is simple and delicious!

Steps:
- In a large skillet, brown ground beef.
- Drain well.
- Add soup, onions and salt& pepper to taste, beef bouillon, add 1 1/2-1 3/4 can of water (using the soup can) to the mixture.
- Stir in slowly.
- Simmer 15 to 20 minutes.
- Thicken gravy with the flour to the consistency you prefer.
- Simmer 5 minutes more.
- Serve over mashed potatoes.

EASY AND QUICK HAMBURGER AND RICE DINNER
This is a fast dinner. I usually have all of the ingredients on hand for a last minute supper. You can get creative and doctor this up a bit by adding green pepper or other vegetables.

Steps:
- Brown hamburger and onion over medium heat in a large skillet (one with a lid). Drain off excess fat.
- Add the rice, tomato, water, salt and pepper. Mix well and cover pan with lid. Simmer on low for 10 minutes.
- Check halfway to see if you feel it needs a few tablespoons of water added. Stir and then sprinkle the cheese over top. Don't mix in, allow to melt over top while it finishes simmering.
SIMPLE HAMBURGER GRAVY AND RICE

- Brown hamburger.
- Cook rice, I usually use instant then everything is ready at the same time
- Drain hamburger, add soups and let simmer. Serve the hamburger over the rice.

Steps:
- Place hamburger in a large, deep skillet. Crumble and cook over medium high heat until evenly brown. Remove from heat and sprinkle flour over cooked hamburger. Stir until evenly coated and all fat is absorbed.
- Place skillet over medium heat, add 1/2 of milk and stir until gravy begins to thicken. Add remaining milk until desired consistency has been reached and gravy comes to a boil. Season with salt, pepper and onion salt.
- Serve over mashed or boiled potatoes, toast or biscuits. Add fresh chopped onion if desired.

This was a mistake made when trying to make chop steak in gravy. We liked it, so it stayed. The beef has to be very lean, but if you don't have lean beef on hand, just drain the fat before you add the water and gravy mix.

- Chop onions and mince garlic and saute them in a large saucepan until they start to brown.
- Add ground beef, salt, pepper, cajun seasoning and worcestershire sauce and cook on med-high to high until browned.

- In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
- Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
- Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry.
